    The nine-mile dirt road through Pike’s Peak National Forest is a properly isolated, remote, and grand driveway to Lost Valley Ranch, one of the few guest ranches in Colorado that is so close to Denver. (It is only about two hours by car from Denver International Airport, and a short drive from any other front range city.) The drive leads you through the still-recovering burn area of the 2002 Hayman Fire, then dips down into a green oasis, in a cozy corner of the Goose Creek drainage. Lost Valley is a traditional, medium-size ranch with plenty of history and a robust kids and teens program in the summer. It’s all about horseback riding in the morning and afternoon, a lazy schedule punctuated by the dining room bell and yelps of happy children and ranch dogs playing in front of the main lodge. Lost Valley Ranch books week-long, all-inclusive packages throughout the summer season; shorter stays are available in spring and fall. Rates begin at $3,020 per adult, and cheaper for children (how much cheaper depends on age), and include meals, lodging, horseback riding, evening entertainment, and children’s programming (Trap shooting, town purchases and massage therapy are extra).

    The massive ruins of Caracol were once a major Maya metropolis in prehispanic Belize, during the Classic Period. The majority of the site is yet to be reclaimed from the forest, but the structures that have been uncovered are truly impressive. The main structure is still the tallest building in all of Belize and places you “on top of the world.” The jungle surrounding the site is teaming with wildlife, and a pair of binoculars come in handy. The ruins are located south of San Ignacio along the rough Mountain Pine Ridge Road. There are several worthwhile stops on the way, such as Rio Frio Cave and Rio On Falls, but the best stop is a cool libation at the Blancaneaux Lodge Bar.

    Situated in the historic West End—what some consider to be Portland’s prettiest area—this red-brick, Federal-style mansion has housed a Prohibition-era hideout, a boarding school and, for the past two decades, the intimate Danforth Inn. Today, its nine rooms are uniquely furnished with a mix of contemporary European pieces and Asian influences, as well as nearly a million dollars’ worth of modern art.


    A small garden blooms with lilacs, fragrant herbs, and edible flowers in the spring and summer, while 13 working fireplaces—there’s one in each room and two in the West End Suite—make for cozy evenings come fall and winter. After a renovation completed in 2015, Tempo Dulu, a 36-seat Southeast Asian restaurant, opened with dishes like grilled lobster with spring onion cake, and dramatic design details such as a live-moss chandelier.


    In 2017, the inn expanded on the Asian theme with its Opium bar; decor is meant to evoke a 1920s Shanghai speakeasy, and cocktails include the Danforth Swizzle, a rum-based drink accented with Chinese five spice–infused bitters.

Vestri is a family-run establishment that has been turning out delicious chocolate creations for more than 30 years. The clan owns its own cocoa plantation in the Dominican Republic, which ensures the quality and ethical sourcing of its products. The shop also sells modern confections like white chocolate with salt and sesame, as well as sweets based on ancient Florentine recipes. Take decadence to the next level and indulge in a scoop of creamy gelato affogato, drowned in hot chocolate, while you shop.

    This remote, family owned property of cabins is an experience you’ll savor if you’re in the Moosehead Lake area of Maine and hoping to get away from it all. Closed from October to mid January, the camp reopens for the winter season where you’re treated by breakfast and dinner by Eric and his family and given a bag lunch if you need one. During the other summer and early fall months, your stay and your schedule will revolve around three home cooked meals in the main dining lodge. You’ll be hungry, there’s fishing, canoeing, swimming and hiking in the summer months. There is no cell reception out here and you can be certain to not have any sort of wifi connection. Cherish that. Chill the beverages you purchase at the local general store in the camp’s cold, natural spring at the water’s edge and soak up the visits by the local moose in the morning and early evening. This is a great location for a private family reunion or a celebration in the heart of Maine.

    What’s a roti? The simple answer is the ultimate comfort meal of curry wrapped in a thin dough—borrowed from India and perfected in Trinidad and Tobago. You have to understand — making roti is not an easy task. Like many other traditional Caribbean foods, it takes a lot of time and effort to make something this comfortingly delicious… And perhaps those hours of anticipation actually added a little something to the flavors when you finally got the finished, hot roti in between your hands. It starts with the “skin” or roti (officially, only the skin is called roti, but in the Caribbean, we apply the name to the whole package). This is where a roti becomes a success, or literally falls apart. Any time you buy a roti, this is always the thing most people comment on. “Skin’s too thin.” “Skin’s too thick.” “Skin’s too dry.” Etc. The roti skin has to be just right, or the whole thing will fail. My favorite type of skin is dhalpuri which is just what you’ll find at Roti King — now just ask them to fill it with goat, chicken, or shrimp and you in business!

    Lanikai Beach is no secret to the locals, or to tourists, as it is consistently ranked among the best beaches in the world, and it’s arguably the best beach on the island of Oahu. Chances are that if you’re visiting Hawaii then you’re probably on vacation which should make it easier to visit Lanikai during the week. This will increase your chances of finding a secluded spot to lounge in privacy. In fact this amazing beach is usually empty during the week (I would recommend avoiding this beach during peak tourist season or on the weekends). There is no parking, no public bathrooms, and no vendors of any kind within proximity to the beach so come prepared. Pack your sunblock, snacks, and drinks and lounge on this secluded, white-sand beach for the day. Enjoy doing nothing at all or read a book. Or you can fall in love like we did!

    This property hits the sweet spot for Yosemite lodging—it’s conveniently located in the heart of the valley, is more affordable than the Majestic, and has better views than any other accommodation, looking directly out to Lower Yosemite Falls. All 241 rooms, spread among 15 two-story buildings, were recently updated to include TVs, mini fridges, phones, coffee makers, and Wi-Fi. While not air-conditioned, they come with fans and some even have patios or balconies. There are also four larger family rooms, complete with a king bed and two bunk beds. The lodge has its own pool, gift shop, and outdoor amphitheater, where rangers and naturalists give presentations during warmer months, as well as two restaurants. The more formal Mountain Room features soaring ceilings, waterfall views, and dishes like lobster beignets and grilled pork mole, while the Mountain Lodge—popular with the valley’s climbers—serves beer, cocktails, and a small but tasty bar menu, which can be enjoyed either inside by the double-sided fireplace or outdoors on the deck. There’s also a food court, which is slated for a complete makeover in the spring of 2018.

    O. Fournier is a modern architectural marvel located 80 miles (90 minutes) from downtown Mendoza in the district of San Carlos. It is one of Valle de Uco’s farthest wineries to visit, but it’s worth the drive to enjoy O. Fournier scenic views, distinctive design, and award-winning restaurant. José Manuel Ortega, a Spanish banker, bought the land in 2000 and contracted local architects to begin building O. Fournier in 2002. No expense was spared and no detail was overlooked to achieve Ortega’s vision. His talented wife, Nadia Harón, who delved into her passion for cooking when the pair moved to Mendoza, has become one of the country’s most notable chefs. Her restaurant, Urban at O. Fournier, blends Argentine and Mediterranean-Spanish flavors and traditions using fresh ingredients grown on the property’s 650-acre farm. If you find yourself falling in love with O. Fournier’s wine and landscape, you may just be tempted to purchase a small plot of land from Ortega to harvest your own wine and create your own signature blends. Reservations to visit the winery and restaurant must be made in advance.

    It might not be Niagara Falls, but as you pass through the Gerald D. Hines Waterwall Park, the mist that brushes your cheeks is sure to cool your body and settle your spirit on even the hottest summer day. Created nearly 25 years ago, this public park covers 2.77 acres and features a 64-foot architectural fountain pumping 11,000 gallons of water a minute. It’s a wonderful place to take pictures (or people-watch: You’ll frequently catch engagement shots being snapped here). Bring a blanket and soak in the atmosphere! It’s a stunning and uniquely Houston experience.

    Are you kidding me? 150 feet deep AND the opening to miles of underground caverns? And you want me to jump in? If it isn’t the 30 foot drop that gets you, its the inky blackness below or the who-knows-what that’s living down there. You see, the rainbows that shimmer in the water- falls, and the roots and vines that hang like some bridal veil, and the sunlight that flickers about the place are all just trying to pull you in--into the black nothing that lurks beneath. Never-the-less, if you are brave enough to take the plunge, you will be rewarded with velvety sweet water that feels like lotion on your skin and baby catfish that tickle your toes and, best of all, the exhilaration of knowing you swam in the very entrance to Xibalba, the Mayan underworld. So descend into the cavern and climb the chiseled staircase to the dive platform and make sure when you jump, you hold your breath, cause its a long way down.

    There are many places to view Flamenco in Granada. There are large shows in Sacramonte that cost 25-35 Euros and have a flare for showing the dramatics and storytelling of the dance, and there are shows that have no dance and play in dark underground pubs. There is every range of Flamenco played and performed. Le Chien Andalou is easy to find, unlike some places father into the Albycin, it is cheap at 7 euros, and the food and drinks are neither life changing nor horrible. The music changes every night, I have been a few handfuls of times and have witnessed a sampling from slightly better than mediocre to quite incredible performances. It is often wise to stop by and make a reservation as the space is limited in this little wine cellar room full of short stools and low tables. I recommend this place for those wanting to experience Flamenco to either be intrigued by it, to fall in love with its depth and soul, or to walk away at least saving 20 euros while discovering it was not to your taste. For those with a bit more adventure to explore the streets of the upper Albaycin, and a with a bit more of a budget for delicious food (or if Le Chien Andalou has left you wanting to experience more flamenco) then I recommended: Restaurante, Flamenco Jardines de Zoraya(from a past highlight, and one of my favorite spots for Flamenco, Food, and the best Sangria!)
