Spring Café is not in the center core of downtown Aspen but it is worth the trek. An organic based menu was designed with the philosophy of wellness and healthy foods mostly deriving from plants but they do use some dairy and egg products. Even the materials they use are a very conscientious choice with only stainless steel cookware and BPA free plastic. Integrity goes into the preparation of every meal. I thoroughly enjoyed my Warm Golden Squash Salad made with spinach, arugula, cranberry, almond, and toasted goat cheese topped with a balsamic vinaigrette dressing. They also have an assortment of smoothies and juices that are delightful. Who would have ever thought that kale, romaine lettuce, cucumber, celery and pineapple would go together to make a refreshing juice combination. I certainly did not but have been proven wrong by Spring Café.
