    Founded in 1028 and built overlooking a Viking settlement, this incredible cathedral is nearly 1,000 years old and is Dublin’s oldest building. The 12th century crypt is one of the largest in Ireland or Britain and here you can check out the treasures of Christ Church exhibition, with its fascinating manuscripts and artefacts. There are also 16th Century costumes from the historical series The Tudors on display here and there are audio tours of the cathedral. Pop over to nearby St Patrick’s Cathedral to complete the experience.

    It’s a big deal when a chef wins a James Beard Award for “Best Chef: Southeast.” It’s an even bigger deal when that chef’s successor wins the same award a few years later, but that’s exactly what happened at this downtown hot spot. Overseen by Mike Lata and helmed by Jason Stanhope, FIG is one of the hallmark restaurants that put Charleston’s dining scene on the map. Seasonal veggies are an important part of the menu, which is inventive and thoughtful without feeling fussy. (Anthony Bourdain raved when he dined at FIG—he had the asparagus salad with fromage blanc, quinoa, green garlic, and carrots—during a 2017 episode of Parts Unknown.) For local, creative food in the Lowcountry, FIG is the model.

Here, in a stunning building made of glass, steel, and stone, diners enjoy contemporary cuisine, award-winning wines, and dramatic views over Stellenbosch and False Bay. Before sitting down for your meal, enjoy a drink at the bar, which offers views of the kitchen as well as the sun setting through a picture window. Then dig into creative dishes like roasted beef with lemon-glazed shimeji mushrooms, and pork belly with carrot-ginger sauce. The menu changes seasonally, but guests can always expect a life-changing meal.

    Historic Shanghai’s tours and events are the closest you’ll can come to traveling back in time to Shanghai’s golden age. The group was founded by longtime Shanghai residents Tess Johnston, Tina Kanagaratnam, and Patrick Cranley. They host myriad cultural events—author talks, lectures, screenings—as well as tours of Shanghai’s historic sites and neighborhoods. All three owners are architecture buffs, and together they have an encyclopedic knowledge of Shanghai’s Western architecture, past and present. Tours and walks run a couple of times per month, covering topics like Americans in Old Shanghai, Old Shanghai’s nightclubs, and the regeneration of Yangpu District.

    It’s one of the hardest reservations to score in the country, but not just because of its diminutive size (22 seats in all) or limited days of operation (Wednesday to Saturday; dinner only). For one, the Catbird Seat feels both intimate and exclusive: Guests are seated at a U-shaped counter that surrounds a central open kitchen. Then, there’s the thrill of the unknown.

    Strategic Hospitality, the Nashville-based restaurant group started by homegrown entrepreneurs Ben and Max Goldberg, has hired a roster of notable chefs for extended stints, giving them carte blanche to create whatever inspires them during their tenure. Among them: Trevor Moran, an alumnus of Noma in Copenhagen. Since January 2016, Chicago-born chef Ryan Poli (another Noma vet, who also trained at the French Laundry) has held the reins, calling upon influences from his two-year stint working in kitchens around the world. A couple of recent hits: an umami-rich black truffle risotto made with sunflower seeds instead of rice, and noodles made with nori and spiked with zesty yuzu.

    This delightful gallery is housed in one of Marrakech‘s elegant Saadian town houses, all creamy white plaster walls and subtle bejmat (unglazed terra-cotta) tiled floors. It’s the perfect setting for what began as owner-creators Hamid Mergani and Patrick Manac’h’s private and extensive collection of photographs that document scenes and portraits of Moroccan life over the past century. Today the foundation encompasses a whole lot more, with numerous collectors and photographers such as Daniel Chicault, Ana Muller, and Jean-Pierre Évrard donating or loaning from their own collections. There’s also a terrific little café on the roof for traditional Berber cooking and splendid views of the Atlas Mountains.

But be sure to save some time to visit another nearby museum, where there’s something wonderful to see before you even get inside. Just a 5-minute walk down Paseo del Prado you’ll find the CaixaForum Madrid, with its awe-inspiring vertical garden. From a distance, you might even think you’re looking at a mural there on the wall, but as you approach, the lush greens and earth tones come to life with varying textures that are luscious and welcoming.     Chef Patrick O’Connell opened his country restaurant out of a former gas station in 1978 and rave word-of-mouth reviews soon made it “destination dining.” He opened rooms in 1984 and a few years later, it became a member of the prestigious Relais & Chateau hotel association. Today, it remains one of a handful of country hotels worth the trip for the meal as well as the stay, and it continues to rack up stars and top lists for dining and accommodations.

    Two dozen opulent rooms reflect the style of a whimsical English country manor (as interpreted by O’Connell and London stage designer Joyce Conwy Evans), setting the tone for an over-the-top dinner with an exacting attention to detail. Be sure to visit the kitchen after your meal to see culinary magic in action. Little Washington (the first town named by George himself) is a bit over an hour from its capital namesake, and the Inn’s campus of guest rooms, shops, and gardens are spread over the colonial town; take the Perimeter Path walk to visit all of the farm operations and the newest guest quarters: a Little Bug Inn for pollinating and beneficial insects.

His shop feels like an old school candy store with jars full of French bonbons and cases full of indulgent desserts. It’s a stunning pastry shop with stellar sweets well worth the detour for those staying (or living, like myself) on the other side of the city.
