While one nation, the islands of St. Vincent and the Grenadines couldn’t be more different—geologically, ecologically, historically, even culturally. What ties them together, however, is their unspoiled nature, breathtaking beauty, and laidback vibe.

When I hear the word lagoon, I don´t envision it being a place I´m going to want to swim. Laguna de Apoyo, located between the cities of Masaya and Granada, completely changed my mind. This warm, fresh water lagoon (actually the size of a lake) with a stunning view of the Mombacho Volcano, is the perfect place to spend a hot day in Nicaragua. You can access the water either from the public beach or through a hotel like Posada Ecologica la Abuela. If you access it through a hotel you’ll either have to pay $6 or spend about $8 at the restaurant. It’s an easy trip from either Managua or Granada, and you can hang by the Apoyo during the day and make an afternoon trip to the Artisan Market in Masaya.

El Burrito is a casual little Mexican cantina that serves excellent fajitas, tacos, and burritos, and legendary coconut margaritas that might make it difficult for you to find your way back to your hotel. But hey, you’re on vacation, and deserve to let loose every now and then. El Burrito sits at the heart of the Puntacana Village complex, a short ride from the beach, Playa Blanca, the Westin, the ecological reserve, and more.

Eaton Canyon has a great nature center if you want to learn about the local plants, animals, geology, and ecology. The exhibits and nature walks are kid-friendly. Hiking trails are also easily accessible from the nature center. The Eaton Canyon Falls trail is a fun and easy hike; it’s cooler and more shaded than many of the local trails, and it follows a creek to a wading pool and waterfall—a great place to relax and cool down on a hot day.

Gialova Lagoon is a birder’s paradise, home to over 270 species on account of its shallow waters and abundance of fish and plants. It’s Greece‘s southernmost major wetland and the only place in Europe where you can see the African chameleon. The lagoon is part of the Natura 2000 network, a group of ecological important protected areas in the European Union. Between September and May is the best time to visit Gialova Lagoon, as fall and spring are migration periods and winter is great for spotting eagles, herons, and bitterns. For a guided experience on foot or by bike, Navarino Outdoors offers a variety of Gialova Lagoon tours.

There are few places where you can better learn about the beauty and complexity of desert ecology than the Desert Botanical Garden, not far from downtown Phoenix. Check out the Desert Discovery Loop Trail for a look at local flora, go for a flashlight tour or cooking class (using plants found in the region, of course), or catch one of the musical performances that are part of the garden’s concert series. Make a point to visit the Desert Terrace Garden for the best views of the surrounding buttes and desert.

Designed by Oscar de la Renta, who was also a guiding force in the original vision for Puntacana Resort, Tortuga Bay Hotel has 13 freestanding villas comprising 30 suites, each with Frette linens, a kitchenette, and a balcony or terrace with views of the Caribbean or La Cana Golf Club. Oaxacan artist Francisco Toledo spearheaded the project of converting an abandoned textile mill into an arts center, which was inaugurated in 2006. The Centro de las Artes San Agustin (CASA) hosts exhibits of a variety of media, as well as courses and workshops. It is an ecological arts center and encourages artistic creation using environmentally friendly processes, and community involvement. CASA is located in San Agustin Etla, about a twenty minute drive from Oaxaca city. It is open daily from 9 am to 6 pm, and if you go on Sundays, there is an organic market on the grounds (Mercado Los Eucaliptos).

Cruise the Venice lagoon on one of the few remaining bragozzo boats still working this body of water. The vintage double-masted, flat-bottom fishing boat, once a common type of vessel here, dates back to 1946. The captain and owner, Mauro Stoppo, is also an excellent chef, which comes in very handy. Charter a daytrip (the boat comfortably carries 6–10 people) and sail to a lesser visited portion of the lagoon. The pace is slow; the food and wine decadent. If you want to charter a longer trip, you’ll explore more of the lagoon by day, learning its history and ecology, and then sleeping in private villas at night.

The lush green forest, soaring trees and various lakes are reason enough to spend the day meandering along Stanley Park’s well kept, well posted trails. Turns out the city has given you another reason: the Stanley Park Environmental Art Project. Six artists have installed ecologically sensitive art projects throughout the park, and we were lucky enough to stumble upon this massive sphere of ancient wood sitting peacefully between two ends of its former self. “We wanted to construct something that works within the missing section to accentuate the mass, the length and the essence of the entire ancient tree.” Keep your eyes open though, as some of these installations are set back and off the trail. This particular piece was discovered on the Lovers Walk trail somewhere near the intersection of the Tatlow Walk trail.

Hout Bay is basically Eden. This ecological utopia has everything a nature lover could want, from imposing mountains and miraculous views (check out the Twelve Apostles range) to World of Birds, the largest bird park in Africa, home to 3,000 birds and over 100 walk-through aviaries. On weekends, you can shop for food and crafts at the lively market at the end of the harbor road. Besides Chapman’s Peak Drive, there are two other roads into Hout Bay, one from Constantia and another that passes the gorgeous surfer beach of Llandudno—also the exit for Sandy Bay, a nudist beach.
