Trey Foshee, executive chef of George’s at the Cove in La Jolla, is one of the most respected and talented chefs in San Diego. He graduated from the Culinary Institute of America in Hyde Park, New York. His casual Mexican restaurant just a few blocks from La Jolla Shores is understandably excellent. At Galaxy Taco, just like at George’s, Foshee’s mission is to use the best ingredients to create dishes with pure and intense flavors. You can expect tortillas made using heirloom blue Masienda corn, perfect made-to-order guacamole and truly epic margaritas featuring top shelf tequilas, mezcals and charred fruit. The Andromeda with Kimo Sabe mezcal, strawberry, mint and lime perfectly balances sweet, sour and smoke.
