I recently had my dining experience at Hawksworth but I know that it definitely won't be my last. From my pre-dinner cocktial to every dish and perfectly paired wine. It was hands down my favorite upscale meal in Vancouver to date.

Hawksworth Bar: The Best Cocktails In Vancouver
Hotel bars can come off as stuffy, but Hawksworth inside the historic Hotel Georgia is a sophisticated and intimate place to imbibe.
The drinks are executed in speakeasy fashion. I cannot say enough about the expertise of the staff here. It's an experience not to be missed, and a place I'll return to indulge in some of the best cocktails I've tasted in Canada.
Pictured is "The Last Word"—gin, lime juice, chartreuse, and maraschino liqueur. I also recommend the "Journalist" and the signature "Hotel Georgia" cocktail.
Consistently scoring as one of Canada’s finest restaurants, Hawksworth does not disappoint: the service is beyond wonderful, the room is beautiful, and chef David Hawksworth and his team’s elegant creations continue to star in my All Time Top Ten Favourite Dinners Ever list (September 2010, if you’re asking, it made me want to live in Vancouver it was so good.) I think Hawksworth has a particularly deft touch with fish and if you’ve never tasted sablefish before, then it’s worth eating here just to see how good this rich oily fish can be. I’ve swooned over the hamachi here, and fallen in love with their lobster velouté. Make sure you have a cocktail in the bar first and set yourself up for the perfect meal.
Vancouver has always had a strong food scene, but David Hawksworth’s namesake restaurant, in the landmark Rosewood Hotel Georgia, put this city on the international culinary map. Delicate, complex and inventive, his concoctions include a delicious hamachi sashimi and rich-yet-refined duck confit with gai lan and a pumpkin puree—all served in a setting that’s equally design-forward and intriguing.
