Recalling Saigon’s past, Cuc Gach Quan offers fine Vietnamese fare in a cozy setting that re-creates the home of the owner’s grandmother—a French-colonial house with worn, wood-plank floors; retro furnishings; warm lighting; and a floating staircase to connect the two levels. It’s grown in popularity ever since Brad and Angelina ate here in 2011, but the menu continues to focus on Vietnamese dishes while following the approach summarized in its motto: “Eat green, live healthy.” Expect menu items such as fresh spring rolls with shrimp, crispy sea bass, and fantastic homemade tofu fried with chili and lemongrass.

Opened in 2012, the West Street Hotel wholeheartedly embraces its waterfront location. All 85 rooms have views of Frenchman Bay and are decorated in nautical Americana (think navy, red, and cream color schemes and lots of sailboat patterns on the upholstery). The hotel can arrange a lobstering trip on a real-deal commercial boat or an excursion to nearby Acadia National Park. There are more than 120 hiking trails that range from low-key to strenuous: Advanced climbers can summit Cadillac Mountain, the tallest peak on the U.S. Atlantic Coast. For a guided tour of the park with less effort, board Oli’s Trolley, which picks up riders across the street from the hotel.

To experience a peaceful and private Hawaiian morning, enjoy room service in the quiet of your own with a view of the Pacific Ocean. Listen to the waves roll on shore while enjoying pancakes and tropical fruit at the Mauna Lani Bay Hotel and Bungalows where you will feel like a Hawaiian King or Queen.

If the movies are to be believed, interesting things happen in hotel bars: transient strangers hatch elaborate schemes, secret lovers hold trysts, international spies exchange intelligence, that kind of stuff. Of course, one could also just go for a well-made drink and some bar nuts. Bar 555 at the Westin Hotel in Mt. Laurel won’t disappoint with its numerous whiskeys and smartly curated wine list. Open until 2 a.m. on weekends.

Once the bayside palazzo of a shipping magnate, the recently restored Romeo juxtaposes antique and modern art in a world-class collection. For the location of their first independent hotel, Atelier Ace (the creative arm behind the buzzy Ace Hotel Group) chose Panama City’s historic Casco Viejo, a once gang-ridden neighborhood now teeming with trendy restaurants, cafes, and wine bars in 16th- and 17th-century buildings. The American Trade Hotel occupies a stately property on Plaza Tómas Herrera, complete with 50 minimal-chic rooms and suites outfitted in Frette linens and custom, reclaimed-wood furnishings. Plush “Jardin” suites open onto a private garden courtyard, while others feature vaulted ceilings or views of the Gulf of Panama. On-site dining and drinking options abound, ranging from Café Unido for pour-over coffee made from Panama Geisha beans, to a jazz club created by Grammy-winning Panamanian jazz pianist and composer Danilo Perez.

It’s easy to get lost given the dizzying number of courtyards, patios, and terraces at Riad Fes, a lavish stay in the heart of the medina that feels like a desert mirage thanks to its opulent zellige tilework, towering plaster columns, wrought-iron filigrees, and antique wooden doors. Individually appointed guest rooms follow suit with embroidered linens atop four-poster beds, stained-glass details, and richly patterned textiles. The hotel’s subdued L’Ambre restaurant offers a mellow counterpoint to the grandeur with clean lines and hushed color schemes that allow refined Moroccan dishes to take center stage—think roasted lamb with onion jam and caramelized carrots, quail pastilla, and spiced-fruit tagine with mango ice cream. The riad also has a chic pool overlooking a verdant vertical garden; equally serene is the spa, which provides gentle relaxation with its soothing hammam and menu of aromatic scrubs, wraps, and massages.

Ever heard of a bonut? Neither had we until we visited Biscuit Love, a cult-favorite breakfast spot in Nashville‘s happening Gulch neighborhood, where morning queues often exceed an hour on weekends. And bonuts—deep-fried biscuit dough slathered in lemon mascarpone and balanced on a sticky heap of blueberry compote—are just one of the many hits on the menu. The restaurant had its origins in 2012 as a food truck, where husband-and-wife team Karl and Sarah Worley’s made-from-scratch biscuits made them an overnight success. In January 2015, they opened a brick-and-mortar restaurant, where Karl mans the stoves and Sarah runs the front of the house, making sure patrons get their Southern classics while they’re hot. Be sure to order a bonut, along with the sweet-and-spicy Chronic Bacon, shrimp and grits, and the off-menu Nasty Princess, a biscuit topped with Nashville-style hot chicken, gravy, pickles, mustard, and honey.

Owned by the world-renowned art collector Dakis Joannou and smartly decorated by quirky Brazilian designers the Campana brothers, the New Hotel is the city’s coolest upscale design-centric property, with 79 rooms (including seven suites) and an intimate restaurant. Although centrally located, just a five-minute walk to Syntagma Square, it’s tucked back in a modernist building on a side street so it feels hidden and discreet. The interiors are both playful and smart; the Campanas created much of it with items recycled from the previous hotel. Imagine puzzlelike walls and chairs constructed of layered, repurposed wood intermingled with sculptural chairs of their own design. In the rooms, they had fun riffing on Greek cultural objects, like the Karagiozis, a shadow puppet, and multiple versions of the glass “evil eyes” used to protect against ill omen. Bottom line: stylish contemporary design, excellent location, and friendly service.

The first luxury lodge to come to Chile’s second biggest island, Tierra Chiloé opened in 2012 and became a member of the Tierra hotel group in 2014. Designed by Chilean architect Patricio Browne, the hotel looks like a boat on stilts and was inspired by the homes of local fishermen, which take the same form and are known as palafitos. The exterior is made from picturesque larch wood shingles—a building technique that’s very typical on Chiloé and is seen on the famous UNESCO World Heritage churches that dot the islands.

Inside, guests find more wood. The hotel’s wood walls and ceilings are made from indigenous species . The decorations are locally inspired with plenty of handicrafts such as wicker baskets, handwoven rugs, and wooden carvings. The focal point is the meadow and Reloncaví Sound below, where the hotel’s boat is harbored. Large windows line the building on both floors and provide excellent views. Guests can relax in a small spa, a winetasting room, or a book-filled upstairs studio upstairs. The living room with fireplace makes a perfect spot for an end-of-day pisco sour.

Positioned right on the historic Freedom Trail in downtown Boston, this discreet 19-story hotel caters to guests who appreciate both classic architecture and of-the-moment amenities. The building initially became a hotel in 2002; in 2006 the Kimpton chain took over the property and added its personalized boutique touch.

Though the lobby is all dark woods and polished marble floors, the rooms are chic and urbane, with high-back seating, and skyline views. The hotel’s Cloud Nine Suite and Inspired Suites offer guests space to spread out with separate living and dining areas, as well as enviable high-tech extras, including the Cloud Nine Suite’s state-of-the-art iris scanning security system. Kimpton properties also take pride in their pet-friendliness: complimentary dog beds await all four-legged visitors, and pet sitting, grooming, walking, and even massage services can be booked through the concierge.

Guests congregate in the lobby each evening for complimentary wine, and the general manager hosts morning runs twice a week. The central location also means visitors can easily immerse themselves in the city’s shopping, dining, and nightlife scenes.

Palácio Ramalhete has the soul of a historic property—Manuel II, Portugal’s last king, and Britain’s Duke of Windsor were once guests—without any of the attendant stuffiness. Set in an 18th-century palace on the handsome Rua das Janelas Verdes, each of the 16 accommodations has its own unique character. The Oak Suite, for instance, features wood wall paneling with an ornate carved-stucco ceiling, while the spacious Dove Room, which occupies the palace’s former chapel, is lined with original hand-painted blue-and-white azulejos (ceramic tiles).


There are three tiered internal courtyards; the highest has a small heated outdoor pool with a massive palm tree for shade and River Tagus views in the distance. Art lovers, take note: Opposite the hotel is the National Museum of Ancient Art, filled with important Portuguese works that include 15th-century painter Nuno Gonçalves’s famous Panels of St. Vincent.

The [incredibly luxurious] Terrace Hotel might seem almost like a black sheep, located as it is in the downtown heart of the steel-and-glass CBD of Perth in Western Australia. Don’t be fooled! The hotel is more like a spotless, white sheep, my experience so wonderful and luxurious that for almost the first time ever in my years as a traveler -- I forgot to take photos. [Image above courtesy Terrace Hotel FB page.] I was blessed to spend my 32nd birthdday at The Terrace and everything, from the food to the bed linens to the champagne and petit fours which were waiting in my room after check in, to the impecable way in which I was treated by staff -- was beyond reproach. Since the hotel is fairly new, you may find growing pains during your stay. Bear with them. I truly believe this hotel is destined for lasting greatness on the Perth hotel scene which is so desperately in need of great boutiques such as The Terrace. You’ll find it ideally suited for walking to most major attractions, in particular the river front -- with ferry to Rottnesst Island or Fremantle -- and even Kings Park. Don’t skip eating a meal at the restaurant, the food is as excellent as the night’s sleep you will have in their beds. And come prepared to share your Apple login if you want to access the complimentary Apple TV in your room.
