    Gramercy Tavern in the Flatiron District can fairly be described as a New York institution. When the restaurant opened in 1994, Tom Colicchio, who has gone on to fame as much as a television chef as one who cooks in his kitchens, presided over the restaurant. In 2006, he passed the reins to Michael Anthony. Gramercy Tavern is actually two restaurants in one. The Tavern, in the front, is a lively, buzzy space where the menu is à la carte; the more formal Dining Room, in the rear of the restaurant, also has an à la carte menu—as well as prix fixe and tasting ones—at lunch, though only set menus at dinner, when a three-course version is $129 and a seasonal tasting one is $179. The vegetable tasting menu at dinner, for $159, is perhaps among the most gourmet vegetarian meals anyone will ever experience. (All prices include gratuities.) The dishes in both spaces could be described as American comfort food elevated with some gourmet touches. You can expect fresh produce to be emphasized in plates like the duck meatloaf and the cobblers and pies—the restaurant is known for its desserts.

    Peggy Dulany, a New York philanthropist and daughter of David Rockefeller, bought J Bar L to protect the 620-square-mile Centennial Valley, a former Native American hunting ground settled by a few cattle-ranching families in the late 19th century—and which still has no towns, let alone paved roads, gas stations, shops, or subdivisions. To conserve the rangeland way of life, she hired locals to run a holistic grass-fed cattle business on the principles of rotational grazing and natural stockmanship. To share the landscape with nature-loving travelers and to keep the valley looking as it was, Dulany restored several abandoned 19th- and early 20th-century homesteads. These self-contained vacation rental homes range from a Sears Roebuck family house, now solar-powered, to isolated cabins on a bend of the Red Rock River. All come with fully-equipped kitchens and are tastefully filled with Western-themed furnishings and antiques; some have outdoor hot tubs.

    J Bar L no longer offers working weeks for would-be cowboys but will match guests with geologists as well as with hiking, bird-watching, and fly-fishing guides. Horse lovers can hire ranch mounts for guided daily rides on rangeland that is home to pronghorn, elk, and Black Angus cattle, or up the slopes of the 10,000-foot Gravelly Mountains where wolves, grizzly bears, and bald eagles roam.

    This Scottsdale megaresort opened in 1988 as an Americanized vision of European style, which explains the white marble in the lobby, the mother-of-pearl tiles lining one of the pools, and the 11 Steinway pianos (including one in each of the four presidential suites). Over the years, though, the Phoenician has melded with its surroundings to become one of the classic Arizona desert hotel experiences. The 27-hole golf course, the 11 tennis courts, the eight pools (one with a 165-foot waterslide), the spa, the hiking, and the alfresco dining all make it the kind of place people contemplate when they find themselves looking at a closet full of winter coats and scarves. The rooms are spacious, with large Italian marble bathrooms, and have a private terrace or balcony. The service is tip-top, and the kids’ club even features a Bunny Hoppy Hour. Recent renovations updated the hotel’s public spaces, including the lobby, restaurants, pool area, and spa.

    Classic luxury in a colonial building is what visitors can expect of Four Seasons Hotel Mexico City, located near the swanky neighborhood of Polanco and the sprawling Chapultepec Park. Proximity to the park offers respite from some of the noisier parts of the city, as does the hotel’s own expansive courtyard. Citrus trees and other greenery, tended by the same gardener since the hotel opened, radiate from a central fountain, while sculptures by Mexican artist José Luis Cuevas add even more atmosphere to the peaceful setting. This sense of refinement extends throughout the property, with Four Seasons’ signature service on full display—housekeeping, for example, is performed twice daily, and the staff can arrange for in-room massage services. Guests can also look forward to a contemporary Latin American restaurant, a tequila and mezcal bar, and a health club with a sauna and whirlpool.

    “I am a song, I live to be sung, I sing with all my heart!” Pay your respects to the man who penned “Rocky Mountain High” and spent a lot of time in Colorado. The John Denver Sanctuary is a quiet cluster of carved boulders and monuments, located along the Roaring Fork River, near the Aspen Art Museum. Many of the singer’s famous lyrics are carved into the stone, which you can read as you listen to the creak rush by. Fans gather at the sanctuary every year on October 12, the anniversary of Denver’s death (Denver died in 1997, in a plane crash off the coast of California).

    Clyfford Still brought new energy to the art world after World War II with his large-scale, color-splashed paintings, and is considered one of the most important American artists of the 20th century. Though his influence on the Abstract Expressionism movement was at least as important as that of contemporaries Jackson Pollock and Mark Rothko, Still eventually broke all ties with the art world after moving to a farm in Maryland, and following his death in 1980 a huge collection of his work was sealed off completely for more than 30 years. His is widow donated his pieces to the city of Denver in 2004, and in 2011 the Clyfford Still Museum opened, housing 94 percent of his life’s work, including some 825 paintings on canvas and 1,575 works on paper, as well as sketchbooks, journals, and his library—in a museum considered one of the best examples of contemporary architecture in the city.

    Named among the best mountain restaurants in the world by The Telegraph, Chez Vrony sits on Rothorn Mountain, a short ski down from the Sunnegga Express in the hamlet of Findeln. Housed in a rustic-chic Swiss chalet, it’s been in operation for 100 years and continues to be extremely popular. Lunch reservations are a must; request a seat on the deck for Matterhorn views, then start with the charcuterie plate, which features house-cured speck, bresaola, salami, ham, cheese, and a scoop of homemade rosti. From there, move on to the burger—Chef Vrony’s family raises its own beef, hand-packs burger patties, and uses perfectly seeded buns slathered with coleslaw and a secret sauce, making this a must-order even if it is quintessentially American.

    Seattle’s largest public park sits on a sea bluff that’s high enough to pierce the city’s infamous fog, revealing gorgeous views of the Cascade and Olympic mountain ranges. Wander its 11 miles (18 km) of paths through forest groves, meadows fringing coastal cliffs, and active sand dunes on the protected tidal beaches. Once a military installation, the area now serves as an open space and wildlife sanctuary. Stop into the Daybreak Star Center, which celebrates American Indian culture and hosts the city’s powwow in mid-July. Around 25 drum groups and 500 dancers converge here for the event, along with close to 10,000 spectators.

    The Utah Brewers cooperative, a partnership between Wasatch Brewery and squatters craft beers, has an eye for where people drink. The latest proof: Wasatch Brew Pub, which serves playful beers (Polygamy Porter, anyone?) in a spot just off the new Sugar House plaza.

    A few years back, when Lima’s Central Restaurante was closed because of zoning issues, Peru‘s celebrity chef, Gastón Acurio, was one of many who petitioned for it to be reopened. I knew that meant the young chef at Central, Virgilio Martinez, must be doing something truly special. Virgilio’s restaurant is located in Lima’s hip Barranco neighborhood. I stopped in solo one afternoon for lunch and was dazzled by the dishes his servers put in front of me: charred purple corn with scented octopus, lentils, yuzu, and bok choy; “mask of the suckling pig” (or pig face) with tart green apple, baby tomatoes, and galangal; and suckling goat with chickpeas, goat cheese, and lemon verbena. Each course was plated like a work of art and was a beautiful riddle on the palette. My enthusiasm for my food earned me a tour of the open kitchen and the rooftop garden, where servers pluck flowers or clip herbs for dishes like the citrus gelée with edible flowers (pictured above). Chef also gave me a tour of his incredible chocolate cellar, where he shows off his favorite chocolate bars from around the world.

    With a history dating back to 1499, U Fleků is a Prague institution and the only brewery and restaurant in Central Europe that has been brewing non-stop for over five centuries. Beer lovers, backpackeres and tourists come from all corners of the world to drink their dark lager which is the only beer on the menu, made with all natural ingredients. The restaurant, serving traditional Czech and Bohemian cuisine – roast pork knuckle, garlic soup, apple strudel – includes eight beer halls (each with its own distinctive décor) and an inner beer garden that seats up to 500 people. Everyday U Fleků serves around 2,000 pints of beer. If you want to know more, they also have a brewey tour and a beer museum (reservations only) in the former malt house.

    This Paradisus Resorts first adults-only resort debuted recently with 394 elegantly appointed suites including 120 Royal Service Suites, two of which are Royal Service Presidential Suites. The hotel’s 60 swim-up suites enhance privacy allowing guests to access the free-form pool directly from their terrace. Guests of the Royal Service area enjoy adult oriented amenities including a private pool, bar and exclusive restaurant surrounded by palapas and Bali Beds in addition to a private beach. Discreet but efficient butlers offer preferential reservations for specialty restaurants, spa treatments, activities and excursions. Also featured is Passion by Martin Berasategui, a restaurant collaboration with six-star Michelin chef Martin Berasategui, a first for an all-inclusive resort. Paradisus La Perla and sister resort Paradisus La Esmeralda share a common area referred to as El Zocalo, a term in Mexican culture which signifies a city’s social center. Here, Paradisus guests can sample multiple food and beverage options along with the full service YHI Spa, the “Palapa” Activities Center and Theatre. El Zocalo offers 12 restaurants serving Japanese, South American, Mexican, and Mediterranean cuisines, and 10 bars. The resort is 45 minutes from Cancun International Airport and close to attractions such as Playa del Carmen’s trendy shopping district, 5th Avenue and famous Maya archaeological sites including Tulum and Cobá.

    Yes, New Mexico actually has an official “state question"--since 1996, referring to the ubiquitous chile sauce, it’s “red or green?” Fortunately you don’t have to choose just one; the local way to say ‘can I have both’ is just one word: “Christmas.” If you’re driving through New Mexico on the way to Arizona and points beyond, the only town of any size on I-40 between Albuquerque and Flagstaff is Gallup. For road-trip food here, get away from the Interstate and its humdrum chain restaurants. Seek out Jerry’s--a block off old Route 66. You can’t miss the retro neon sign, and there’s often a line out the door for its New Mexico-style fare. Gallup is surrounded by Navajo, Hopi, and Zuni lands--you might well be one of the few non-Native-Americans eating here at breakfast or lunch. The restaurant allows local vendors to come in and show their wares--usually jewelry and bracelets--while you eat. (You can request a ‘do not disturb’ sign for your booth if you want.) “Hole in the wall” gets overused, but Jerry’s definitely fits that description. Nothing pretentious here--but the flavor of the chile sauce is as good as you’ll find in Albuquerque or Santa Fe. A recommendation: the flat cheese-and-onion-enchiladas, topped “Christmas” style with a fried egg on top. And don’t forget to sop up the sauce with the sopaipillas, saving some of the frybread to top with honey as a dessert afterwards...
