Mexican Independence is celebrated on the night of September 15 and throughout the day on September 16. On the night of the 15th there are celebrations called “El Grito” (the shout or cry of independence) that take place in the plazas and main squares of cities throughout the country. In Oaxaca people gather in the Zocalo and at 11 pm the governor comes out on the balcony of the Palacio de Gobierno and leads the shout, to which the crowd responds enthusiastically "¡Viva!” after each of his cheers. Following the grito, there are fireworks, and people wave flags, and throw confetti in an enthusiastic display of patriotic feeling.

At over 1,000 years old, Hanoi is not exactly a spring chicken. For some truly ancient Vietnamese history, however, it is worth spending time at Co Loa, the country’s first fortified citadel and a onetime capital of the nation dating back to the third century. Only three of the original earthen ramparts are extant today, but a pretty temple underneath a banyan tree provides added diversion.

The Rose Garden at Emmarentia Dam is a favourite spot for locals to hangout and relax under the shade of a tree and have a picnic. Did you know: There are approximately 4500 rose bushes in the garden! The best time to go is in Spring or Summer when everything is green and there’s a good amount of foliage on the trees for shade.

Early this spring, I had an hour to kill in Manhattan, so I ducked into the Grolier Club, America’s oldest bibliophilic society, where I saw a fascinating exhibit devoted to Wunderkammer, the cabinets of curiosities that originated in 16th-century Europe. I am a big fan of visiting cities’ lesser-known museums and cultural institutions. This appeared in the August/September 2013 issue.

The thermal hot springs in Rincón de La Vieja at Rio Negro (Black River) may not be as well known as those in the Arenal area, but we had the pools and surrounding forest to ourselves. From where we stayed at the Hacienda Guachipelin Rincón de La Vieja, the springs were accessible by horseback or vehicle, followed by a short hike and crossing a rather dubious hanging bridge. The pools are heated by the Rincón de La Vieja Volcano, so you definitely want to test the steaming water. There are seven pools to sample of different shapes, sizes and temperatures. The first pool was too hot to plunge more than our toes into. And the pool that was “just right” was the last one, which happened to be ideally situated next to the churning river. After two days of horseback riding, hiking, canyon ziplining and rappelling, it was great to unwind at this private oasis. If a rainforest/volcano adventure beckons you, I recommend staying at Hacienda Guachipelin Rincón de La Vieja and getting an adventure pass from Adventure Tours--both are at Rincón de La Vieja National Park.

No trip to Antigua, the “Land of Sea and Sun,” would be complete without spending quality time on one (or two, or three) of its fabled 365 sugar-white, sparkling beaches and the Galley Bay Resort and Spa sits on one of the best of the bunch. Galley Bay Beach is graced with three-quarters of a mile of quintessential Antiguan beach. Perfectly sized sand won’t blow in the breeze, palm trees dot its length providing natural shade, beds and hammocks dare you escape their relaxing embrace, and the water… Well… The water looks like you see above. Immaculate. Turquoise. Radiant. In the distance, you can see Nevis and St. Kitts on the horizon almost close enough to touch adding to the impossible perfection.

Peace, relaxation, beauty, and a tasty menu—the Beach Tree Bar is a fabulous place to watch the sun close out the day past the Pacific Ocean. With swaying palm trees and a large tree right on the beach, the casual lounge is perfect for pupus (appetizers) and a cocktail to celebrate sundown. Located at the Four Seasons Hualalai Resort, the bar sits on a pretty stretch of sand on the Kohala Coastline. Flavors are fresh, creative, and from the Island when possible.

Is it is possible to be romanced by a property or courted by a restaurant? My luxurious and beautiful dining experience at the Fairmont Orchid Resort’s Brown’s Beach House Restaurant had me hooked as soon as I arrived on the resort property just after sunset. Immersed in aloha, and comfortably seated on the restaurant’s outdoor patio, a solo voice and the sound of ukulele danced through the air in concert with the tropical ambiance. Sustainably grown and locally sourced foods are exquisitely prepared to please the palate, and an air of romance is enhanced with the lull of the surf rolling into the sand, only steps away. For a truly memorable experience, private dining is available on a knoll under swaying palm trees. Reservations recommended.

After a five-year, $30 million renovation, The Adelphi is Saratoga’s grande dame once more. Housed in a stately building from 1877, the hotel takes its design cues from the Victorian era, featuring everything from ornate wall moldings to brass lighting fixtures and tufted-leather headboards. Modern conveniences also abound, including hidden storage cabinetry and marble bathrooms with freestanding tubs and glass showers. Downstairs, carved horseheads at Morrissey’s bar are the only reference to Saratoga’s racing heritage, but the area’s farmers get their due at the Blue Hen, the hotel’s farm-to-table brasserie, and Salt + Char, its rustic-chic steakhouse.

Hallerbos (Flemish) or Bois de Halle (French) is a beech forest just south of Brussels. It’s a popular spot for walking, cycling and horseback-riding. Every spring, for a few short weeks, the forest makes a magical transformation into a blue carpeted wonderland. Millions of tiny bluebell flowers bloom under the shade of the beech trees and people flock to the forest to catch a glimpse. Timing is everything, too soon and the bluebells aren’t out yet; too late and you’ve missed the show for another year. But that’s what makes seeing it so special.

The Forbidden City gets top billing in Beijing, and that’s good news for visitors to Jingshan Park. The 23-hectare (57-acre) park is just north of the Forbidden City, separated by a moat. A former imperial park dating to the 11th century, this was where the emperor and his family, living in the Forbidden City, would come to stroll. The big draw here is the hill (shan means mountain) with five summits, each of which has a mid-16th-century pavilion that once housed copper Buddha statues, destroyed at the beginning of the 20th century. Stake out a spot on Wanchun (Ten Thousand Spring) Pavilion from where, on a clear day, you have a stunning view of the entire Forbidden City, the Bell and Drum towers, Miaoying Temple, and Beihai Park.

With its white, single-story exterior and dark window frames, this 12-room inn on the Saratoga Race Course looks like a Tudor take on a vintage motor hotel. Once inside, however, visitors realize the boutique property is much more luxurious than a roadside motel. Rooms feature light-wood bed frames and equine-inspired art, while the bar offers an excellent wine and cocktail menu, which regular happy hours featuring Moscow mules served in copper mugs. There’s also an outdoor patio, where the hotel can arrange barbecue meals on request, and free bike rentals for those who wish to venture farther into town.

Latitudes is the acclaimed restaurant at the Sunset Key Cottages, on Sunset Key, a small private island accessible only by boat. Take the ferry across the Key West Harbor—your scheduled ferry time is your reservation time. The dreamy ride across the gulf waters sets the tone for the rest of the evening. While most restaurants in Key West have flexible dress codes, if any, Latitudes is a place you should break out the nice clothes. If the weather’s nice, ask to eat on the patio, which is decorated with twinkling lights wrapped around the green palms that surround the courtyard, and features tables set with white cloths and candles.

One of the best spots to relax in Miami is Bayfront Park, 32 acres of lush grounds that include the Klipsch Amphitheater and the Tina Hills Pavilion. The Fourth of July fireworks and the New Year’s Eve countdown are just two of the community events that occur here throughout the year. From the beach you can watch dolphins jump and play while luxury yachts pass through Biscayne Bay, and you’ll also have great views of the cruise ships and marina. Take the renovated baywalk, shaded by oak and palm trees, past the rock garden and waterfall and several benches. Fitness classes are offered in the park during the week.

Belgium is famous for its Art Nouveau architecture from the late 19th and early 20th centuries. While many architects were experimenting with this new style, Victor Horta is Brussels’ undisputed father of Art Nouveau. Many of his stunning creations are still in use around the city, like the Hôtel van Eetvelde on Place Ambiorix, added to the UNESCO World Heritage Sites list in 2000. While the Hôtel van Eetvelde is only open to the public during special ‘open heritage’ days in Brussels, it’s well worth walking through the neighbourhood, rich in dramatic architecture. To see inside one of Horta’s creations, visit the Horta House Museum, in the St. Gilles neighbourhood. This was Victor Horta’s home and studio and he designed every last detail, inside and out.
