    Unlike most people who arrive at the property fresh off a plane and short cab ride, I showed up after spending an hour searching for waterfalls on horseback in the Samana wilderness. Basically, I was tired, smelly, dirty… And by no definition sublime. The moment I walked into the shady, chic reception area, everything changed. I was immediately relieved of my bulky, mud-splattered belongings by practiced staff and my newly emptied hands were then wrapped around a fresh coconut. At first, you might think the stylish surroundings would clash with such local, earthen niceties, but you’d be wrong. Sublime makes an art out of weaving local and luxury together in almost every aspect of their experience. In the three-story main building, 50 one- and two-bedroom Suites (16 for guests, the rest privately owned) form an arc around the property’s centerpiece: a sheltered and soothing pool area that’s a mix of interconnecting canals, larger pools for swimming, beds wrapped in billowing fabrics, grassy expanses and simple walking paths. This place is truly Sublime!

    Set within the Banco de la República’s museum complex, the Botero Museum offers a sampling of paintings and sculptures by famed Colombian artist Fernando Botero, best known for his still lifes and his exaggeratedly rotund human figures. Botero donated 123 of his own pieces to the institution, as well as 85 from his personal collection—including treasures by Chagall, Picasso, Monet, and Miró. The gracious colonial-era mansion includes an area that displays contemporary Latin American and European artworks. Audio guides are available in English, French, and Spanish.

    Almost unchanged since 1912, the Théâtre Corona (Corona Theatre) in Little Burgundy was built to host showings of silent films accompanied by live music and comedy shows by local troupes. You can still find an orchestra pit and the original dressing rooms under the stage, but since the late 1990s—after coming close to demolition—it has served mainly to host live music, by acts like Buck65, La Roux, and Arcade Fire. The heritage décor, with painted ceiling, gilded columns and heavy jacquard brocade curtains, and the relatively small capacity for 700 spectators, make this a singularly intimate place to see a show. The best sightlines are from the balcony, but there’s nothing like the feel of a smooth wooden dance floor beneath your soles.

    Teatro Colón is considered one of the most beautiful theaters in the world. Though the theater was, to the great disappointment of many travelers, closed for years while undergoing major renovations, the Colón has now reopened and is playing host to a busy schedule of opera, ballet, and symphony. If you can’t get tickets for this legendary theater, try another elegant venue like Teatro Nacional Cervantes or Teatro San Martin. Check out Ciudad Cultural Konex if you’d rather see an edgier contemporary performance of modern dance or theater, or head to La Trastienda to hear live music by some of Argentina’s best young artists.

    If you still need a gift for that one person on your shopping list who doesn’t eat chocolate, head to one of the many Maison Dandoy cookie shops dotted around Brussels. Dandoy is a Belgian institution and they have been making cookies in Brussels since 1829. The cookies are from 100% natural ingredients and some of the recipes are 180 years old. Try the traditional Belgian speculoos, a spicy biscuit a bit like gingerbread, or Pain a la Greque, a Brussels favourite. There is even an Earl Grey cookie with tealeaves – delicious. Not only do Dandoy cookies taste wonderful, but their packaging is lovely, making them the perfect gift. Choose from the newly designed Maison Dandoy boxes or a variety of tin boxes, perfect for travelling.

    There are a few great options for dining on Place St. Catherine, in Brussels. However, when people ask me where to go for great seafood in Brussels, Jaloa, and their more casual Jaloa Brasserie, are first on the list. Jaloa itself is elegant fine dining and a wonderful experience if you are looking to splurge. (Don’t miss the fresh oyster bar.) The restaurant only seats 25 people and features tasting menus of four, six or nine courses. The Jaloa Brasserie is more cosy and affordable but with the same high level of quality. The menu is a la carte with the exception of a monthly tasting menu. Both the restaurant and brasserie feature seasonal, local ingredients and have hidden terraces you can enjoy, during the warmer months.
  • Translating into cake of three milks, pastel de tres leches is a sponge cake doused in, yes, three kinds of milk. Evaporated milk, condensed milk and run-of-the-mill milk (or even cream, depending on the baker) are combined and poured over the cake base, which has been punctured with tons of tiny holes, allowing the milks to be evenly soaked up. Topped with a layer of whipped cream and squirts of caramel, the cake is surprisingly light for something so saturated in milk, and manages to steer clear of the too-sweet territory. While I got to try it in El Sal--at the amazing Juayua Food Fest--it’s a popular dessert across Latin America, busted out at many a celebratory occasion.

    Though it was built in 1968, Hotel de Mendoza reflects its 16th-century surroundings. Nestled in the heart of Guadalajara’s centro historico, the hotel features 104 simple yet elegant rooms, with hand-carved, colonial-style furnishings (some hand-painted by Jalisco artist Alejandro Rangel Hidalgo) and views of Teatro Degollado. Original arches salvaged from nearby Templo Santa María de Gracia’s former convent create architectural contrast in the courtyard pool area, a sunny space lined with terra cotta tiles and cascading greenery. Similarly atmospheric is the on-site restaurant, La Forja, where guests enjoy global cuisine in an elegant dining room decorated with cane-backed chairs and blue-and-white talavera pottery.

    There are many excellent restaurants in Florence, but this one was recommended to me by a local, and I’m so glad it was. Alessandro, the chef, recently returned after working in New York City for eight years. Located on a small street near the Duomo, La Cucina del Garga offers so much for a small restaurant: recipes inspired by the chef’s father (Garga), art covering the walls, friendly staff, great Tuscan wines, funky menu designs, and reasonable prices. A seemingly simple salad of greens, tomatoes, pine nuts and cheese was the best salad I’ve ever had. Other great dishes were the fresh twisted penne with pistachios and cherry tomatoes, and creamy pasta with scallops. If possible, make a reservation and ask for the “painted room.”

    Avenida Central was the city’s great commercial core in the first half of the 20th century; though its heyday has ended, the swarm of humanity packing into its various shops, bars, hotels, restaurants, and other businesses attest to ongoing vibrancy. The classic stretch extends from Plaza Santa Ana to Plaza 5 de Mayo, where art deco and streamlined moderne landmarks are still on view. El Banco Nacional, the former Kodak building, and “La Pollera”—thus nicknamed for the resemblance its balconies bear to the traditional full skirts of the Los Santos region—figure among them. These avenue blocks are pedestrian-only; peddlers and street vendors selling every imaginable snack and trinket abound.

    Nestled within Positano’s hillside tangle of pastel residences and stepped alleys, Le Sirenuse is a legendary boutique hotel that feels more like a private home. Run by the Sersale family since its opening in 1951, the crimson-hued house is filled with antiques, potted plants, and oil paintings that lend it a friendly atmosphere devoid of any snootiness. White-walled guest rooms are accented with Vietri floor tiles and heirloom walnut furniture, while marble bathrooms have whirlpool tubs and Eau d’Italie toiletries, the hotel’s bespoke line. Dining is excellent: The Michelin-starred La Sponda restaurant is as tasty as it is charming, illuminated in the evening entirely by candlelight. There’s also a champagne and oyster bar that commands dazzling views from a panoramic terrace; the vistas are no less stunning from the pool deck, where potted lemon trees scent the air. The hotel also has a top-notch spa, plus fun perks such as free daily excursions on its vintage wooden boat.

    The 165-acre Springs Resort & Spa sits 1,000 feet above the Arenal Valley, higher than any other resort in the area and affording each one of its 47 polished-wood guest rooms commanding views of the Arenal Volcano and surrounding countryside. Impressive as those vistas are, the luxury resort’s biggest draw is its 28 mineral thermal pools, which wind through four lush acres. The setting is undeniably romantic—the resort was featured in an episode of The Bachelor—but families are welcome, with activities for kids of all ages. Club Rio, on the resort’s half-mile of river frontage, offers tubing, kayaking, mountain biking, and horseback riding; there’s also a wildlife preserve for rescued native animals, including monkeys, ocelots, jaguarundis, sloths, and a puma. Five restaurants (and five bars) mean there are plenty of options, from casual poolside dining to tasting-menu elegance.

    “This family-run restaurant on the fishing island of Pellestrina is quite far out—probably 45 minutes by boat. But in the summer months, it’s a lovely ride, breezy and fresh. Once you’re at the restaurant, you sit on a pontoon and see nothing but the spread of la laguna and the occasional boat speeding past. They do wonderful fish here. It’s incredibly fresh and they’ll bring you an array of mixed antipasti to start. The oven-baked turbot on potatoes with baby artichokes and baby tomatoes is fantastic. So, so good.”

This place is legit authentic Japanese, they even make you take off your shoes and wear their slippers … Men have to wear a button-down collared shirt, so be ready. You can order from their menu a la carte, but the thing to do is make reservations and get their tasting menu. This is what we do every time and it never disappoints. The tasting menu is about seven to eight dishes depending on what the chef decides to send. The meal is unforgettable.     A Niçoise institution for nearly 100 years, Chez Pipo specializes in socca, a chickpea-flour flatbread that comes out of the restaurant’s wood-fired ovens looking like a giant pizza. Their motto, “Aqui si mangia la socca,” says it all—socca is the only dish they serve, alongside a selection of Provençale spreads like tapenades made with anchovies, artichokes, olives, or sun-dried tomatoes. Seating is on a large terrace during summer months or in a wood-trimmed dining room for shade or winter dining. The line outside can get long, but because of the simple menu and well-trained staff, the service moves quickly.
