    Prague’s centuries-old connection to music survived occupation by both the Germans and the Communists, so it’s fitting that those deep roots strike a chord at Aria Hotel Prague, where all of the rooms are named after famous composers or singers, from homegrown sons like Dvořák and Smetana to contemporary icons like the Beatles, Ella Fitzgerald, and Elvis Presley. The hotel even has a music director who can point you to the city’s best performances, as well as assist with suggestions in the music library; guests borrow CDs or concert DVDs to watch in their rooms, which are all outfitted with hi-fi sound systems that include Marantz speakers, plus flat-screen TVs, Blue-Ray players, iPads, and Apple TVs. All 51 accommodations were given a head-to-toe makeover in early 2018, resulting in sumptuous rooms decorated in shades of soft peach, dusty rose, and sandy taupe, and combining a pleasing mix of antiques and modern furniture.     We’d heard that Blé Sucré makes the best croissants in Paris; so, of course, we had to check it out. They were absolute magic heaven: a bit crackly on the outside, with moist, delicate wisps of buttery pastry on the inside. The chocolate croissant was equally amazing. We ate it outside with an espresso. Go on a weekday at lunchtime when there’s virtually no line. Be prepared to wait during the weekends.

    The peak called Monserrate towers over central Bogotá and lends its name to the church that tops it. Perched more than 10,000 feet above sea level, the sanctuary—dedicated to the Passion of Christ—has beautiful gardens showcasing marvelous highland vegetation, and the city views from here are spectacular (sunsets are especially recommended). Ascend Monserrate by cable car, via railway, or on foot (this last is only for the fittest and those already acclimated to the altitude). That beautiful white house on the mountainside is Casa Santa Clara restaurant, a better-than-expected, special-occasion-suitable venue at which to try traditional Bogotá favorites like ajiaco, a thick potato-and-chicken soup.

    A year ago I had dinner at the Clifton, then under the supervision of Tucker Yoder. Mr. Yoder was elsewhere that evening, but I spent several hours at the “chef’s counter” in the kitchen, watching executive sous-chef Jarad Adams work his own delicious magic. Naturally Mr. Adams was meticulous with his food prep, but he was also surprisingly generous with his time for me. Imagine my delight when I returned this year to find Mr. Adams had been promoted to Executive Chef. On this visit, Mr. Adams’s tasting menu showed the same attention to detail as I remembered, but with a greater sense of adventure — even whimsy. From the amuse bouche (a spoonful of polenta topped with pork belly, apple, and a sprig of fennel) all the way through to the sticky toffee pudding with candied pecans, dates, and caramel ice cream for dessert, I was enchanted. The tasting menu consists of four courses and varies by the season. My first course was a toss-up between the butternut squash and apple soup and the shaved winter vegetable salad with hazelnuts, black cocoa, and a buttermilk dressing. I had no regrets about my choice of the salad, especially as butternut squash was the foundation of my next course: the most perfectly seared sea scallop I can remember. From there it was onto monkfish with beluga lentils, with Brussels sprout leaves dancing on top. Mr. Adams knows what he’s doing in the kitchen, and the Clifton — and Charlottesville — is lucky to have him.

Watch for a brick-and-mortar outpost slated to open this spring—menu standbys like bacon-and-chile-flecked mac and the “trough” meat-sampler, pictured here, are sure to make an appearance.

    Restaurateur Brooks Reitz built his name with this chicken-and-oyster joint that feels old-school despite its carefully crafted ambiance. On a first visit, it’s sinful not to order the perfectly salted, crispy/juicy fried chicken amalgam shellacked with a glaze of Old Bay and cayenne suspended in melted lard. That necessitates a second visit to gorge on the poached char-grilled lobster and sausage, or the Leon’s Fish Fry, a platter of shrimp, oysters and catfish. Leon’s was the first to open way-Upper King, now the restaurant hotbed, and it’s held onto its cool status thanks to its thoughtful buildout in a restored auto body shop, retaining the exposed rafters and a rollup garage door that opens to a patio out front.

    No trip to D.C. is complete without ordering the district’s signature dish, the half-smoke. And while many restaurants serve it, there’s only one worthy of your order: Ben’s Chili Bowl. The popular landmark diner has been feeding the community and cultural icons since the area’s “Black Broadway” days, when jazz greats such as Miles Davis enjoyed this comfort food classic. When riots broke out after Martin Luther King’s assassination in 1968, Ben’s remained open and served both police and protesters. While the U Street Corridor has undergone an urban makeover, Ben’s has remained the same, serving its quarter-pound of half-pork/half-beef smoked sausage on a bun with mustard and onions, all smothered in spicy homemade chili sauce. The prestigious James Beard Foundation even took notice, deeming it one of “America’s Classics.” Bring cash and come hungry.

    Tucson is predictably well-endowed with Mexican restaurants...But it’s still worth driving about an hour south to the little town of Tubac for a meal at Elvira’s. Upon entering the cool space, you won’t be surprised to learn that the chef/owner got degrees in design and graphic arts before going to cooking school. The restaurant, family-owned since 1927, is named after Ruben Monroy’s grandmother. Originally located in Nogales, Mexico, Elvira’s moved up to Tubac a few years ago... Have a welcoming “Hola-tequila-shot” (just fifty cents!) while perusing the menu...I had the pipián rojo mole—perfectly tender chicken under a vibrant sauce made with ground pumpkin seeds; my wife tried the day’s light lunch special of mushroom enchiladas with tomatillo salsa, and for out-of-town family, the squash-blossom-stuffed poblano chile relleno “Frida Kahlo.” Beef tongue with salsa verde and the other moles will have to wait for a return visit. Suspended from the ceiling are constellations of lanterns, blown-glass teardrops, flying cherubs—Mexican folk-art with a surreal twist. Your eyes will not be bored. More importantly, neither will your taste buds... (Tubac, incidentally, was the starting point of the 18th-c. expedition that led to the founding of San Francisco, Santa Clara, & San José, CA. Not much of the original Spanish presidio remains, but for the past few decades, “where art and history meets” has become the slogan of this ‘artists’ colony’ in the high desert.)

    As rivalries go, this one is up there with Coke vs. Pepsi. Which of these two cultural institutions’ pastry chefs make the best version of Vienna’s famous Sacher torte? The Hotel Sacher is a historic property and, by legal right, has been recognized as the original home of the classic dessert. But a few blocks away on posh Kohlmarkt street, just steps from the Hofburg Palace, the pastry shop Demel proudly still carries the official title of royal confectioner. Both houses ship this spongy chocolate cake, covered with chocolate icing and layered with apricot jam, all over the world. But nothing beats tasting the sweet treat right there in old Vienna.

The downtown store remains the one best suited for visitors to explore, with miles of used reads, a tightly curated selection of books from the knowledgeable staff, and every Portland-themed book you could hope to find under one roof. A renovation in 2014 opened up the space and made it feel less like a warehouse of dusty stacks, an improvement that bodes well for the future of the business. Author appearances, even those at the satellite branches, are some of Portland’s best events for interesting discussions.
