    The spirit of Jacques Cousteau is very much alive at this Encinitas restaurant, which specializes in tacos filled with local fish, organic meat, and fresh vegetables. The Cousteau taco—featuring catch of the day (like California halibut) with cumin-lime crema, mango salsa, and cabbage slaw—should be in the running for San Diego’s best fish taco. Equally delicious are the Azul (grass-fed flank steak, caramelized onions, mushrooms, blue cheese, arugula, and cilantro) and the vegan Veronica Corningstone (red quinoa, sweet potatoes, garlic, Daiya vegan cheese, avocado, and cilantro). One look at the menu and it’s easy to tell the owner is a movie buff—many of the items are named after famous characters, from Ron Burgundy to Kelly Leak from The Bad News Bears.

    The renowned Meadowood Resort mixes the grandeur of a chalet with the amenities of a five-star resort—located in a private canyon within minutes of downtown St. Helena.     The stationery shop Itoya resembles a museum, with its exquisite displays and handsome collection. The main shop on Chuo Dori has 12 floors of paper, stationery, pens, planners, and a café. The annex on the backstreet has seven floors of paints, colored pencils, notebooks, and more. Itoya is a great spot to pick up gifts for friends back home. It’s easy to find—just look for the giant red paper clip in front of the building.

But its abundant natural light, and market-fresh, Scandinavian-influenced café make it a place of its own. Minimalist, rustic decor and sparsely furnished racks reinforce a feeling of calm.     An Old World grande dame of the 19th-century tradition, the InterContinental Amstel Amsterdam presides over the Amstel River from its waterfront perch at the eastern edge of the original city. An imposing example of a Dutch take on French Renaissance Revival architecture of the period, the hotel—known initially as the Amstel Hotel—was conceived of by well-to-do Amsterdam doctor Samuel Sarphati to attract wealthy Grand Tour–goers to the struggling city. Since then, dignitaries from Queen Elizabeth II to former President Bill Clinton, and celebrities from Audrey Hepburn to George Clooney, have entered the imposing lobby—with its grand staircase, marble columns, and gilded chandeliers—and taken up residence in its opulent suites.

    While in its latest iteration the hotel has updated itself in all the right ways, it still offers each guest the superlative but understated service that such royals (of both state and silver screen) would expect, down to the private butler service that comes with each room. The current French-inspired decor channels the building’s original architecture and includes romantic hand-drawn wallpaper in bedrooms. The unfussy, seasonal cuisine and craft cocktails in the restaurants and bars infuse the traditional space with modern sensibilities. Even the health club has its feet in both past and present: The thoroughly modern facilities were inspired by one of the forefathers of physiotherapy, who took up residence in the hotel and treated such distinguished clients as Empress Elisabeth of Austria there.

    Before I went to Belize, anyone I spoke with who had already been told me that I had to have a meal at Elvi’s Kitchen. What started out as a take-out burger window in 1974 eventually became a sit-down restaurant serving lovingly prepared Caribbean dishes such as conch soup and fritters, mojo de ajo, fried green plantains, and street corn. During high season you might have to wait in line to eat dinner at the restaurant, but most of the time, there isn’t much delay. Save room for dessert. Elvi’s Kitchen is open from 11 a.m. to 10 p.m., Monday through Saturday.

    Although you can find most cuisines in Berlin now, Jamaican food is nowhere near as ubiquitous as it is in, say, London, and it’s mostly relegated to shacks or pop-up stalls at festivals. Enter RosaCaleta, a full-service restaurant run by two transplants from Jamaica via New York who have created a perfect balance of traditional Jamaican dishes playfully reinvented for a European palate. White walls and a wood floor set the stage for a menu that includes oven-roasted pork fillet, fiery jerk guava chicken served with fluffy dumplings, and vegetarian dishes such as vegetable stews and lentil salads mixed with mango and ginger. The restaurant also has a superlative rum collection, used for an inspired cocktail list that is as fruit-filled as it is potent.

    By name alone this sounds like a wine bar, but it’s actually a welcoming izakaya, albeit one that has a good selection of wine, as well as sake, shochu, and of course Asahi beer. Vin Vie is on Nongzhanguan Bei Lu, hidden away through a gate and behind a Sichuan restaurant. Dinner here is a cheerful, languid affair as you order a few dishes and drinks, eat and imbibe, and then repeat. Like any izakaya worth its salt, the menu has enough variety to satisfy vegetarians and carnivores. A perfect square of soft, creamy tofu, beef tendon marinated in wine and miso, sardines served warm and in their can, and pickled shishamo (fish) are among the can’t-miss dishes. Reservations are recommended.

    This is a quintessential stop on any Grand Canyon itinerary. Constructed using native stone and Oregon pine, El Tovar Dining Room in El Tovar Hotel (which opened in 1905) is a longstanding landmark that’s hosted everyone from Theodore Roosevelt to Paul McCartney. The menu reflects regional Southwestern flavors and is filled with dishes showcasing local ingredients, such as the red chile tamale with adobo crema and the pork chops with apple-jalapeño chutney (inspired by the restaurant’s 1946 menu). Before you sit down to dinner, be sure to catch the sunset on the small outdoor patio. And definitely check out the wine list. There are plenty of tasty local varietals grown in regions all around Arizona.

    In the increasingly gentrifying El Raval neighborhood, along the leafy main avenue of Rambla del Raval, a whole host of restaurants, cafés, and bars are popping up. Among them is this intimate bistro from noted Catalan chef Carles Abellán, which takes a refined approach to traditional home cooking without being pretentious. To that end, the narrow dual-level space, a former bodega, is simply decorated with rustic wood furniture, forest-green walls, and a ceramic-tiled, marble-topped bar. The menu is divided into categories of small dishes—From the Sea, From the Mountain, From the Orchard—plus a few versions of classic Spanish stews. Leave room for the homemade desserts: The soft, silky Brie cheesecake is divine. Reservations are essential.

    Pearl was founded in 1881 as a traditional brewery. These days, however, the bustling complex is less about beer than its 15 restaurants, dozen-plus retailers, and numerous family-friendly events, including a twice-weekly farmers’ market. Start with lunch at La Gloria, chef Johnny Hernandez’s nod to interior Mexico, followed by dessert at Bakery Lorraine, where you’ll find an enticing rainbow of Parisian-style macarons. If you’re in the mood to shop, pick up a tailored guayabera from Dos Carolinas, or a piece of handcrafted jewelry from Ten Thousand Villages. Pearl Brewery is even home to Hotel Emma, a true gem in San Antonio’s boutique-lodging scene, in case you don’t want to leave.

    Though Barcelona is hardly the epicenter of paella (that would be to the south, in Valencia), this hands-on culinary workshop/dining experience offers a fine introduction to what’s arguably Spain’s most famous dish. Set in an appealingly hip Raval-area space featuring soaring ceilings, exposed brick walls, and industrial lighting, the class starts with a welcome glass of cava along with a brief overview of paella from founder Alex Betolaz and chef Alex Villar. Don an apron at your cooking station, but don’t expect anything too labor-intensive; ingredients are, for the most part, already prepared, though you will do a bit of chopping, pouring, and stirring. (You can book your paella preferences ahead of time, and vegetarian options are available.) Then you’ll gather around a long wood table and sample various Catalan specialties along with your paella (and there’s usually plenty of sharing going on). Choose from three different paella-making experiences, starting at €50/per person for two courses and going up to €85 for multiple courses plus unlimited wine.
