    When Southern Ocean Lodge, the flagship property of Australian hotel brand Baillie Lodges, opened in 2008, it was Kangaroo Island’s first true luxury lodge, known for its cinematic spot atop grass-covered limestone cliffs, with curved guest suites facing the namesake seas. Surrounded on three sides by national parks, Southern Ocean Lodge connected travelers with Australia’s powerful natural landscapes. Then in early January 2020, wildfires consumed more than half of Kangaroo Island, reducing the ecological paradise to sandy hills and blackened branches. Southern Ocean Lodge was a casualty of the blaze.


    As AFAR’s Katherine LaGrave reported in her feature on the island, rebuilding began in earnest in February 2022, with the goal of becoming more sustainable: “The new lodge will use 25 percent less energy than the original lodge, and diesel fuel consumption will be halved. There will be rainwater harvesting, reliance on a hybrid solar-and-battery system, and elevated boardwalks to minimize impact on the health of coastal plants. Smart landscaping will create a sort of buffer around the lodge.”



    Along with the new sustainable choices, the lodge has replicated the footprint of the original property, with 25 guest rooms slightly reoriented to optimize sea views. A new ultra-premium suite, the Ocean Pavilion, has up to four bedrooms and bathrooms (or two separate suites) with an outdoor terrace and private pool. And the ever-popular main lodge still has a Great Room with a suspended fireplace and a deck with a plunge pool that juts toward the sea.

    Reykjavík’s Dill restaurant, run by chef Gunnar Karl Gíslason and sommelier Ólafur Örn Ólafsson, is the first venue in Iceland to win a coveted Michelin star. It specializes in New Nordic Cuisine, which means that the kitchen updates traditional dishes such as arctic char, pork belly, and lamb shanks in highly creative and ultradelicious ways—often pairing them with healthy ingredients like barley, berries, and kale. The restaurant is open four evenings a week, and the seven-course menu changes regularly based on availability of local ingredients. Food can be paired with a fabulous selection of champagnes and wines. It’s not the cheapest choice in town, but it is one of the best.

    Named for its owner’s “poz-itive” vibe, this casual, welcoming restaurant ranks among Dominica’s best. Expect Cajun, Creole, and Caribbean fare in the mix, along with fusion dishes and strong vegetarian options. Menu standouts include callaloo soup, veggie rice, and snapper in coconut-curry sauce, but the lobster, grilled with lemon-garlic butter, tends to steal all the headlines—or at least those not occupied by the fresh juices and home-infused vodkas. Open for dinner only, Poz is quite small in size, so make a reservation to avoid waiting for a table.

    In the mid-1800s, the Pioneer Mills family helped found San Antonio’s active flour milling industry. It’s fitting that their private residence, the Guenther House, is now home to a local history museum and a delicious restaurant that serves some of the best pancakes in San Antonio. The pioneer biscuits and waffles are also a favorite best enjoyed riverside. Come for the food, but linger for the history lesson.

It’s one of the only place in the city where you can find well-executed fusion cuisine, with touches of American, Japanese, French and Basque cuisine and perhaps THE only that has a real cocktail program in place. It’s a dark, vibey spot. Call ahead for reservations and go hungry. Mondays are special menu days, each with a different theme.

    It’s easy to pass by Taylor’s Kitchen and not realize there is a fantastic restaurant inside...I had visited the neighboring shops without noticing the new restaurant, but I knew I had to visit once I heard people raving about the food. Taylor’s Kitchen uses ingredients from local farms and ranchers to create vibrant dishes that reflect the seasons of this agricultural region of California. This is not unlike many new restaurants in Sacramento, but what Taylor’s Kitchen does so well is create consistently good food. The restaurant is elegant yet cozy, suited to couples or small groups. The menu changes frequently based on what’s seasonally available and is a great reflection of Sacramento’s commitment to farm-to-fork dining.

    A Buffalo mainstay, Chef’s has been serving heaping plates of spaghetti since 1923. Situated on the outskirts of Downtown, the Italian spot offers homestyle fare that works for everything from family gatherings to romantic date nights. Favorites include the stuffed shells, veal scaloppini with spaghetti, and chicken broccoli Alfredo with fettuccine, but the dish that made Chef’s famous is the spaghetti Parmesan—a mess of noodles smothered in cheese and broiled to perfection. Due to its popularity with locals and expat Buffalonians, the restaurant can get pretty packed, so it’s best to make a reservation in advance (especially on the weekends).

    Day-trippers in search of awesome views, cool drinks, and light bites score at this oasis in the middle of Arikok National Park. The menu is simple and heavy on island favorites, from fried whole fish to seafood served with plantains, salad, and pan bait (a pancake-like bread). There are also hamburgers and cold sandwiches, along with frozen cocktails and local beer. Still, it’s the views that really stun. From its perch between Boca Prins Bay and the Fontein Cave, the restaurant has sweeping vistas of desert, hills, and sea.

    The reward for climbing 418 steps to Aksla mountain’s summit is a cake, coffee, or a three-course dinner at Fjellstua. Admire one of the most famous panoramic views in all of Norway from the minimalist restaurant’s large windows. Although the outdoor kiosk is somewhat of an overpriced tourist trap, step inside for the evening ocean-themed menu, in which traditional Scandinavian sides of boiled potato and salad put the focus squarely on the fish. Book in advance to guarantee a window table—if the weather cooperates, you’ll catch a stunning sunset across the archipelago.

    Originally a 15th-century convent, followed by stints as the headquarters of the Dutch Admiralty and Amsterdam’s town hall, the Sofitel Legend The Grand Amsterdam—or simply, The Grand—presides over the heart of the old city. With its imposing brick facade flanked by canals and its location within a stone’s throw of Dam Square and De Oude Kerk, The Grand would be a legend even without Sofitel’s designation. The majestic entrance courtyard hasn’t changed since its construction in the 17th century—a fact that’s reinforced by the hotel’s horse-drawn carriage, which offers guests a different way to explore the city center—and even before the building became a hotel, landmark figures in European history stayed on site, including William of Orange.

    While today’s interiors are starkly modern, the designers alluded to the hotel’s storied past in the decor and textiles featured in the 177 rooms and suites, which overlook either the interior courtyard and gardens or the canals, and come with touches like rainshowers and signature MyBed mattresses. The private Canal House Suites—especially popular with the dignitaries and celebrities who frequent the hotel—may appear boldly contemporary, but accents like round windows and wood-beamed ceilings hint at their past as the private homes of Dutch admirals. The hotel’s five dining options include the Michelin-starred Bridges restaurant—set in what was once the town hall’s canteen—as well as the casual, all-day Bridges Bistro, traditional Flying Dutchman café, sophisticated Library D’Or lobby lounge, and peaceful Garden Terrace. The two-floor SO Spa houses a gym, heated indoor pool, wet area with Turkish hammam, and treatment rooms for French-inspired services.

    Check your traditional hotel notions at the door of this Russell Street lodging. At QT Melbourne, guests are greeted on arrival by cheery Directors of Chaos, who sport the same black wigs, heavy makeup, and bold black-and-white outfits, but the lobby itself makes an equally striking first impression: old-school French hip-hop competes for attention with colorful video installations, a giant stuffed peacock, and a towering wall of 1,700 recycled books. Upstairs, the 188 rooms give off an industrial-chic vibe with concrete-slab ceilings, timber flooring, and bathrooms set behind sliding partitions of aluminum-framed glass.


    The hotel’s seemingly never-ending food and drink offerings include the Pascale Bar & Grill, where French bistro influences combine with produce farmed on the rooftop garden; Hot Sauce, for Asian-accented bar food (think steamed baos stuffed with fried chicken and kimchi); and the Cake Shop, for warm pain au chocolat in the morning, plus an array of pastries, cakes, and snacks throughout the day. Families with young children will appreciate the complimentary travel cots and babysitting services (arranged with advance notice).

The youngsters’ extracurriculars—café lounging, bar hopping, and vintage record, book, and clothes shopping—give the quarter a unique mix of history and life.

    Hotel des Grandes Ecoles occupies three 19th-century houses along a private cobbled passageway leading to a courtyard garden. Old-fashioned in the best sense, one of the charms of the place is that the compound feels like an escape to a French granny’s country cottage. Small by American standards, rooms done in toile or floral fabrics exude classic Gallic charm; French cotton lace and matelasse drapes the sitting tables and beds. Bathrooms are immaculate but simple, with either shower or bathtub and toilet.

For most travelers in Stockholm, it provides a good lunch option if you want a fish sandwich or snack in an atmospheric Victorian food hall. The Saluhall will be closing for renovation and moving to a temporary building across the street in January 2016, and is scheduled to return to its home in 2020 after it has been refurbished and upgraded, ready to serve discerning Stockholm residents for another 125 years.
