    A clandestine spot to imbibe in Gastown, the Diamond is the speakeasy when you’re in Vancouver. Bar none, one of the best bars I have been to on recommendation from Nathan at Judas Goat. They will make you anything here, like a tasty pisco sour. Plus, they give you these really cute glasses with flowers on them. We didn’t try the menu, but if it’s anything like the drinks, I’ll be returning for a meal.

    Pinons restaurant is the best kept secret in Aspen. It has been here for 20+ years with Rob Mobilian, now the owner, starting off as the chef. On a busy night you will still see him in the kitchen but mainly he is at the front door greeting guests with the General Manager, Jim. The dining area is very elegant and the service is impeccable—but the bar menu is the best value in town. The bar menu gives you an option of two courses: one appetizer and one entrée for $35. If you splurge for my favorite entrée, the Pan-seared Buffalo Tenderloin in huckleberry sauce, it is $44. Not bad considering that normally the tenderloin is $48 on the dining room menu and with the bar menu you get that and a starter for cheaper. (The portions are the same size.) What could be better? Seating is on a first-come-first-served basis so it can get crowded but it is worth the wait.

    On weekend nights, The Palm Court at the Langham Hotel, London’s classic spot for afternoon tea, transforms into a speakeasy-style gin bar. Sipsmith’s Jared Brown (featured in the October 2012 issue) worked with the Langham’s mixologist, Alex Kratena, to devise a menu that gives drinkers a quirky history lesson and showcases the complexity of Sipsmith Gin. The journey begins with the story of how gin was invented to save the citizens of London from their contaminated water supply, fizzes through Jean Jacob Schweppes’s invention of carbonation (five different levels for different digestive ailments), and ends with modern mixology. Those who don’t care for history lessons might be swayed simply by the menu’s drink descriptions. The Gineveristic, for example, made with Langham tea-infused syrup, tastes of “Genever sexy citrus tea bubbles.” 1c Portland Place, 44/(20) 7636-000.     L’Archiduc is Brussels best loved venue for live jazz. This Art Deco cocktail bar is a favourite for Saturday night’s “After Shopping Jazz” and Sunday’s “Round About 5” live music. The club has been in existence since 1937 and under its current ownership since 1985. With its classic atmosphere, it’s like stepping back in time as you sink into one of the cozy benches. The well-stocked bar carries everything from whiskeys to champagnes but is best known for its cocktails. L’Archiduc is open from 5pm ‘til late’ (generally 5am), every night except Christmas Eve. Press the buzzer by the door to be admitted, order a champagne cocktail, pull up a chair by the grand piano, sit back and enjoy the music.

On weekday mornings, DoveCote offers a café-style breakfast, complete with authentic French pastries and espresso drinks served in the open lobby. Every other meal occurs in the actual restaurant, which stuns with soaring ceilings, whitewashed brick walls, and a palette of soft blue, gold, and gray that feels trés français indeed.

    Once a nondescript part of Stockholm’s center, Brunkebergstorg has been revitalized by the addition of two excellent new hotels (At Six and Hobo) and Tak, a rooftop bar with perhaps the best views you can see while enjoying an Aperol spritz or the house martini made with vodka, sake, and a touch of sherry. The panorama really is something special, taking in the whole of the city. One floor down is the restaurant where head chef Frida Ronge serves food that fuses Nordic ingredients and Japanese techniques, with dishes such as arctic char with daikon and grilled Swedish beef with yuzu kosho vinaigrette.

The new Adorn restaurant is now a big-night-out dining destination courtesy of chef Richie Farina’s creations that range from a perfectly prepared filet mignon to caviar and eggs. Upstairs, the 345 guest rooms—more than half are suites—feature understated grays and pale greens and come with deep soaking tubs and (if you ask) unimpeded views of Lake Michigan.
