    It may look a little like your childhood summer camp, but Phantom Ranch feels like the Ritz by the time you make it to the bottom of the Grand Canyon, whether by foot—a steep 10-mile hike—mule, or boat down the Colorado River. Set near a creek in the shade of a cottonwood grove, the lodge is the only property located beneath the rim of the canyon, making it an extremely popular destination. Book early; the concession uses a lottery system for reservations beginning 14 months in advance. There are two lodging options: log cabins that sleep up to 10 people and are furnished with cold water sinks and toilets (there are common shower facilities), and four dormitories—two each for men and women—that sleep 10 in five bunk beds. Linens are provided and, thankfully, all of the buildings have air-conditioning in the summer and heating in the winter. Also be sure to reserve meals ahead of time. Seating in the canteen is limited, and the steak and meat-stew dinners, served family style, are surprisingly tasty.

For those that are gluten free they have my favorite, the ahi burger wrapped in lettuce instead of a bun. I am sure the gluten-free option of a lettuce wrap is available for any of their burgers or hot dogs. Place your order and when it is ready they will call the name of the famous person, like Marilyn Monroe, that appears on your receipt. Like a 50’s diner, the food is served on a red cafeteria tray but believe me it doesn’t taste like cafeteria food. It is delicious! Burgers with a special sauce and spiked milkshakes for adults. While munching on your food occupy the kids with a game of mini-golf in the summer or ice skating in the winter, operated by CP Burger.

    One of the best ideas to ever come my way is the notion of the Breakfast Duo from Salvation Café at 44 Stanley. It’s meant to be for those people who can’t choose between all the awesome options available to them on the menu. Like me. So order locked in, I was extremely impressed with what arrived on my table: A seasonal fruit salad atop French toast accompanied by fresh cream and a berry coulis alongside eggs benedict. Game. Set. Match. I was totally sold on the delicious breakfast and at the end, because it was soooo good and even though the meal was huge, I was left wanting more!

    Located at the foot of Mount Parnassus, Delphi was the Pan-Hellenic site of the most famous oracle of ancient Greece. It was the center of the world during its time. Delphi lies in a lush, hidden valley surrounded by craggy mountains—a pastoral paradise that was home to the Temple of Apollo, the Pythian Games (precursor to today’s Olympics), the ancient theater at Delphi, and more. It is easy to see why this location was chosen as a sacred place for the gods. The town of Delphi itself is small and convenient with plenty of hotels and restaurants on the main street, but a bit touristy. For a more tranquil overnight base, try Arachova (population: 800), a few miles down the main road. Its beautiful terra-cotta topped houses cling to the side of the mountains and make it a pleasant summer and winter stopover.

    Tannersville’s Deer Mountain Inn looks more like a gigantic personal home than it does a hotel, but therein lies its charm. Set on 168 acres in the Catskills, the gorgeous property features six rooms in an Arts and Crafts-style summer home dating back to 1880, along with a couple of cottages for groups or those seeking extra space. Each room is individually decorated with details like big stone fireplaces, wood-paneled ceilings, and wainscoating, and most have lovely views of the surrounding lawn and forest. There’s no shortage of hiking trails on and around the property and the hotel can arrange bicycle rentals on request. For something a bit more relaxed, there’s a cozy game room with an antique pool table, and regular outdoor painting sessions for the artistically inclined.

    Sitting at the edge of Kenya’s capital city is Nairobi National Park. Kenya’s first national park is home to a huge range of wildlife, including buffalo, rhino, zebra, and lions. You can drive on your own around the park, or book a game drive with the Kenya Wildlife Service in advance. The best times to view the animals are at dawn or dusk; while away some of the time in between by heading to Ololo Lodge for lunch and a swim, or stay the night at Nairobi Tented Camp. Helping fund the park with tourism is more important now than ever: It is under pressure from developers, and there have been a number of incidents involving wildlife straying into nearby farmland, due to the encroachment of humans on the animals’ habitats in recent years.

There are usually a couple of equally tasty dishes for vegetarians, also created using ingredients sourced from farms around Berlin. The atmosphere is generally quiet and pleasantly refined.

    When planning a recent trip to Guatemala, I luckily stumbled upon the webpage of a unique retreat on the shores of Lake Petén Itzá, called Ni’tun. My friend Joan and I had decided to visit Tikal and other Mayan sites in Petén and wanted to have a “home base” where we could stay for several days and take day trips around the region. Reading about Ni’tun, I realized we found exactly what we were looking for - a peaceful lodge in natural surroundings. Lorena, one of the co-owners, arranged all details of our day tours for us, communicating regularly by email prior to our arrival. We expected a peaceful, natural retreat, and were not disappointed. Set on a hillside with its own private dock and boat for transportation to Flores and other towns around the lake, Ni’tun’s main building and the guest houses (casitas) were designed and built in traditional Mayan style. Our casita was spacious with two queen beds and outdoor seating. The two-story dining and bar area, pictured here, allows for outdoor dining and a relaxing place to enjoy drinks after a day of trekking through the jungle. Lorena, a talented chef, does most of the cooking, using organic, healthy ingredients, and she prepared one fabulous meal after another (vegetarian meals for me, and gluten-free for my friend Joan). We enjoyed premium Guatemalan rum -- Zacapa Centenario -- over ice (and learned: never use it as a mixer, it is one of the finest rums in the world). We left all stress behind the minute we arrived!
