A pioneer of the East Nashville restaurant scene, Margot McCormack created this stylish spot in a repurposed service station in the heart of East Nashville’s Five Points long before the area was considered a destination for fine dining. The Nashville native, who moved away for the Culinary Institute of America and a stint at restaurants in New York City, serves from her collection of mismatched china in a cozy space with copper pots hanging from exposed brick walls. After more than a decade, the restaurant remains a favorite for dinner and Sunday brunch. The menu changes daily, but entrées might include pan-roasted scallops with parsnip purée, baby carrots, and preserved lemon, or house-made fettuccine with butternut squash, walnuts, and goat cheese.

A private-island resort six minutes by boat off the coast of Antigua, Jumby Bay is one of the Caribbean’s top luxury, all-inclusive stays, and one of its most environmentally aware. A $28 million renovation in 2010, which included the addition of 28 suites and a first-ever spa, gave it all the digital-age essentials: 42-inch flat-screen TVs, iPod docking stations, Bose sound systems, free Wi-Fi. Yet its underlying spirit of environmental responsibility, highlighted by its hawksbill sea turtle preservation program and its banishment of wheeled vehicles except for golf carts and bicycles (every room comes with two bikes), continues to reign. Rosewood manages the resort, but it belongs to an association of island homeowners, some offering their properties for rent. So if, say, a 1,346-square-foot beach-view pool suite isn’t big enough, it is possible to do as celebs such as Hillary Swank, Jim Carey, and Paul McCartney have done and plop down up to $20,000 per night for a private villa or estate home. Couples can be perfectly content here, but it is especially attractive to families, who appreciate programs like the Rose Buds kids’ club.

The stationery shop Itoya resembles a museum, with its exquisite displays and handsome collection. The main shop on Chuo Dori has 12 floors of paper, stationery, pens, planners, and a café. The annex on the backstreet has seven floors of paints, colored pencils, notebooks, and more. Itoya is a great spot to pick up gifts for friends back home. It’s easy to find—just look for the giant red paper clip in front of the building.

Rurutu, located in the remote Austral Archipelago, is a magical land of migrating whales, abundant vegetation, limestone caves, and smiling faces. Accessed via Air Tahiti flights from Papeete five times per week, the car-free island is like no place else in French Polynesia. Comprised of a massive chunk of coral that was lifted up to form it, Rurutu has otherworldly topography – think sheer cliffs of pocked coral and giant caverns filled with ferns and stalactites. It is home to unique coral snorkeling, white-sand beaches, sacred marae, and fabulous biking (the island is very hilly). A continuous reef rings Rurutu (so there’s no lagoon), but despite the open ocean fronting it there are more beaches on Rurutu than most French Polynesia islands. The sand is also a bright white here and made from ground, bleached coral. Besides lounging on the beach, you can look for whales along the shores from roadside observation stations between July and October. Note, unlike the rest of French Polynesia, the Australs get really chilly between May and November and are best avoided during this time. From December to April you’ll find warmer temps, but it still isn’t hot enough for air-conditioning most of the year.

A beautiful drive through the mountainous west coast past the bayside city of Mayaguez opens up to windy roads lined with banana trees. Your destination is the coffee town of Maricao—a small, unassuming city that plays host to festivals, coffee tours, and aquaculture. Also the home to the hidden gem of Salto Curet waterfall. To get down to your starting point, a car with 4x4 is preferred but not always necessary (Going during the rainy season? Drive a truck or SUV). You’ll park in a vacant lot at the bottom of a hill and follow the trail over a river and up the mountain. You’ll eventually reach an abandoned ranger station; at that point you’ll turn left and trek up river. Just a short distance later is the isolated waterfall. Take a swim in the cool water, or hunt down the even smaller trail off to the left that takes you up the rocks to the higher and more roaring waterfall above. This is my most loved waterfall site. It’s secluded and never sees many guests at one time. Bring your camera and a waterproof bag, as it’s likely you will be caught in the rain. It is a rainforest, after all!

The Rosedeer Hotel is one of the first buildings you see in Wayne, sitting squat on a narrow piece of land between the railroad tracks and the hills behind. It looks like a movie set, and has been. Running Brave, Shanghai Noon, and In Cold Blood were shot here along with numerous commercials and music videos. A ten-gallon hat riddled with bullet holes wouldn’t look out of place. Don’t expect fancy cuisine—burgers are the norm, and if you want a steak, you’ll be delivered the meat and instructions on how to use the BBQ out back. But people don’t come for the food. Wayne is an authentic Western outpost, built before the road and at one time a thriving town, thanks to the nearby Rosedeer Coal Mine. People come in now for photo ops, for a chance to see one of the few remaining holdouts of the Wild West, and because the 100-year-old hotel and adjacent saloon are said to be haunted. But owner Fred Dayman, who was born and raised in the hotel, won’t talk about it. Book a room, if you dare, and find out for yourself.

One of the best ways to learn about a location is to go shopping. Head to the local markets to get a feel for what life is really like in a location. As I was visiting Ephesus ruins in Turkey, I made a stop at the Saturday Selcuk Market and was able to see the modern day life that goes on near the ancient ruins. The town sets up this large farmers market every Saturday, but it’s more than just produce. You’ll find a variety of clothes and other necessities. It’s Turkey’s version of an outdoor WallMart market! And this is no tourist market, you’ll be haggling for your bargains next to the locals. Walk around and interact with the vendors and be sure to purchase a bag or two of delicious fruit or nuts for snacks during the day. You can also wander into the many jewelry shops that surround the temporary market stalls or stop for a delicious lunch of mezes at any of the restaurants while you rest your feet. In the middle of a private courtyard in Hyderabad lies a workshop where several women sit at traditional looms. The women, who are all widows, weave intricate cotton-and-silk floral patterns by hand as part of the Suraiya weaving center. Suraiya Hassan Bose, 83, started the center out of her home a little over 27 years ago to revive local and regional weaves which have nearly died out since they’re very time consuming and still not very lucrative. At the center, visitors can watch the weaving process from spooling to the rythmic loom work that takes two people (one to guide the pattern from above and the other to pedal the loom and weave the threads.) It takes about a month to make a three-meter piece of fabric, but luckily the women at Suraiya earn a fixed wage regardless of whether the fabrics sell. The limited-edition Nikes and kiosk of independent magazines (Corpus, Out of Order, System) at this brilliantly edited multibrand boutique in the upper Marais recall the city’s renowned concept shop Colette. But its abundant natural light, and market-fresh, Scandinavian-influenced café make it a place of its own. Minimalist, rustic decor and sparsely furnished racks reinforce a feeling of calm. There’s so much to see at Montserrat, the picturesque mountain located a few hours outside of Barcelona. Nature lovers will enjoy the wide range of hikes while, non-sporty types can bask in the breathtaking views available from almost any vantage point. Take the two funiculars, Santa Cova and Saint Joan, to visit the corresponding difficult to reach chapels. With travel, plan to spend a whole day at Montserrat. Between the mountain, basilica, museum, and monastery. Food is available from several shops and cafeterias, but many visitors plan ahead with a picnic. On Sundays local vendors sell cheese and honey outside the monastery. Purchase a ToT or Trans Montserrat card in Barcelona, they include transportation and funicular rides to different parts of the mountain. The ticket is good for a certain length of time, no need to specify a specific day, so wait for nice weather. Barcelona’s transit system is very easy to use, but trains to and from the mountain can be busy. Arrive early to guarantee a seat for the two hour journey.

Though Barcelona is hardly the epicenter of paella (that would be to the south, in Valencia), this hands-on culinary workshop/dining experience offers a fine introduction to what’s arguably Spain’s most famous dish. Set in an appealingly hip Raval-area space featuring soaring ceilings, exposed brick walls, and industrial lighting, the class starts with a welcome glass of cava along with a brief overview of paella from founder Alex Betolaz and chef Alex Villar. Don an apron at your cooking station, but don’t expect anything too labor-intensive; ingredients are, for the most part, already prepared, though you will do a bit of chopping, pouring, and stirring. (You can book your paella preferences ahead of time, and vegetarian options are available.) Then you’ll gather around a long wood table and sample various Catalan specialties along with your paella (and there’s usually plenty of sharing going on). Choose from three different paella-making experiences, starting at €50/per person for two courses and going up to €85 for multiple courses plus unlimited wine.
