When Southern Ocean Lodge, the flagship property of Australian hotel brand Baillie Lodges, opened in 2008, it was Kangaroo Island’s first true luxury lodge, known for its cinematic spot atop grass-covered limestone cliffs, with curved guest suites facing the namesake seas. Surrounded on three sides by national parks, Southern Ocean Lodge connected travelers with Australia’s powerful natural landscapes. Then in early January 2020, wildfires consumed more than half of Kangaroo Island, reducing the ecological paradise to sandy hills and blackened branches. Southern Ocean Lodge was a casualty of the blaze.


As AFAR’s Katherine LaGrave reported in her feature on the island, rebuilding began in earnest in February 2022, with the goal of becoming more sustainable: “The new lodge will use 25 percent less energy than the original lodge, and diesel fuel consumption will be halved. There will be rainwater harvesting, reliance on a hybrid solar-and-battery system, and elevated boardwalks to minimize impact on the health of coastal plants. Smart landscaping will create a sort of buffer around the lodge.”



Along with the new sustainable choices, the lodge has replicated the footprint of the original property, with 25 guest rooms slightly reoriented to optimize sea views. A new ultra-premium suite, the Ocean Pavilion, has up to four bedrooms and bathrooms (or two separate suites) with an outdoor terrace and private pool. And the ever-popular main lodge still has a Great Room with a suspended fireplace and a deck with a plunge pool that juts toward the sea.

At this contemporary wine bar with an outdoor patio and bocce ball court, patrons can enjoy more than 100 wines from all over the world, along with a full menu devoted to locally sourced produce and ingredients. Vinoteca hosts a weekly live flamenco night; wine classes for small groups in the upstairs lounge; and happy hours with wine flight samples to support local nonprofit organizations and causes.

Casas del Bosque is an award-winning boutique winery just outside Casablanca where, besides tasting the vintages, you can also learn how to prune grapevines or even the basics of wine-making in one-day workshops. You can also tour the estate on bicycle, along with a picnic lunch. If you just want to walk through the vines, you’ll find everything at its prettiest in December and January. Tanino, the Casas del Bosque’s excellent restaurant, has a menu designed to showcase the wine.

The Palacio Duhau Park Hyatt is a true palace. Built by an English Argentine railway executive, this Tudor Revival mansion dates to the late 1800s. The Duhau family, which bought the property in the 1920s, added an additional neoclassical building modeled after Le Château du Marais outside Paris. The property sat empty for a few decades at the end of the 20th century until a local developer partnered with Hyatt to turn it into a hotel. After a $74 million renovation, they helped preserve much of the original artwork and red marble flooring, invigorating the once faded Belle Epoque elegance. A larger, sleek tower with modern guest facilities was also added.

The property today is a testament to the grandeur of the most European city in the Americas. There are crystal chandeliers, intricate ironwork, and travertine marble bathrooms. There’s a bar where one can indulge in cigars and brandy, after, of course, dining at one of several high-profile restaurants with wine cellars designed to impress even the most hard-core oenophile.

Who doesn’t need a pain killer once in a while? Take it in the form of a glass of wine from a pharmacy that is more than 100 years old, where the drugs were replaced by wine bottles in the glass-door cabinets. To accompany the wine, you can taste different Portuguese products or you can choose a plate with several types of sausage and cheese. The tables are made of old wine barrels and you can sit on some wooden benches.

Cibo Wine Bar is a contemporary take on an Italian winery, and presents 3,500 bottles of premium wines in a dramatic two-story wine room. The bar is located in South Beach’s South of Fifth area, and there is a second location in Coral Gables. Alongside selections from Tuscany and Piedmont, lesser-known vintages from Sicily, Umbria, Sardinia, Puglia, and many other provinces are available. Cibo is known for its “wine fairies,” who fly around the racks to select your bottle of choice.

A great relaxed wine bar with a wine happy hour which is extremely popular. There’s a nice wine selection which stretches beyond the bar’s namesake wine, a quirky interior atmosphere, and a very relaxed environment. This isn’t the type of wine bar you have to put a jacket on for, which makes it a perfect fit for Vesterbro and a huge hit among locals. Here is a museum dedicated to the art of photography and placed, um, picture perfectly for views of Stockholm. The museum building sits along the waterfront with a view of the Old Town (Gamla Stan) and the Tivoli Amusement Park. Exhibitions change throughout the year, but while I was there they had three exhibitions that were fabulously curated and equally compelling. The exhibitions are curated in Swedish and in English—plus the museum offers guided tours of the exhibitions. In addition to photography, the building has a gift shop full of photography books and prints. A bistro on the top floor looks out over the waterfront and offers weekend brunch, wine tasting events, concerts, and in the fall and spring they even turn the space into a dance club. If you are in Stockholm for a longer period and have an interest in improving your photography, they offer seminars and workshops by well-known professionals.

Part of the Auberge Resorts Collection, Solage is one of Calistoga’s top lodging options; the trio of overnight accommodations, spa, and Michelin-starred restaurant practically force guests to unwind and relax. The experience starts in the 89 studios and suites, which are built like stand-alone cabins and are furnished comfortably. Most have private patios; larger rooms and suites have private backyards (some even have sunken hot tubs); all have in-room showers lined with rocks that feel great on bare feet. With three geothermal pools, the on-site spa is second to none in the Napa Valley. The property’s signature treatment, dubbed the Mudslide, revolves around mineral-enriched mud that guests are encouraged to slather all over themselves and later incorporates a session in a soaking tub and time in a sound chair. Elsewhere on the property, at the Solbar restaurant, chef Massimo Falsini gives farm-fresh cooking a Mediterranean twist. The Monterey black cod in coconut-turmeric brodo is a crowd pleaser. Another must-order: the Macallan 18 butterscotch pudding, made with aged scotch.

Max’s Wine Dive asks, “Champagne and fried chicken? Why the hell not?!” which pretty much sums up their concept of pairing comfort foods with wine or champagne. This place gets packed at peak hours, yet the waiters stay attentive and friendly. If you want to experience Texas’s “classy comfort food movement,” Max’s is a great place to do it.

Wine is an integral part of life on the Dalmatian Coast, a region with many indigenous varietals; a visit to Dubrovnik shouldn’t go by without a glass of local wine. Tucked away on Palmotićeva Street off the main Stradun, D’Vino offers cozy interiors as well as atmospheric seating at tables set on the narrow thoroughfare outside. Try a glass of something new from the impressive selection of local producers—the knowledgeable staff can help guide you in choosing one. D’Vino features several tasting experiences that highlight the region’s star wines: the Konavle Valley’s refreshing Malvazija, potent Plavac Mali reds from the Pelješac Peninsula, and Korčula Island’s fruity Pošip whites. Pair the wines with a platter of prosciutto and Croatian cheeses for a wonderful welcome to Dubrovnik and its wine region.

This stone building, called the Mother-of-Water Fountain, is an old cistern where Lisbon locals used to fetch the water that flowed to the city along the monumental Águas Livres Aqueduct. Now, inside the cool walls, a wine bar has been constructed. Journalist and wine critic João Paulo Martins has selected the 300 labels stocked in the wine cellar (some stored in bottles along the stone chutes that used to rush with water). Small plate selections like carpaccio, seafood, cheeses, and different kinds of cold cuts can be ordered to accompany your wine. During happy hour, between 6 and 8:30 p.m., several wines are available by the glass or in curated flights.

Hotel La Compañia del Valle, a Tuscan retreat–inspired hotel in Panama, is home to just 70 rooms and suites and an 18,000-square-foot Elysium Spa, which opens in July 2025. Of course, massages and other body treatments are on the menu, but other unexpected additions—like chocolate and wine therapy, underground Roman baths, and Reiki healing—allow you to design your ideal day.

If you are in the San Lorenzo market area around lunchtime, this little enoteca (wine bar) with its old-fashioned, wood-paneled interior is a good place to stop off for a glass of wine and a sandwich or crostino. It’s usually standing room only, but the choice of wines is great and it’s got a buzzy, local feel to it. There’s a great, well-priced selection of wines to go too.
