    According to the Book of Deuteronomy, it was from Mount Nebo that Moses first saw the Promised Land. Today, the Moses Memorial Church sits next to a viewpoint offering a dramatic—and windy—opportunity to see for yourself what Moses saw. Information boards point you in the direction of Jericho, Bethlehem, and Jerusalem, and also remind you that you’re standing in the center of the Holy Land. After taking in the vistas, explore the church, which, though modern in style, was built over a 6th-century basilica and features some of the most charming and well-preserved mosaics in the country (the animals in the hunting and herding scenes are particularly delightful). Below the church, a small museum excellently describes the history of the surrounding site.

    Don’t let the name or menu fool you. This is neither a bakery nor the wings and burgers joint the menu might have you think. Rather, it’s a lively bar in the otherwise quiet city of Launceston that attracts vegans and meat eaters alike. Vegans and “vegos” come for the shrub burger (with fried pumpkin, eggplant, and vegan lemon aioli) or the veggie enchiladas. Carnivores swear by the “sanga” (sandwich) with slow-roasted pork shoulder doused in whiskey barbecue sauce and topped with coleslaw and apple peach chutney. An Aussie craft beer or Baileys and butterscotch espresso martini on the side patio, strung with faux ivy, isn’t too shabby either. The best times are had on live music and DJ nights, when the bar buzzes late.

    One of Tasmania’s top tourist attractions is the crumbling ruins of a penal colony, now a UNESCO World Heritage Site. Visit the penitentiary, where 60 stone buildings remain, for a sobering glimpse into the brutal lives of the 12,500 convicts incarcerated here between 1830 and 1877. Visitors can also tour the Dockyard and Port Arthur gardens. There’s so much to see that a guided tour is recommended—especially the one that covers paranormal activity. (There’s also a lantern-lit ghost tour, for brave families only.)

    A lilliputian property on a busy Old Quarter street, Essence has an unassuming entrance that belies its stylish interiors. Renovated in 2017, the eight-story hotel’s intimate rooms are well-appointed with velvet headboards, lantern-like pendant lighting, and writing desks with laptops and reliable Wi-Fi—plus decent soundproofing to block out the Hanoi bustle. Turndown service includes flower petals sprinkled on the bed and towels folded into animal shapes (swans are a favorite). Fresh seasonal fruit such as mango, papaya, and pineapple and complimentary mini-bar snacks are restocked daily. Head downstairs to dine on updated Vietnamese specialties like spring rolls and bun cha (barbecue pork) or hit the town: The hotel is surrounded by jewelry and clothing shops, cafés, and bars.

    Mole Creek Karst National Park, along with the surrounding Tasmanian Wilderness World Heritage Area, offers subterranean streams and pools, plus at least 300 caves. At Marakoopa Cave, you’ll feel as though you’re in mother nature’s planetarium—the walls are lit up by Australia’s largest colony of glowworms. Caves like Honeycomb and Westmorland are best explored during a half- or full-day trip with Deb from Wild Cave Tours. Unlike most guides, she holds a PhD in speleology. But if one day is not enough, make it a wild caving weekend to progress from walking and wading to scrambling and squeezing through tight crevices. Local beer and wine await you at Mole Creek Guesthouse.

    The Review:
    Built in 1554 by the Order of Saint John to protect the fortified city of Senglea from invaders, this ancient fortress now serves as one of Malta’s finest hotels. Home to just 21 suites, the cavernous property offers some of the roomiest accommodations on the island, each outfitted with vaulted ceilings, Italian furniture and spacious bathrooms done up in marble and black tile. Some of the largest suites also boast lofted sleeping areas, deep-soaking bathtubs, kitchenettes, and terraces, but all feature attractive, minimalist décor that complements the building’s original stonework and explains why Cugó is a member of Design Hotels.

    The hotel, which opened in 2018, also has a gorgeous rooftop pool, around which yoga and Pilates classes are frequently held. When hunger strikes, book a table at on-site Hammett’s Macina Restaurant, where you can pair Mediterranean-inspired cuisine by award-winning chef Chris Hammett with a bottle of wine from the hotel’s extensive cellar.

    Continental’s downstairs bar—with a marble countertop and chilies, garlic, and aged ham hanging overhead—transports diners to Spain or Portugal. Despite the old-world ambience, however, the menu and staff are young and playful. Pop in for a meatball sub and vermouth at lunch, or enjoy king-crab-stuffed zucchini flowers before moving on to slow-roasted lamb in the upstairs bistro. In either case, complement your meal with something canned—the deli’s specialty— whether it’s the seafood plate of the day or a “Cosmopoli-tin” cocktail. A whole wall of canned and jarred concoctions are also available to take home. In 2018, a second, and larger, outpost of Continental Deli was opened in the CBD.

    This rustic barn turned tasting room, museum and shop highlights Tasmania‘s apple- and cider-producing heritage, while also serving as the home of Willie Smith’s Organic Cider and Charles Oats Distilling. It offers a delicious food menu, too, featuring the stars of southern Tasmanian produce (Huon cold-smoked salmon, Spring Bay mussels, Summer Hill bread) plus cider pairings. A hive of activity year-round, the Apple Shed really heats up in the Austral winter, when you can sip spiced cider (Willie Smith’s Original plus ginger, cinnamon, cardamom, and pimento) during live music on Fridays as well as the first Sunday of the month. Better yet, come for the Huon Valley Mid Winter Festival: a pagan-inspired weekend of music, merriment, and wassailing—scaring nasties out of the orchard to ensure a bumper autumn crop.

The relaxed vibe and plastic chairs make for an unusual place for a romantic dinner, but just add a sunset and a perfectly prepared lobster, and Cow Wreck becomes the romantic setting for any BVI beach date.     There are two entrances to this historical restaurant. The main entrance on the rue de l’Ancienne-Comedie and a “back” entrance that is part of a lovely passage called Le Passage de Cour de Commerce Saint-Andre. There are many passages still remaining in Paris [note, I am going to do a separate post on some of the ones we visited and will link to it when I do]. They are covered shopping areas that allowed the wealthy to shop unencumbered by the elements. Architecturally they are fantastic to visit and photograph, some have endured better than others. This passage was opened in 1735, and was built on part of the old wall of Paris, around the time of the King of France, Phlippe Auguste. This wall made up the limit of Paris during the Middle Ages! The entrance to this passage is at 128 Blvd St. Germain. No matter what door you enter, Le Procope is a great restaurant to experience a traditional (and yes, heavy) French meal. The menu has all the classics: coq au vin (chicken in wine sauce), entrecot (steak), magret de canard (duck breast); beouf tartare, as well as several fish selections. The starters are equally traditional with terrines, salades and escargot (snail), among others.

    One of the most stunning natural sites in Tasmania, the Freycinet Peninsula is most famous for a short but steep hike to the perfect white-and-turquoise horseshoe beach known as Wineglass Bay. It’s hard to believe the name comes from a gruesome whaling history that once dyed the bay the shade of red wine. Travelers on an expedition with Freycinet Adventures can kayak the electric-blue waters of Coles Bay and stay in a private camp on secluded Hazards Beach, where they’ll wake up to views of the rocky shoreline, sheathed in orange lichen, and the zigzagging Hazard Mountains, circled by sea eagles. No trip to the Freycinet Peninsula is complete without freshly shucked oysters from the Freycinet Marine Farm.

    Union Market is the perfect D.C. destination if you’re searching for a weekend brunch spot, craving a snack on your way to visit the Capitol, or, you know, hungry. Oyster bar, bakery, taqueria, soda shop, sandwich shop, Korean taco grill—all of the food is here waiting for you. The 47,000-square-foot space is a throwback to the original Union Terminal Market, which opened in 1931 with more than 700 produce, meat, fish, and dairy vendors in airy indoor stalls. The market moved to a warehouse in the 1960s and closed in the 1980s before reopening in 2012. When you’re finished stuffing your face, you can shop for home goods and vintage finds at shops like Little Leaf and Salt & Sundry.

    If money is no object, staying near the Marina in Singapore is a great choice. On one side you have the bizarrely mesmerizing Marina Bay Sands development, which includes a hotel, casino (note that the Chinese take their gambling very seriously), shops, a theater, a rooftop pool, a rooftop restaurant/bar/club (Cé La Vi), myriad celebrity-chef restaurants (try Daniel Boulud’s DB Bistro & Oyster Bar), and much more. Although MBS is fun to visit and certainly worth strolling through, you get more for your hotel money across the Marina at the Fullerton Bay Hotel.

    Yo, ho, ho and oh, my! Up on Government Hill, this watchtower, built circa 1678, is known as Blackbeard’s Castle and is literally the stuff of legends. Although it’s open for debate whether the notorious pirate ever used the five-story tower as a lookout, one thing is for certain: Its views are tops. Nearby the flower-lined 99 Steps (technically there are 103), built in the 18th century of ship-ballast brick, lead from historic Kongens Quarter to some more terrific views of the island.

    Set against a backdrop of lush jungle, this secluded luxury resort offers a mix of accommodations, from gorgeous villas with their own private plunge pools located right on the resort’s powdery white sands to overwater bungalows with traditional thatched roofs, large lagoon-facing decks, and deep soaking tubs. The resort sits on the mountainous, verdant island of Taha’a, off the coast of Raiatea, and is accessible only by speedboat or helicopter. Taha’a is also known as the vanilla island, renowned for producing some of the finest Tahitian vanilla in the world, and the hotel offers excursions out to local vanilla plantations as well as to pearl farms, where guests can learn how famous black Tahitian pearls are harvested. Marine conservation tours are also available, and the hotel can even arrange yacht rentals for guests on request. Cultural activities include weekly Polynesian-themed evenings, complete with a Tahitian buffet and local performers, such as traditional fire dancers.
