Meals vary greatly, so it’s up to you to browse the options and choose one that suits your needs, whether that’s pierogi the way your grandmother used to make them, or a sophisticated feast made by an aspiring chef in their own kitchen. Offerings also go beyond Polish food, as Eataway’s network of cooks includes expats like Mira from Korea and Sheuli from India, who prepare their national specialties extremely well. Besides the fact that the food is always delicious and authentic, it’s very reasonably priced—you can typically enjoy a three-course meal for around 50 to 130 Polish zlotys. As with Eaton’s Hong Kong location, the D.C. outpost—the first in the U.S.—fosters new ideas by providing private and communal working spaces, areas designed to inspire connection and conversation, and a regular calendar of programming.

    Those checking in among all this buzz can choose from five comfortable room categories, from cabins to suites. All have a “global nomad” vibe, with colorful textile accents, Himalayan salt lamps, and organic cotton-and-latex pillow-top mattresses, along with Grown Alchemist bath products, healthy mini-bars, Bluetooth speakers, and USB charge points. Some, like the Artist Studios, have wall canvases where you can leave your lasting mark. Just head to North Beach and Tony’s Pizza Napoletana, where chef-owner Tony Gemignani was the first American to win the title. Gemignani serves only 73 of the prize-winning Margherita pizzas a day, but the seven ovens in the kitchen make a broad selection of styles, including Sicilian, Roman, New York, St. Louis, and even a Detroit-style pie—a square pizza made with Wisconsin brick mozzarella cheese. To find Tony’s, either follow the scent of baking crust or look for the line of eager customers awaiting entry to the no-reservations corner eatery.

Francisco de Santiago, 46, is a full time tour guide, and also a former child chess champion and bullfighter (“that was many kilos ago”), orders a flight of artisanal mezcal samples at our first mezcalería of the evening, and instructs me on the proper way to taste the purest of agave drinks. “You spread the mescal on top of your hand, like this, then wait for the alcohol to evaporate, then smell it for citric, floral, or smoky tones.” After smelling, a sip, then another for good measure, you take a bite of orange slice dipped in crushed maguey worms and sea salt. After that, we dive into the city’s tacos and street food, beginning our night with two cups of esquite—boiled corn kernels mixed with lime, chili pepper, and mayonnaise, which we bought from a father-son team who have been working the same street corner for 22 years.
