Kyoja Noodle House
When a restaurant only has four items on its menu, chances are good it will be an expert at preparing them. Kyoja is one such establishment that specializes in kalguksu, mandu, bibim guksu, and konggsuku. The restaurant’s signature dish is kalguksu, a hearty chicken broth soup served with hand-cut noodles, minced meat, dumplings, and vegetables. Kongguksu is a cooling soup, perfect for summer, made of soy milk broth and nutrient-rich chlorella noodles. On the other end of the spectrum is guksu, a wheat noodle dish coated with spicy, red pepper paste. Lastly are the mandu, a basket of steamed dumplings stuffed with fresh pork and vegetables. It’s best to visit Kyoja with a friend or two, servings tend to be large and are optimal for sharing.
