    Feast your eyes upon the Francesinha. What is in this curious looking sandwich, you ask? Heaven. Sausage. Cheese. Port wine. Onions. And a bit more heaven. If you visit Porto - and why wouldn’t you visit the home of Port wine - you’ll come to know the Francesinha. How well you come to know this sammy has a direct correlation to how good of a time you have in this gem of a throwback European town. Restaurants throughout Porto claim that they were the first to invent this sammy or that they were the first to add foi gras or the first to serve it with prawns - none of that matters. All that is important is that you ear more than your fair share of one of the world’s sauciest culinary marvels. And that you do it with a pint of beer, and a glass of port nearby.

    In 2008, chef Olivier Roellinger stunned the culinary world by shuttering his famous three-Michelin-starred restaurant to focus on more relaxing endeavors. This was good news, however, for guests of Château Richeux, his picturesque hotel in St-Méloir-des-Ondes. Set on a cliff overlooking the sea, the 1920s villa offers views of Mont St-Michel across the bay, and a serene space where guests can completely unplug.

    Without TV or Wi-Fi, you must find entertainment in Château Richeux’s elegant, antique-strewn interiors and beautiful grounds, complete with terraced gardens and a blind for birders. Relax in one of 11 sophisticated rooms with ocean vistas, cozy up in an armchair with a hot toddy, or linger in the living room over a book about the region. Come dinnertime, book a table at the hotel’s singular Restaurant La Coquillage, where Chef Roellinger’s mastery is on full display in dishes of local seafood, produce, and spices. A breakfast of homemade pastries on the ocean terrace is another rare treat.

    To open this all-organic small-plates newcomer near Sé Cathedral, Chef António Galapito imported a caravan of culinary wizardry from the U.K.'s Taberna do Mercado (the London restaurant of Michelin-starred chef Nuno Mendes), including four members of the kitchen staff. The daily menu is an imaginative—challenging, at times—procession of flavor and fun. Standouts might include a charred purple broccoli with buckwheat in a tangy red pepper coulis; a black pork tenderloin with quinces and chocolate peppers; or a portobello mushroom ice cream with pearl barley, sea lettuce flakes, and pork-fat salted caramel (you read that right). Whatever’s on, it will surprise and dazzle even the most blasé of foodies while recalibrating your idea of what Portuguese cuisine is and can be.

    With its world famous pier, bustling beaches, and chill, but lively nightlife scene that draw eight million visitors annually, Santa Monica can feel a bit crowded in the summer high season. But not at Oceana Santa Monica. Set within the posh neighborhood of Wilshire Montana, the hotel is located across the street from Palisades Park, a peaceful municipal outdoor area dotted with fig and palm trees that runs alongside the Pacific Ocean.     Formerly known as the Oceana Beach Club Hotel, the property debuted in 2019 after it was purchased by Hilton’s upscale LXR brand and underwent a $25 million transformation. The 70 apartment-style guest rooms—most of which feature ocean views—are situated around a heart-shaped pool. Each suite has a separate living room and bedroom, Loro Piana bedding, large bathrooms, and walk-in closets. For even more space, there are two-bedroom suites with ensuite kitchens and balconies.The interior design is by Anna Busta of Busta Studio; expect moody blue couches and gold and wood design accents throughou the space that echo the Pacific Ocean.



    Though Santa Monica’s dynamic culinary scene sets a high bar, Oceana Santa Monica’s Sandpiper stands up. Seafood-forward menu items include chilled prawns served with summer melons, pan roasted sheepshead fish plated with littleneck clams, and chopped salads with asparagus, broccolini, and zucchini garnished with watermelon radish, corn, and red onions. Pair the meal with a house cocktail like the Stan Laurel (named after the actor of Laurel and Hardy fame who once called the Oceana home), composed of Empress gin, cointreau, lavender syrup, and lemon juice.

    Superstar chef José Avillez’s flagship dining destination is considered the country’s top restaurant. One of Lisbon’s Michelin two-starred affairs (the other is Alma) and fresh off a recent refurbishment, Belcanto is indeed the perfect place to enjoy Portugal’s rich bounty in the most wonderous, creative, and experimental of ways. The classic tasting menu (€165) nets you Avillez’s signature Garden of the Goose that Laid the Golden Eggs (egg, crunchy bread, and mushrooms), his most famous work of culinary art. More experimental is the Evolution menu (€185), where dishes such as sea bass with smoked avocado, pistachio oil, lime zest, and dashi push boundaries of tradition. It’s a tough choice, especially considering the classic menu ends with Avillez’s wicked cold citrus bomb of a dessert, Tangerine. Belcanto rang in at No. 42 on the coveted 2019 World’s 50 Best Restaurants list.

Inspired by Italian and Jewish traditions, the vibe is familial, and thoughtful attention is paid to each dish, drink, and decor detail. The best seats are at the bar next to the open kitchen, where you can watch the grilling, flipping, frying, chopping, baking, and plating. Don’t leave without dessert—the maple custard with a caramelized hazelnut crumble will transport you.

    Chef/owner Aaron Silverman’s farmhouse restaurant, in the heart of Barracks Row, serves creative (and Michelin-starred) cooking inspired by his travels and culinary training in the American South, Mexico, the Mediterranean, and Southeast Asia. Pork sausage and lychee salad is a menu mainstay; most other dishes are rotated out frequently to make way for “new stuff,” anything from grilled cucumber with coconut and anchovy to jumbo lump crab with squash blossom. Groups of six to 12 can make online reservations, all others should be prepared to wait a while. Line up before the 5 p.m. opening time to snag a seat at the counter facing the open kitchen and wood-burning stove.
  • Although the city of Jeonju has been famous throughout Korea for centuries, it’s still not a commonly known destination for Western visitors. Recently designated as a UNESCO world “city of gastronomy,” Jeonju is definitely worth a several-day stay, and it’s an easy couple-hour-train-ride from Seoul. In addition to savoring local culinary specialties and wandering the traditional ‘hanok'-house neighborhoods with their galleries and boutiques, check out the chess and go-players on the benches just outside of the Gyeonggijeon shrine, on the corner about a block to the east of the venerable Jeondong cathedral. “Jang-gi” is the Korean version of Chinese chess, and “Ba-duk” is the local name of the game more widely known as “Go.” On sultry summer evenings, grab an ice-cream (red bean and melon are popular flavors) from across the street and then check out these neighborhood ‘haraboji’ (‘grandfather,’ the respectful term for older men), engrossed in strategy on the sidewalk of one of Korea’s most traditional cities.

    For adventures in Old Strathcona, at the heart of Edmonton’s cultural, culinary, and nightlife scenes, book a night or three at the Euro-style Varscona Hotel on Whyte. Historic Old Strathcona is home to the iconic Stracona Railway Station (built in 1908), the Princess Theatre (the city’s oldest, built in 1915), and the Strathcona Hotel (built in 1891).     Long before the West was even wild, between the years 600 and 1450, an ancient group of peoples known as the Hohokam brought life to the Arizona desert with an intricate canal system. Parts of it are still in use today and, in addition to providing water for crops and sustenance, they serve as recreational spots. In downtown Scottsdale, the Arizona Canal runs through two of the area’s most popular districts—Scottsdale Waterfront and SouthBridge. Shop for fashion finds at Amy Inc. or sweet and sassy children’s threads from the Garage. Brunch at the Herb Box is a local favorite (red velvet pancakes!) and, around the corner, Culinary Dropout draws a trendy crowd with its gastro-pub fare and cocktail list. Art lovers should roam the Arizona Canal to take in the city’s free public installations, especially the Soleri Bridge and Plaza. A first from Italian architect Paolo Soleri, the structure marks annual solar events and evokes his fascination for planetary movement.

    At this luxury collection of six historic homes—some from the 16th century—guests can book a bedroom or an entire house, all within blocks of Santo Domingo’s most important attractions.     One of the newer boutique inns to emerge in the Catskills, this 11-room property is a gorgeous mix of old-fashioned elegance and urban styling. Guests can expect classic features such as stone fireplaces and sheepskin rugs along with a glorious hodgepodge of vintage sofas, Moroccan tiling, and framed butterflies. Rooms feature white walls and matching linens, with pops of color in the form of grass-green rugs, tufted velvet chairs, bright wallpaper, and serene, forest-inspired art prints. Just be aware that about half the rooms—specifically, those on the third floor of the old house—share common bathrooms. There’s also a cottage with three bedrooms and its own kitchen, where guests can bring their pets provided they let the owners know ahead of time. Don’t miss the Sunday brunch served in the intimate Bar Room—one of the inn’s owners is a chef by profession, and his culinary artistry gets consistently rave reviews.

That means about 2,700 crates (or 50-55 tons) of more than 100 species of the freshest catch from Australia, New Zealand, and the Pacific Islands is sold every single day. Simply browsing the stalls or downing fresh tiger prawns and Sydney rock oysters on the Pyrmont waterfront is satisfying, but there are more unique ways to discover the market, whether it’s through a cooking class at the Sydney Seafood School—the city’s oldest culinary institution—or a 6:40am behind-the-scenes tour. The latter is the best way to see the daily auction in action and learn about the market’s efforts to promote marine stewardship.
