An intimate gem whose only shortcoming (in some eyes) is that it does not sit on Pink Sands Beach, the Rock House Hotel & Restaurant was a labor of love for the late Wallace Tutt, an interior designer to the stars who was best known for designing Gianni Versace’s Miami mansion. Ten individually decorated rooms in the 1940s private home turned boutique hotel echo that property’s grandeur with king size beds and seaside motifs, as well as sumptuous linens and stone lion heads mounted on the walls in the restaurant. But the real story here is the service: There is always a picnic basket on-hand in every room, a library of games and books is available for perusal on rainy days, and the concierge is happy to arrange in-room pampering treatments if the walk to the neighboring spa feels like too much trouble.

Reachable only by boat, Puyuhuapi Lodge & Spa has incredible views of virgin forest, mountains, and water. Tucked into a small cove within cliffs of coral, the reefs are close to shore and offer lots of small hiding spaces in which to discover tropical sea life. Just watch out for the jellyfish. Youngsters will enjoy exploring the tidal pools formed by the many rocks. Forget to pack your snorkeling gear? No problem. Some visitors to Santa Fe are surprised to find this Gothic revival structure in the middle of all of the adobe buildings in the historic district, like a piece of medieval Paris transplanted to the Wild West. The French connection is real—the 19th-century Loretto Chapel was designed by a French architect who modeled it after La Sainte Chapelle in Paris. According to legend, though, the plans failed to include access from the chapel floor to the choir loft. So, the nuns who ran the girls’ school for which this stone structure was built began praying, and after nine days, a mysterious carpenter arrived. Neither nails nor glue nor any visible external support were used in this doubly-twisting staircase, and no one ever found out the name of the carpenter, who left without seeking payment. It must’ve been St. Joseph himself...so goes the legend of “the miraculous staircase.” The physics of the structure can be explained by architects today, but that doesn’t stop about a quarter-million visitors every year from marveling at the elegant spruce spiral. Open to the public as a privately run museum, the Loretto Chapel hasn’t been a church for decades. It can, however, be rented: a spectacular setting for a private wedding.

Mexican Independence is celebrated on the night of September 15 and throughout the day on September 16. On the night of the 15th there are celebrations called “El Grito” (the shout or cry of independence) that take place in the plazas and main squares of cities throughout the country. In Oaxaca people gather in the Zocalo and at 11 pm the governor comes out on the balcony of the Palacio de Gobierno and leads the shout, to which the crowd responds enthusiastically "¡Viva!” after each of his cheers. Following the grito, there are fireworks, and people wave flags, and throw confetti in an enthusiastic display of patriotic feeling.

If there’s a hub of the hubbub in Kennebunkport, it’s Dock Square, a colorful jumble of onetime fishing shacks that now house galleries, stores, and restaurants. Prowl through the shops to find unusual clothing, distinctive souvenirs, fine art, crafts, taffy and fudge, pottery, canvas bags, specialty foods, presents for pets, and, of course, the usual trinkets and T-shirts. Most of these spots are built on wharves over the tidal Kennebunk River, and it’s worth climbing to second-floor ones, such as Good Earth, for the water—or mudflat—views. The bridge connecting Dock Square to Kennebunk’s Lower Village offers another good vantage point, and the Clam Shack is one of the area’s best places to indulge in fried clams or a lobster roll.

No visit to Ambergris Caye is complete without an afternoon at the Palapa Bar. Situated at the end of a dock surrounded by turquoise waters and cool breezes, Palapa Bar attracts a mix of locals, travelers, and some of the coolest bartenders on the island. On a warm day, eschew the barstools and opt instead to float in inner tubes beside the dock; you can even have cold buckets of Belize’s Belikin beers lowered down to you. In addition to beer and standard cocktails, fun creations like Scotty’s Palapa Punch (three different types of rum, triple sec, mango, pineapple, and a squeeze of lime) offer some island-inspired refreshment. Up in the palapa, recommended items from the menu include sausage dip, pulled pork sandwiches, and the immense half-pound burger. Palapa Bar is 1.5 miles north of town and easily reached by golf cart, taxi, bicycle, or water taxi, which drops you right off at the dock.
