    If you’re in Oahu’s North Shore area, stop for lunch at Fumi’s Kahuku Shrimp truck — it’s the one with a mural of a gigantic, rearing shrimp. They’re not rock-bottom cheap, but you get a lot for your money; $13 gets you a plate piled high with fat, juicy shrimp dripping with garlic butter, two big scoops of rice, and a (skippable) salad. Seating is outdoor-only on plastic tables and chairs, but it’s probably the best option for these messy, delicious peel-and-eat shrimp. The pond where they farm their shrimp is right next to where the truck is parked, so you can’t get any fresher than that!

    A trip on Oahu’s windward side to the North Shore is not complete without a stop at the yellow Shrimp Shack. Two wonderful women operate this truck and serve up locally sourced fresh shrimp and other delicious food. As a warning, the meals are usually loaded with garlic and spice, but oh so wonderful. Instruction are painted on every yellow table top: “Suck, peel, dip, and EAT.” Drinks (and other convenience-store items) are available at Ching’s Store next door. The truck is bright yellow and impossible to miss on the North Shore. Be sure to stop in and say hi and indulge in some amazing spicy shrimp!

    Skillet started life as a food truck, and you’ll still see their mobile kitchen popping up around Seattle throughout the week (check their website for location info). But sometimes it’s easier to head to one of their permanent diners, where you know they’ll be in the same place day after day. The truck always offers their famous burger and poutine, along with rotating specials, but the restaurants have an expanded menu, including an excellent brunch. Locally roasted Fonte coffee is served while you wait, which is a good thing, as the line can be long (an hour or more on weekends for brunch). The dinner menu is hearty, rib-sticking comfort food like southern fried chicken or pork belly confit. If you see elk meatloaf on the menu, order it without hesitation — it’s out of this world.

    The meat pie is synonymous with Australia, and no place is more iconic in Sydney than Woolloomooloo’s Harry’s Cafe de Wheels. What started out as a simple stand turned into one of the first food trucks when local ordinances dictated that mobile food carts had to move at least 12 inches every day. There are now dozens of Harry’s around Sydney, each serving up their famous pies. “The Tiger” is the most well known: a pie topped with mashed potatoes, gravy, and mushy peas. There are no tables to speak of, but rather a counter attached to the truck. Thousands of celebrities, politicians, and locals have flocked to Harry’s for their pie fix. And the place is open until 2 a.m., making it a great late-night spot.

    This urban icon started as a hippie food truck housed in a surf shop parking lot on Vancouver Island. Chef Stefan Hartmann, who once ran a Michelin-starred restaurant in Berlin, now captains these elevated spots along with founder Jason Sussman. Expect nuanced options like chorizo-kale, pork al pastor with pineapple, and chicken with pickled vegetables, all on soft wheat tortillas for six to seven dollars. Also noteworthy are the meat-free dishes like “vegetable scrapple”—a delicious fritter of squash and chickpeas, topped with herbed tomatoes. And don’t overlook the octopus tostada—Tacofino not only sources seafood sustainably but also participates in Vancouver’s Climate Smart program and is working toward being a zero-waste business.

    Another food-truck-made-good in a permanent location, Molly Moon’s now has five locations around town, but still sends out its iconic baby-blue truck for special events — just follow your nose to the heavenly scent of their freshly made waffle cones. Flavors range from classics like vanilla bean and strawberry to local specialties like Theo Chocolate or Stumptown Coffee (pro tip: get those two swirled together), with more adventurous rotating seasonal flavors (current offerings include blackberry bergamot and watermelon mint sorbet). Locally sourced, organic ingredients are the emphasis here. They also have vegan options and pints to go, as well as plenty of merchandise featuring their goofy-cute pug mascot, Parker Posey.

Part of the Four Seasons Resort Oʻahu curator program, this serene early morning experience blends exercise, education and meditation, thanks to its leader Anu, a kahuna (shaman), and his band of merry watermen. “Too often modern life drowns out engagement with nature,” he explains. “We give too much time to our gizmos and forget the ocean can bring health and peace of mind.” Suitable for all levels of paddlers.

    After a day on the water, head to their restaurant. This surf-style restaurant elevates Hawaii’s food truck fare at the Four Seasons Resort Oʻahu at Ko Olina. Expect ahi poké, wild boar hot dogs and the coolest French fry innovation out there: a heaping platter of slender spuds topped with parmesan, cherry tomatoes and wilted arugula for that “it’s healthy, really” feeling! Wash it all down with kombucha on draft – with flavors like lychee or lilikoi (passionfruit) – or cocktails such as the Castaway, featuring melon vodka, coconut water and lime juice. Come prepared to lounge outside, as the Waterman wraps around the family pool and also serves its exclusive beach. Open 11am to 6pm.

In Wynwood, the areas most up-and-coming hub for art and nightlife, Gramps appears like a grungy truck stop on the orange dive exterior. Inside, the bar includes live music, stand-up comedy and games. The bar serves creative speciality cocktails with flavorful, fresh ingredients. Outside, there’s an expansive patio with graffiti, art, picnic tables and live sports broadcasts projected on the buildings exterior. The vibe here is totally relaxed and vibrant. The crowd consists of hipsters, artists and fashionable hippies.

Unconventional and highly flavorful topping combos like wasabi mayo, nori, bonito flakes, and sukiyaki beef make for a completely different experience. It’s not for everyone, but at about $5 each, the risk is minimal. No seating, as this is a food truck; look for it at the corner of 1st and Pike, very close to the Pike Place Market entrance.     Once just a popular food truck in a temporary locale, Charly’s now has its own permanent location on Tulum’s hip hotel strip. Its chefs have managed to take traditional Mexican meat-based dishes and turn them into 100-percent vegan recipes while still maintaining the classic flavors. Try the vegetarian version of an aguachile (seafood marinated in lime juice, onion, and chili) or a trio of tacos with your fillings and toppings of choice, like imitation carnitas, porkless crackling, or mushrooms. Best of all is the restaurant’s garden location, whose atmosphere of cool, beachy charm features shady trees and wicker lanterns.

    This unassuming little restaurant in a small strip-mall in a commercial neighborhood consistently rates as a local favorite for both the Hispanic and Caucasian populations here. It’s no frills— your meal will be served on paper plates; they serve beer but no other alcohol— but service is quick and efficient. Serving lunch and dinner, El Chubbie’s (as locals call it due to the generous portions) specialties are the homemade salsa bar, the carnitas, tamales and street tacos. Park City is not zoned to allow food trucks—this is the closest you’ll get to those freshly concocted eats.

    Ever heard of a bonut? Neither had we until we visited Biscuit Love, a cult-favorite breakfast spot in Nashville‘s happening Gulch neighborhood, where morning queues often exceed an hour on weekends. And bonuts—deep-fried biscuit dough slathered in lemon mascarpone and balanced on a sticky heap of blueberry compote—are just one of the many hits on the menu. The restaurant had its origins in 2012 as a food truck, where husband-and-wife team Karl and Sarah Worley’s made-from-scratch biscuits made them an overnight success. In January 2015, they opened a brick-and-mortar restaurant, where Karl mans the stoves and Sarah runs the front of the house, making sure patrons get their Southern classics while they’re hot. Be sure to order a bonut, along with the sweet-and-spicy Chronic Bacon, shrimp and grits, and the off-menu Nasty Princess, a biscuit topped with Nashville-style hot chicken, gravy, pickles, mustard, and honey.
