  • Bazaruto, Mozambique
    Two plane flights, plus a drive and you arrive to this tiny island off the coast of Mozambique in the Bazaruto Archipelago. The former Indigo Bay Hotel was the nicest accommodation on the island when it opened in 2001. In May 2014, the property was touched up and relaunched by Anantara, giving travelers a comfortable base to experience Bazaruto’s natural beauty and local culture. The hotel has its own in-house naturalist and a whip-smart, PADI-certified dive instructor who can take guests snorkeling and diving. The Bazaruto Archipelago has been a national park since 1971 and is home to more than 100 species of coral, four types of whales, sea turtles, mantarays, dolphins, and it boasts the largest population of the rare dugong on the African east coast. In addition to water activities, Anantara can arrange cooking classes, horse riding, dune boarding, and bird watching (Bazaruto is home to 180 species of birds).

    But this resort isn’t only for active types. It equally caters to sybarites who are seeking R&R in a remote place. The 44 villas are all spacious and many come with large outdoor patios with dining areas and plunge pools. A highlight is the spa, perched high above the property. Make sure to arrive early and save time after to truly enjoy the views. The resort works closely with the local community, many of whom are employed by the hotel. Guests can visit one of the local villages and observe some of the community projects Anantara helps fund. But the best way to get to know the locals is simply by interacting with the friendly staff.

    Guests at Anantara Bazaruto Resort can opt to explore this very different side of the island by sandboard (think snowboarding down sand dunes), safari Jeep, or on horseback. I went on a horseback ride up at sunset. The uphill was lovely, but going down a towering sand dune atop a horse is about as scary as dropping down a double black diamond run on skis. But my horse mastered the vertical drop expertly. More terrifying than the drop was the ride around the freshwater lake, which my guide said is inhabited by 12-foot long Nile crocodiles. Luckily the few we saw were snoozing far away.

His patisserie, Pascal, has several brances in Oslo city centre, the nicest one located in Henrik Ibsens gate. They serve lunch and dinner from 11am to 6.30pm, and the menu is filled with classics like eggs Benedict and Croque Monsieur. Tarts, macaroons and cakes are also served over the counter, and you can even order picnic hampers if the weather is nice and you’d rather have lunch in nearby Slottsparken. Pascal also hosts cookery and dessert making classes, so if you’ve always wanted to know how to make a Tarte Tatin, there is no need to look further.

Guests can choose between Le Restaurant, where a gorgeous fountain and hand-painted ceiling set the stage for authentic Moroccan fare, and the intimate, lantern-lit Les Trois Saveurs, which serves a sophisticated menu of French, Moroccan, and Asian dishes. Additionally, the hotel offers some of the city’s best cooking classes, which are open to outside guests. Led by a dada (a traditional Moroccan cook), the lessons take place either at the main hotel or the Country Club—a satellite property located 15 minutes away by complimentary shuttle, where students can also find a larger pool, lush gardens, a restaurant, and a bit of calm away from the bustle of the medina.

    Maison Collard’s claim to fame is a cookie so hard they have to print a warning on it. Legend has it, during the great siege of 1466, the people of Dinant were starving and had only two things at their disposal: flour and honey. They made these into dough and baked it. Later, they began to stamp patterns into the hard dough, with brassware found in their kitchens. In reality, there is little historical evidence to support the existence of the couque before the 18th century. Throughout the period, couques were decorated with depictions of important historic events. Although the tough dough is no longer kneaded by hand, the cookies are still pressed into hand-carved pear wood moulds. Popular shapes include animals, fruits, and scenes of Dinant. Nowadays, sugar and spices are also frequently added to the mix. Couques sold these days must be labeled with a warning advising people not to bite into the hard cookie. Instead, you are advised to dunk it in a beverage, to soften it, or break off a small piece and suck it. In fact, couques are traditionally given to babies to suck on while they are teething.     Maison Dandoy has been baking delicious treats in Brussels since 1829 and you’ll find their famous shops scattered around Brussels. Step inside, and you’ll be greeted by the sights and smells of crunchy biscuits (cookies) looking much as they have since the shop began. The beautiful packaging makes Dandoy cookies a great gift (even if it is for yourself). Be sure to try the traditional Speculaas (or Speculoos); a spicy, crunchy gingerbread cookie, popular throughout the lowlands. While the Dandoy shops can be found all over, only one is home to the Dandoy tearoom. In my opinion, it is well worth seeking out for arguably the best waffles in Belgium. There are two types of waffle here—Bruxelles (Brussels); rectangular and flaky and Liege; rounded and baked with sticky sugar. How best to eat a waffle in Belgium is hotly contested. Locals swear waffles should be topping-free. I however am a sucker for the stewed cherries and vanilla ice-cream. However you order yours, just don’t ask for a “Belgium Waffle.”

    Paradise Bakery has been opened since the 70’s. You might see a franchise in malls around America but this is the original and one of the only ones that serves ice cream. All their treats, muffins, cookies and brownies are scrumptious, especially the cream cheese brownie but I go for the ice cream. Homemade in a variety of flavors, the hardest part is choosing which flavor and whether you should get one scoop or two. Once you decide they top it off with a Chocolate Chip Cookie Munchier. If you ask nicely they will switch it out with a Black Diamond Cookie Munchier. They are also great for a quick bite to eat for breakfast. They have numerous muffin options, croissants and they make great breakfast sandwiches. Top it off with a cup for joe to get your morning started right.

    Fogo Island Inn sits at the very edge of the north Atlantic on isolated Fogo Island in Newfoundland. Designed by internationally renowned architect Todd Saunders, the inn’s arresting modern appearance is suggests an iceberg from a distance, with its raised section representing the island’s traditional stilted fishing platforms. A private 42-seat cinema, partnered with the National Film Board, carries a movie library for guests to enjoy at any time; there’s also an art gallery, a well-stocked library, and a supply of Gore-Tex hiking boots and other outdoor equipment to borrow. The inn shows off the dazzling landscape, and it’s easy to spend all day at the windows watching the sea while whales breech, icebergs float past, or storms dash on the rocks.
