It’s one of the hardest reservations to score in the country, but not just because of its diminutive size (22 seats in all) or limited days of operation (Wednesday to Saturday; dinner only). For one, the Catbird Seat feels both intimate and exclusive: Guests are seated at a U-shaped counter that surrounds a central open kitchen. Then, there’s the thrill of the unknown.

Strategic Hospitality, the Nashville-based restaurant group started by homegrown entrepreneurs Ben and Max Goldberg, has hired a roster of notable chefs for extended stints, giving them carte blanche to create whatever inspires them during their tenure. Among them: Trevor Moran, an alumnus of Noma in Copenhagen. Since January 2016, Chicago-born chef Ryan Poli (another Noma vet, who also trained at the French Laundry) has held the reins, calling upon influences from his two-year stint working in kitchens around the world. A couple of recent hits: an umami-rich black truffle risotto made with sunflower seeds instead of rice, and noodles made with nori and spiked with zesty yuzu.

Spending a day at a spa was something that never crossed my mind until I heard about the day spa at the Meritage Resort and Spa just outside Napa, California. I decided to give it a go and emerged a believer. Spa Terra is built in a cave under a vineyard behind the resort. The facilities are new, and everything seems perfectly tailored to make the guest feel comfortable. I loved hopping from the hot tub to the steam room and then back again. After relaxing with a cool glass of cucumber water, it was time for a massage, then a shower, and back into the hot tub, after which came wine-tasting in the adjacent Trinitas tasting room and time doing nothing at the outdoor pool. At the day spa, guests choose what they want to do when. Besides the massage appointment time, there is no schedule. I ended my day with a light meal from the resort’s cafe and an invigorating hike in the vineyards above the spa. As a busy writer, teacher, and mom, I felt like I could forget about my day-to-day concerns and just focus on being there in the moment.

Each of the 16 rooms at Copal Tree Lodge is a spacious villa-style suite set on the edge of the jungle, which gives a sense of privacy and peacefulness. Guests shouldn’t be surprised to see coatimundi, agouti, and other wildlife while showering in the spa-style bathrooms with their floor-to-ceiling windows. Tile floors, comfortable beds wrapped with gauzy mosquito nets, and private verandas are standard in every suite, as is Wi-Fi and complimentary laundry service, and the hotel has a pool and a restaurant/bar. The numerous outdoor activities include exploring Copal Tree Lodge’s chocolate trail and kayaking or canoeing on the Rio Grande River at the base of the property; various trips can be organized off-site, too. Shopping passages were built in the 19th century to give Parisians protection from muddy streets and horse-drawn vehicles. Galerie Vivienne is a beautiful restored 19th-century passage with entrances at the Rue des Petits-Champs, Rue de la Banque, and Rue Vivienne. Built in 1823 in a neoclassical Pompeian style that includes a gorgeous canopy and is decorated inside with mosaics, paintings, and sculptures, Galerie Vivienne’s most famous resident is the Jean-Paul Gaultier shop. Some passage entrances are easy to miss, so be on the lookout! A stroll through these fascinating galeries is a fun and free activity on a rainy day.

Terraced like the surrounding rice paddies, Soori Bali occupies an undeveloped stretch of fertile coastline roughly 25 minutes from Tabanan, a town northwest of Denpasar known for traditional farming and artisan crafts. The resort’s modern design plays on the shapes, colors, and landscapes of the surrounding area and incorporates local stone. (At the recommendation of the surrounding village’s elder, the property also constructed 10 stone temples onsite within the property.) Outdoor spaces feature bright green trees and grasses along with infinity pools, while high ceilings, cool colors, and marble floors inside create a tranquil escape from the heat. The property’s spacious rooms and wood-slat shades give off an art-gallery vibe, and the reading-room lounge displays the works of the hotel’s artists in residence. Food is another big focus here, both at the resort’s three restaurants and in tours that explore rice cultivation, exotic ingredients found at the Kerambitan market, and the spices, cacao, and coffee from nearby Jatiluwih.

How often does a king’s car pick you up at the airport? Arrival at Heritage Suites begins with a vintage 1962 or 1968 Mercedes—one of which used to belong to the late King Norodom Sihanouk—before you’re promptly whisked off to a historic cream-colored building of soaring arches, mahogany columns, and wrought-iron balconies. With just 26 rooms (most of which are suites), the boutique hideaway is often so serene as to feel more like a royal’s private compound than a hotel—if a royal’s compound had its own high-end tour agency and one of the trendiest jazz bars in town. Rooms are spacious and surprisingly modern in style—all suites have a lush private garden, and top-tier rooms also have a private hot tub—and welcome drinks and canapés help guests immediately acclimate to the villa’s languid and decadent atmosphere. The sprawling saltwater pool and its umbrella-shaded sunbeds beckon at all hours (including for romantic candlelit dining), while the intimate spa offers yet another way to unwind in between temple excursions.

Best of all, the hotel gives back: It works closely with the Sala Baï Hotel and Restaurant School, training and hiring students from this school that works with underprivileged Cambodians, especially women, and offers guests opportunities to participate in activities with the school.

From the beautifully executed integration into the ocean environment, to the services and activities at your flip flopped feet, life’s stresses give way to island time the moment you arrive. Close enough to Lahaina town to skip a car rental, yet buffered from the distractions of the world, it’s a great balance in one location. The onsite restaurants are top notch, easily keeping your calorie intake therapeutic. The bars offer a wonderful mix of island cocktails to melt away any residual tension from your stand up paddle board lesson. The little bay on the south end of the resort is home to a healthy group of huge sea turtles, easy to paddle up to in a kayak or board. Walking everywhere is easy and entertaining. Whaler’s Village is just a mile up the beach on a paved path the takes you through some of the other resorts in the neighborhood. Rooms are crisp, spacious and have some ocean views. The resort is medium-sized so you don’t feel overwhelmed by the physical plant. Speaking of plants, there are hundreds of native flora dotting the grounds. Also wondering about are flocks of flamingos and penguins. The Hyatt is a first-class operation leaving you free to relax to your heart’s content.

While staying at the Romantik Hotel Vivenda Miranda overlooking the beach of Praia do Mos in Lagos, I gazed at this stunning beach many times. I don’t know how many photos I took of it. This is a long beach with golden sand, sparkling waters, and a couple of good Portuguese restaurants. During the Summer it is lively but not too overcrowded. At high tide, the beach may be less wide. Your hotel staff at the main desk will give you the low and high tides for your beach. People walk the cliffs and even traverse them down to the beach. I chose to go the long way around especially since lately you hear of rock slides in the area! The tranquil feel of this beach is a reward in itself. The area of Lagos and western Algarve is less developed as far as huge resorts and high rises. It is beautiful and in many spots untamed and one of my favorite areas of Portugal. Being in a busy Asian capital like Taipei can easily make your stress levels skyrocket, leaving you in need of a serene haven. With its futuristic interior (even the massage tables give off a soothing glow), AWAY Spa puts a fanciful spin on a spa experience that is literally “out of this world”. Driving around the southern roads in the North Island often lulls you into believing that this pocket of New Zealand is mostly rural farmland with more sheep than you could ever imagine. Once leaving the comfort of the Wairarapa wine region, it doesn’t take long for the rolling green hills, budding vineyards and gentle mountains to fade into something a bit more wild. Reminiscent of the volatile South Island, the winding ocean road that leads to the famous Cape Palliser Lighthouse is anything but calm. Frequently washed out from behemoth waves, you’ll witness a few groups of houses on a narrow road that barely pass for towns before heading on towards the lighthouse. Normally there is a large seal colony that inhabits these rough waters that will give you a show if you get too close. But don’t worry, you will smell them long before seeing them. Perched high on the rocks overlooking the turquoise rough waters, the lighthouse monitors the cape offering unparalleled views that remind you that this southernmost point of the North Island truly feels like the end of the world.

Since it was constructed at the top of Telegraph Hill in 1933, Coit Tower has been an integral part of San Francisco’s downtown skyline. Named after a 1920s patron to the city’s firefighters—but not designed to resemble a firehose, as the urban legend goes—Coit Tower’s observation deck will give you 360-degree views out over San Francisco, including the Bay Bridge, Alcatraz Island, and the Golden Gate Bridge. Entrance fees range from free (children four and under) to $7 (adult non-residents); visit the website for all prices. Prague’s centuries-old connection to music survived occupation by both the Germans and the Communists, so it’s fitting that those deep roots strike a chord at Aria Hotel Prague, where all of the rooms are named after famous composers or singers, from homegrown sons like Dvořák and Smetana to contemporary icons like the Beatles, Ella Fitzgerald, and Elvis Presley. Enjoying a hammam experience while traveling in Istanbul was at the top of my list, but it was hard to choose where to soak! After all, the ritual of Turkish bathing wasn’t one I was willing to just “leap” into; after stripping down to their bare essentials, bathers are soaked, washed and dried by same-sex attendants, typically in the sanctity of a mosque. But still, I didn’t want to pick just “anywhere” to get naked and clean. Luckily, I stumbled upon the refined, spotless, inspiring and simply gorgeous space at the Kilic Ali Pasa complex near the Istanbul Modern Museum. I couldn’t ask for a more swanky, special or amazing way to spend a relaxing afternoon, delving into Turkish tradition. Walk, cycle or people-watch along the shores of Elliott Bay, a downtown stretch known for its circusy flair and spectacular vistas. You can ride the Great Wheel or visit the beloved Seattle Aquarium, home to wolf eels, sea otters, and the world’s largest octopuses. Refuel with chowder from local favorite Ivar’s Acres of Clams, then hit the market’s 200 owner-operated shops, ranging from a radical book collection to the Northwest’s oldest magic store. Just don’t turn your back on the famous salmon-slinging fishmongers: They’ve been known to wallop selfie-photographers with a plastic decoy for yucks!

Opened in 2003, Carlisle Bay is set on a lush, isolated section of Antigua’s south coast and has a 21st-century design that feels more contemporary than Caribbean. With muted shades of grays, whites, and greens, the hotel projects an uncluttered, understated luxury. Its most remarked-on feature, though, is the way it appeals to both couples and families by keeping the two separate. Each group has its own cluster of rooms at its own end of the beach, and never the twain have to meet, except perhaps for lunch at Ottimo, the poolside Italian restaurant. The crescent of beach is tucked into a sheltered bay, so the waves seldom do more than whisper up onto the white sand, against a backdrop of forested hills. It’s all very restful, but the long list of free non-motorized watersports and the extensive kids’ club ensures everyone has plenty to do.
