When the Ritz-Carlton Dallas opened in 2007, it didn’t have to go far to find a star chef for its gourmet restaurant. Comfort food doesn’t have to be heavy and drowned in grease: just try pho, the light and flavorful Vietnamese soup that’s much loved by Seattleites. Than Brothers is the local chain, with locations all around town, but the Capitol Hill one is one of their longer-established restaurants. First-timers can start with the classic #1, medium-rare beef, before advancing to options such as tripe and tendon; chicken, meatball, and vegetarian choices are also available. The “small” bowl is a hearty, filling portion for about $5, and comes with their trademark cream puff, but add on a Vietnamese iced coffee or tea for an extra sugar-and-caffeine rush. As their menu notes, pho is particularly good when you’re feeling under the weather — Vietnam’s answer to chicken noodle soup, perhaps?

The Review:
Set along two miles of pristine Pacific coastline, this Spanish Colonial–style resort has a distinctly regal feel, which is only amplified by its perch high up on the coastal cliffs of northern Santa Barbara. The 358-room property—which includes 23 sprawling suites—joined the Ritz-Carlton portfolio of hotels in 2017, and the recent updates and enhancements can be felt throughout, including in the freshly remodeled main lobby, bar, and ocean-view terrace.

While there is plenty to do in Santa Barbara proper, guests may be inclined to stay put at the oasis that is the Bacara. With everything from a new, 42,000-square-foot spa and perfectly situated salt-water pools with ocean views, to five on-site restaurants and a robust schedule of daily activities for guests of all ages, you could easily spend an entire weekend lounging at this luxurious resort. It’s hard enough just leaving the rooms, all of which feature an outdoor patio or balcony, an ocean or garden view, addictively comfortable beds, deep-soaking tubs, and decor that feels both rustic and contemporary.

A beach-view breakfast at The Bistro is a must, as is a decadent dinner and cocktails at the property’s sleek steakhouse, Angel Oak. Enhance your stay with Club Lounge access and you really won’t have any reason to leave. The newly opened lounge includes light breakfast, lunch, afternoon tea, and evening hors d’oeuvres service, along with wine, beer, spirits, and non-alcoholic beverages.

The Review:
Set in the South Island’s Ahuriri Valley, on 6,000 pristine acres bordered on three sides by conservation parks, is your own slice of natural paradise. Opened in late 2018, The Lindis is a striking, contemporary lodge that blends into the landscape, with a sloping roof that mimics the mountain and river backdrop and, inside, floor-to-ceiling windows framing magnificent views.

There are just five rooms to choose from—two master options and three lodge suites, all with private indoor and outdoor lounge spaces, fluffy king beds, and gas fireplaces. (Master suites also have separate living rooms and oversized bathtubs.) Beyond the accommodations, there are endless activities to choose from, from horseback riding, fly fishing, and e-biking to eco- and buggy tours and spectacular stargazing. Fuel up for your adventures with the lodge’s refined, contemporary cuisine, crafted by house chefs using locally sourced ingredients—think South Island crayfish, foraged porcini mushrooms, and Wild Fiordland venison—and paired with fine New Zealand wines from the well-stocked cellar.

Come to this neighborhood corner establishment for the seafood, but don’t overlook the beef tartare, complemented by radish, nori, and ranch (and don’t be ashamed to order two if you’re with a party of three or more). Pricing is akin to the Ordinary, without that big brother’s fancy full experience, but it’s worth a visit for treats like tempura blowfish tails—bone-in adult lollypops of crispy, savory flavor, with lemon and spicy mayo on the side. Unconventional entrees like the smoked fish curry (amberjack one week, mackerel the next) with pumpkin and peanuts and hints of citrus, make each bite a pleasant and surprising adventure of textures and tastes. The tiny dining room gets packed quickly on weekends, and the residential setting means they still haven’t acquired a liquor license a year in, but the flavor is worth any sacrifice. The small but excellent wine list includes creative sparkling varietals, and the restaurant is one of a few places in town to serve Life Raft Treats desserts—don’t leave without a waffle-flavored ice cream in the shape of a small chicken leg, coated in toasted corn flakes, wrapping a frozen cream-filled chocolate wafer.

A stunning combination of rock formations, pristine beaches, sloping mountains, and the glittering East Vietnam Sea surround this dreamy resort—so it’s no surprise that many of its key activities revolve around nature. Depending on the season, scuba diving, mountain hiking, and sailing are big draws, but you can enjoy sunset cruises, kayaking, beach yoga, and early-morning fishing excursions with the chef any time of year. Excursions to Nha Trang, the countryside, the Cai River mud baths, and more can also be arranged, but there’s plenty on property to keep guests occupied—not least the spacious villas, many of which are set along the cliff tops or beach and feature private pools. The Six Senses brand (which also oversees a sister Vietnamese property in the Con Dao marine park) highlights wellness, holistic living, and sustainability, and you’ll find plenty of evidence of that here, from the local organic produce used in the restaurants and bars to the traditional therapies and integrated wellness programming offered at the spa. Other can’t-miss activities include a private dinner in the mountain-set wine cave and an aerial yoga session—but maybe not in that order.

On a hilltop perch overlooking 8,000 acres of grounds designed by famed landscape architect Frederick Law Olmsted, the Inn on Biltmore Estate’s 210 rooms and suites evoke traditional 19th-century manor houses, with dark mahogany beds and desks, billowing window treatments, and comfortable overstuffed chairs; book a room with a balcony to breathe fresh mountain air while appreciating views of rolling hills—or simply take in the vista from the hotel’s veranda. The formal dining room showcases seasonal specialties using estate-raised cattle and lamb, vegetables from the on-site garden, and wine from the property’s own winery, where you can participate in a free tasting, then ride back in a complimentary shuttle. If you’re looking for something more casual, the lobby lounge and library bar offer salads and sandwiches—and no dress code. With the serenity of the Chesapeake Bay at it’s doorstep the recently renovated colonial manor is easily one of the most beautiful resorts on the east coast, even serving as a filming location for the movie Wedding Crashers. Eschewing a grand lobby in favor of intimate nooks and hideaways, thoughtful design marries the Chesapeake Bay’s nautical heritage with modern touches throughout the inn. The spacious rooms are casually luxurious in calming shades of white and blue; when combined with Belmond’s unparalleled service makes for a truly relaxing getaway. Spend the day on the water with the resort’s fleet of Alerion yachts before sinking into a waterfront Adirondack chair with a glass of wine in hand to watch the sunset over the bay.

The Pestana Hotel Group has a knack for turning historical properties into luxe hotels; the Pousada de Lisboa is no exception. Situated on Lisbon’s grandest square, the Praça do Comércio, the 90-room property inhabits the elegant former home of the Ministry of Internal Administration. Furnishings combine clean, modern lines with ornate wall moulding and a neutral color scheme dominated by pale greens and whites. Choose one of the mezzanine rooms for views of São Jorge Castle; the high-ceilinged Suite Praça do Comércio offers sweeping vistas of the square and River Tagus from two large windows. The hotel’s RIB Beef & Wine restaurant caters to the expense account crowd, specializing in premium cuts of meat aged for 14, 28, or 60 days and served with a regional touch: Lodosa piquillo peppers. There’s also an indoor pool lined with loungers, and a spa offering a full range of treatments, including a body scrub inspired by the scents of Madeira and the Algarve.

A former 18th-century bishop’s palace in Korčula Old Town, this Relais & Châteaux property has been meticulously restored into an all-suite luxury hotel. Each of the five rooms is decorated along a different theme inspired by the Silk Road and the explorer Marco Polo, who is rumored to have been born on Korčula. The two-bedroom China Suite features low-slung furniture, red pillows, and a scene-stealer of a terrace with views across the town and coastline, while the one-bedroom Arabia Suite includes an all-white color scheme and intricately carved wood screens.

The hotel’s LD Spa specializes in Thai and Ayurvedic treatments, and the restaurant serves fresh, local seafood on a long terrace above the Old Town wall. The restaurant also produces three different olive oils from the groves around Korčula, and works with local partners to serve wines made from indigenous grapes like grk and pošip.

At Maui Brewing Co. in Kihei, visitors can take hour-long tours of the brewhouse, cellar, and packaging line, then adjourn to the tasting room with views of Haleakala and Molokini. There, they can sample beers, ciders, wines, and specialty cocktails while playing board games or simply taking in the vistas. Also on-site at the brewery is a restaurant with 36 craft and specialty beers on tap, plus a menu of burgers, fish tacos, and pizzas with MBC’s Bikini Blonde lager in the crust. Go for the live entertainment or the twice-daily happy hours, when you can enjoy steep discounts on house beers, classic cocktails, pizzas, and select appetizers.

Spending a day at a spa was something that never crossed my mind until I heard about the day spa at the Meritage Resort and Spa just outside Napa, California. I decided to give it a go and emerged a believer. Spa Terra is built in a cave under a vineyard behind the resort. The facilities are new, and everything seems perfectly tailored to make the guest feel comfortable. I loved hopping from the hot tub to the steam room and then back again. After relaxing with a cool glass of cucumber water, it was time for a massage, then a shower, and back into the hot tub, after which came wine-tasting in the adjacent Trinitas tasting room and time doing nothing at the outdoor pool. At the day spa, guests choose what they want to do when. Besides the massage appointment time, there is no schedule. I ended my day with a light meal from the resort’s cafe and an invigorating hike in the vineyards above the spa. As a busy writer, teacher, and mom, I felt like I could forget about my day-to-day concerns and just focus on being there in the moment.

Blue Heaven is a favorite in Key West—Jimmy Buffett even mentioned it in one of his famous beach tunes. The whimsical courtyard is filled with brightly colored tables and chairs, twinkly lights, foliage, and stray animals. The bar and restaurant is owned and operated by a husband and wife whose creative backgrounds in art and literature inspired the space. There’s a mini art gallery, a sandwich shop, and roaming roosters on the grounds. Once a boxing ring (with Ernest Hemingway as referee), the spot now pays tribute to the Caribbean, with bright accents and Cajun seasonings on the menu. Menu highlights include the scallops, which are locally celebrated, served with white wine and lemon butter with tomatoes, onions, mushrooms, and lots of garlic. Locals say the Key lime pie is one of the best in town.
