    Reykjavík’s Dill restaurant, run by chef Gunnar Karl Gíslason and sommelier Ólafur Örn Ólafsson, is the first venue in Iceland to win a coveted Michelin star. It specializes in New Nordic Cuisine, which means that the kitchen updates traditional dishes such as arctic char, pork belly, and lamb shanks in highly creative and ultradelicious ways—often pairing them with healthy ingredients like barley, berries, and kale. The restaurant is open four evenings a week, and the seven-course menu changes regularly based on availability of local ingredients. Food can be paired with a fabulous selection of champagnes and wines. It’s not the cheapest choice in town, but it is one of the best.

    Although you can find most cuisines in Berlin now, Jamaican food is nowhere near as ubiquitous as it is in, say, London, and it’s mostly relegated to shacks or pop-up stalls at festivals. Enter RosaCaleta, a full-service restaurant run by two transplants from Jamaica via New York who have created a perfect balance of traditional Jamaican dishes playfully reinvented for a European palate. White walls and a wood floor set the stage for a menu that includes oven-roasted pork fillet, fiery jerk guava chicken served with fluffy dumplings, and vegetarian dishes such as vegetable stews and lentil salads mixed with mango and ginger. The restaurant also has a superlative rum collection, used for an inspired cocktail list that is as fruit-filled as it is potent.

    The national sport of Bhutan is archery. Serious archery. These gentlemen (the Prince was a competitor before he became King) are so good they hit targets we couldn’t even see from the competitors end of the grounds. When they did well they would all do a little jig in celebration. Their equipment was extremely high tech in this tournament but we saw others with what looked like regular gym class style bows and arrows. When in Bhutan you will have no problem findng a tournament to watch - the archery grounds are near the center of town usually near the river.

    The Review:
    Off the Pacific coast of Panama, near the border with Costa Rica, floats a lush island that indigenous people dubbed Palenque, or “sanctuary.” Once home to an ancient, pre-Columbian community, the island stood empty for hundreds of years—save for the all the wildlife, birds, and flora—until Ben Loomis arrived. For five years, the architect and designer lived on site, sleeping in a hammock by night and getting to know the land by day. Eventually, he put both his background and love for nature to use by creating this private island resort, dedicated to the principles of sustainable luxury.

    There are just eight beachfront casitas and one Villa Estate on the 400-acre island, so privacy is a given. Each of the 650-square-foot casitas has direct beach access, an outdoor tub, organic bath products, daybeds and hammocks, artisan-made furnishings, and a mini-bar stocked with local juices, snacks, and beers. Standout amenities include binoculars, a yoga mat, and a meditation cushion, plus a water bottle to use around the resort; Wi-Fi is free, but “island speed.” In addition to the main beach that fronts the casitas, guests have access to six other sandy stretches, along with nature walking and hiking trails, a main infinity pool, a spa, and complimentary use of kayaks, snorkels, and paddleboards. Meals are full of fresh, sustainably sourced ingredients and vibrant Panamanian flavors; rates include three meals a day, along with snacks and non-alcoholic drinks. An Island Foraging experience brings you closer to the culinary process as you learn to fish using ancient techniques, pick goodies from the island’s orchards, and hunt for wild ingredients along rainforest trails. Off-island excursions like whale watching, island hopping, and more can also be arranged, but with the run of a place like this, it’ll be hard to leave.

    Located just off Main Street, the Washington School House Hotel eschews Park City’s typical rustic style for a pared-down, flea-market–chic aesthetic. Before being reimagined as a design-oriented inn in 2011, the 1889 building served as a schoolhouse for miners’ children and a dancehall for the local outpost of Veterans of Foreign Wars. Today, the interior is anything but traditional, from the whitewashed living room with 16-foot ceilings to the antique mirror and the white, lacquered antler chandelier. Outside, a heated pool sits on the hillside surrounded by aspens and boulders. There’s also a fire pit, fashioned from a steel Olympic torch from the 2002 Winter Games.

    Each of the guestrooms and suites is unique, though all feature reclaimed wood floors, crystal chandeliers, and tall windows. An artful collection of European antiques and vintage paintings adds a bohemian vibe, while white marble bathrooms offer heated floors, walk-in showers, clawfoot tubs, and period fixtures. Guests can also look forward to plush hooded robes and top-notch toiletries from Molton Brown.

It’s the city’s most visited tourist attraction, telling both the history and processes that have gone into making Ireland‘s most famous export. At the end of the tour, visitors are treated to a pint of the famed black stuff at the top-floor Gravity Bar with its panoramic views of the city’s skyline.

    No matter what kind of getaway you have in mind, you can find a guestroom to fit at Castle Hill Inn. Rooms in the main house vary in size and décor, but each is kitted out for romance with a fireplace, a king-sized bed, oversized tubs, and windows looking over the water and expanses of lawn. The airy Beach Houses, compactly outfitted with galley kitchens, sunny decks, ceiling fans, fireplaces, and curated shelves of books, cast a kind of never-leave spell.

    Among the neighborhood’s art-minded hotels, the Gladstone is the most interactive, with shows, classes, and ongoing events. The 37 rooms, all designed by local artists, have breathed new life into the 128-year-old icon, which filmmaker Christina Zeidler took over in 2003 and revitalized in 2005. The Victorian landmark, named for its avenue (in turn named after four-time Canadian Prime Minister William Gladstone), has been a gathering spot for over a century. And it was home to legendary Toronto characters like cowboy Hank Young, who became a fixture at the hotel as a country singer in 1961 and manned the hand-operated elevator from 2005 to 2009, and Peter Styles, former host of Karaoke Night, with applause sign in hand. The legend of Hank lives on in a framed photo in the stairwell en route to the second floor.

    The Gladstone continues to push the boundaries of community and culture with creative events like its educational workshop series, Get School’d, and its annual alternative design event, Come Up to My Room (CUTMR), which runs alongside the city’s Interior Design Show.     Every detail at this former farm has been carefully executed to highlight the spectacular setting, a nature preserve near Norway’s southwest coast. The hotel’s nine wood cabins hover atop metal rods discreetly drilled into boulders above the Valldøla River—the architects’ solution for securing hard-to-get government permits while leaving the land virtually untouched. Purposefully spare yet stylish, each is furnished with only a bed and a couple of lounge chairs next to a wall of glass that encourage quiet meditation on the beauty of the Valldal valley and snow-capped mountains beyond. The concept continues in the spa, which is perched on a bluff overlooking the river and features a small outdoor hot tub and glass-enclosed steam room. Meals are served at a long communal table in a renovated cow barn; though breakfasts are included (the smoked salmon is to die for), three-course dinners are extra but worth the splurge thanks to locally foraged and sourced ingredients such as reindeer steaks.

    There’s a reason this Punta Arenas picada (like pica, a term for venues where food is both good and inexpensive) is almost always teeming with locals. Since opening in 1932, the soda fountain has been serving up classics in ways residents and visitors agree is perfect. Patrons sing the praises of the banana milkshake and Roca’s choripanes, sandwiches with housemade sausage. The decor is far from fancy but then, so are the prices. (The entertaining banter between staff and customers about the latest soccer match is included free of charge.)

    Opened in 1880 as Canada‘s first natural history museum, the Redpath Museum has a charmingly old-school Victorian quality to it. The collection of artifacts assembled by intrepid explorers ranges from taxidermy and Egyptian mummies to geological samples and—one of its most prized possessions—a handwritten letter from Charles Darwin. The museum is located at the heart of McGill University, long one of Canada‘s most important institutions of higher learning. Most of the buildings on campus, all in a handsome gray stone on a lovely bit of green in downtown Montréal at the base of Mount Royal, date from the 19th and early 20th centuries.
