The 165-acre Springs Resort & Spa sits 1,000 feet above the Arenal Valley, higher than any other resort in the area and affording each one of its 47 polished-wood guest rooms commanding views of the Arenal Volcano and surrounding countryside. Impressive as those vistas are, the luxury resort’s biggest draw is its 28 mineral thermal pools, which wind through four lush acres. The setting is undeniably romantic—the resort was featured in an episode of The Bachelor—but families are welcome, with activities for kids of all ages. Club Rio, on the resort’s half-mile of river frontage, offers tubing, kayaking, mountain biking, and horseback riding; there’s also a wildlife preserve for rescued native animals, including monkeys, ocelots, jaguarundis, sloths, and a puma. Five restaurants (and five bars) mean there are plenty of options, from casual poolside dining to tasting-menu elegance.

Originally constructed in 1884, this narrow gauge railroad was an engineering feat of its time and one of the first attractions ever for early visitors to Colorado. Today, the restored railway is part of a great historic preservation effort, offering a two-mile ride between the small communities of Georgetown and Silver Plume during the summer. It is a fun, easy activity, great for families and a nice way to see the mountains. The Georgetown Loop Railroad is located just off Interstate-70 as you approach the Eisenhower Tunnel from Denver. Look for first class parlor cars, dinner trains, and holiday specials; purchase tickets online.

The meal, drinks, and bar car are only part of the experience. Getting to stand out on the viewing deck while perched over the rushing Arkansas River, then passing under the Royal Gorge Bridge, all while enjoying a pint of Fat Tire or Colorado wine ... well, it’s a pretty unique experience and the worth the money (from $39 coach adult tickets). Look for special events like murder mysteries, Santa Express, and, pictured above, the four-course dinner train with its extensive wine list, and the train’s own micro-brew, Royal Gorge Rogue. Season begins in early March.

Chef Alex Seidel is more than a chef, he is the farmer of most of the fresh food being served. On his 10-acre farm, he tends to herbs, fruits, vegetables, flowers, pigs and bees. With the addition of sheep in 2010, he created Colorado‘s first Artisanal Sheep Dairy and Creamery. The Carbonara, which is the only item consistently on the menu, is infused with his delicious cheese. The cavatelli pasta is also topped with crispy pork belly and a poached egg for you to crack and mix into the meal. The rest of the rustic menu rotates seasonally and is a favorite among foodies.

Nakameguro is a hip and trendy area with many restaurants and shops, especially under the train tracks in a complex called Kokashita. The Meguro River that runs through the residential area is lined with cherry trees for sakura-viewing in the spring. Small boutiques featuring local designers as well as imported clothes are concentrated in the Aobadai area between Nakameguro and Daikanyama. Nakameguro is also home to two of the city’s best pizza shops, Seirinkan and da ISA, and yakitori restaurants Iguchi and Toriyoshi. Popular coffee shops in the area include Onibus, Streamer, and Artless Craft Tea & Coffee.

The best time to hit the mineral-fed pools at Indian Springs is just before closing, right around 9:30 p.m. Grab a float noodle, place it behind your neck, float on your back in the 102-degree water, and look up at the stars. No matter how cold the air might be, you will immediately relax. The Calistoga resort has been offering guests a similar experience for more than 150 years, though recent renovations have modernized the offerings and brought a new level of luxury and sophistication. The main attractions are the pools: one for all ages and another only for adults. Elsewhere on the property, an expansive spa offers massages and mud treatments; a restaurant—dubbed Sam’s Social Club—serves healthy California cuisine along with house-brewed beer. Accommodations vary widely, ranging from two-room cabins and expansive one-bedroom suites to multi-room bungalows and full-scale houses. Once you’ve had your fill of shuffleboard and bocce, walk into downtown Calistoga to shop at the local boutiques, or take the short trail to the top of the hill for a stellar view of the north end of the Napa Valley. Don’t miss: Perhaps the most spiritual part of the Indian Springs experience is the Wishing Tree in front of the spa. Write your wish on a card and tie it to the tree with the hundreds of others already there.

A visit to Japan would not be complete without a soak in an onsen hot spring. A fun choice in Tokyo is the Oedo Monogatari Onsen on Odaiba island in Tokyo Bay. This is not a small, traditional onsen but a “super onsen,” with a variety of tubs for soaking, both indoors and out. Plan on spending at least half a day here. Rent a colorful cotton yukata and, between soaks in the hot water, peruse the food stalls offering yakitori, sushi, ramen, and udon. Massages, reflexology, and spa treatments are available. Or join the locals who nestle into a lounge chair for a post-soak nap.

The Upper Piney trail is about a 12-mile roundtrip hike through aspen and evergreen trees. You can cut it in half by turning around at the picturesque waterfall about 3 miles in. Beyond the falls the trail gets steeper the closer you get to Upper Piney Lake.

Being in nature is being in my happy place. The US’ National Parks provide plenty of unspoiled nature. The Rocky Mountain National Park is huge, beautiful and abundant with wild life. It’s a pleasure to go and make all your senses happy. If you have kids, it’s even better. Running in fresh air, checking out the wildlife is bliss for them. This particular shot was on the Trail Ridge Road. A portion of it was closed and this is as far as we could go by car.

Located in the chic, affluent area of Vitacura near Nueva Costanera, Europeo delivers a flawless fine dining experience in Santiago. The menu, overseen by executive chef Francisco Mandiola, incorporates European technique with seasonal ingredients. The dishes are perfectly seasoned and delicate. Try the spring tasting menu with dishes like tender spring vegetables with burrata cheese, or the unusual flavor combination of corn and octopus, all paired with top wines. The ambience is formal and they also put on a fabulous “executive” lunch that is very good price/quality ratio. Covering nearly ten miles over the sandstone slickrock just outside of Moab, this 4x4 route is considered one of the best in the region, if not the country. The best part? A half-mile spur from the one-way loop brings visitors to a cliff-edge overlooking the Colorado River. Along the trail, check out Mickey’s Hot Tub, a deep depression in the sandstone where 4x4s drive through, and sometimes get stuck. If you get out of the Jeep, you may also see fossils preserved in the lower Jurassic Sandstone (about 190 million years ago). The route can be done on your own but requires a high-clearance 4x4 vehicle. A number of commercial guide outfits based in Moab provide tours with a driver or allow visitors to rent ATV’s and attempt the trip themselves.

Most garden-lovers have heard of the Dutch tulip garden, Keukenhof, a few hours north of Belgium. Few, however, have heard of Belgium’s own wonderful spring tulip garden at Groot-Bijgaarden Castle. Also called Grand Bigard (in French), the castle gardens are home to 1.5 million spring bulbs, including tulips, hyacinths, crocus and daffodils. Parts of the castle are open to the public, during this time, and each room hosts a different flower display, such as an orchid exhibit in the chapel. Two large greenhouses, on the grounds, host exhibitions by local flower growers ranging from roses to lilies and even rare tropical blooms. It’s a paradise for garden-lovers and photographers alike. You can even purchase bulbs to take home and plant for yourself.

The chance to try Iron Chef Masaharu Morimoto’s first Pan-Asian restaurant is what brings most people to this Disney Springs spot, which opened in 2015. The menu blends flavors from China, Japan, Thailand, Singapore, South Korea, and Malaysia, while the decor impresses with a glass staircase, sparkling chandeliers, and a 270-foot-long bar. This is the kind of restaurant where sharing plates makes for the most satisfying meal, so come with a group and cover your table with Peking duck, sushi and sashimi, shumai dumplings, pad Thai noodles, and more. Just be sure to save room for the revelatory desserts, which range from Oreo tempura to house-made churros.

A trip to the Dogo Onsen, one of Japan‘s most notable hot spring bathhouses, is a must for any visitor to Matsuyama. The onsen’s winding hallways have been said to be inspiration for the award-winning animated film Spirited Away, and its history dates back more than a thousand years and even has a bathing room that was built especially for the emperor’s use. First-timers to an onsen should read up on etiquette before arriving. Visitors can choose a few different packages--the cheapest is entry to the large public bath, while the most expensive (which is still very reasonably priced) allows for a private relaxation room after you’ve experienced a more exclusive bathing room. Many hotels in the area provide yukata and geta (dressing gowns and traditional sandals) to wear while exploring the area and at the onsen.

The first in Fiji to introduce overwater bures (traditional huts made of wood and straw), adults-only Likuliku Lagoon Resort continues to set the standard for romantic luxury. At the all-inclusive property on Malolo Island, about 15 miles west of Viti Levu, couples who spring for one of those accommodations enjoy sun-bathed views over a sparkling marine reserve from the teak deck or oversized soaking tub; at night, fish are drawn to lights under the hut and are visible through glass panels inset in the floor.

Back on the beach and closer to the restaurant and two bars (one located on a small island in the lagoon), there are 35 beachfront bures, including 18 split-level deluxe bungalows that feature private plunge pools and secluded courtyards with outdoor showers. Activities like snorkeling, stand-up paddleboarding, kayaking, and sailing are complimentary; more adventurous types might also request arrangements for diving and fishing trips, island-hopping tours, sunset cruises, and visits to a local village.
