The Travel Corporation, today with 42 travel brands, including Red Carnation and Contiki, started in Africa, and it has been the Tollmans’ lifelong dream to open this lodge—a full-circle coming home story for the family and brand. International air travel will open to Botswana as of December 1, and travelers must present a negative COVID test taken within three days of arrival.

It may look a little like your childhood summer camp, but Phantom Ranch feels like the Ritz by the time you make it to the bottom of the Grand Canyon, whether by foot—a steep 10-mile hike—mule, or boat down the Colorado River. Set near a creek in the shade of a cottonwood grove, the lodge is the only property located beneath the rim of the canyon, making it an extremely popular destination. Book early; the concession uses a lottery system for reservations beginning 14 months in advance. There are two lodging options: log cabins that sleep up to 10 people and are furnished with cold water sinks and toilets (there are common shower facilities), and four dormitories—two each for men and women—that sleep 10 in five bunk beds. Linens are provided and, thankfully, all of the buildings have air-conditioning in the summer and heating in the winter. Also be sure to reserve meals ahead of time. Seating in the canteen is limited, and the steak and meat-stew dinners, served family style, are surprisingly tasty.

St Stephen’s Green is a welcome spot of calm and green set in a Georgian square in the centre of Dublin. At around 20 acres, it’s large enough to feel you have escaped the bustle, but not so large that you can’t easily return to the fray once you are ready. There are formal manicured lawns and gardens in the middle, a large lake to the north - good for swan-watching - a bandstand and play area, and plenty of benches and other picnic spots. St Stephen’s is probably not the sort of place you’d deliberately set out to visit, but chances are good you’ll end up there anyway: it’s just off Grafton Street (one of the main shopping streets), and near other attractions dotted around what is known as Georgian Dublin, such as Merrion Square and Leinster House (the seat of Irish parliament).

Drive down a country road in County Donegal toward the sea, and you’re likely to find miles of unspoiled golden beach – and if there are waves, the water might be filled with surfers. Pounded by the big swells of the Atlantic Ocean, the northwest of Ireland is one of the best surfing spots in Europe and surfers take to the waves year round, with the biggest swells during winter. The unofficial surf capital is Bundoran in south Donegal. The 3km beach at Rossnowlagh, 20km up the coast, is reliable for regular waves and home to one of the country’s first surf clubs. Further north in the county, there are more challenging surf spots at Dungloe, Dunfanaghy, Inishowen and Fanad Head. The Bridge Bar in Bundoran town is the ideal post-surfing recovery spot for bowls of creamy seafood chowder, pints of Guinness and a surf cam so you don’t miss any of the action on The Peak, or walk up the cliff road from Rossnowlagh beach to the Smuggler’s Inn for reviving post-surf refreshments.

Though it has a silly name, the Potato Head Beach Club on Seminyak beach is a cool spot to spend the day. A collage of antique 18th-century veranda shades surrounds an amphitheater-like space that contains a beach bar, a grassy lawn, and an infinity pool. Three additional restaurants (one homey, one Southeast Asian, one high-end) and a stellar concert lineup make Potato Head a destination, morning ‘til night. For decades, family-owned and family-run Santa Cruz Chili & Spice Co. has been providing flavors in Southern Arizona. There’s even a mini Western Museum...and of course, you can sample the sauces and salsas... The Santa Cruz valley, between Tucson and Nogales, is one of the oldest continually-farmed regions in the U.S.; for four thousand years, native peppers, beans, squash, cactus and corn have been cultivated, even here in the desert. Then, beginning in the 17th century, Spaniards introduced Mediterranean plants: grapes, figs, pomegranates, figs, quince...and cattle ranching. A small garden on the grounds of the Tumacácori mission across the road from the Santa Cruz Chili Co. still grows some of these heirloom crops. A visit to the mission and spice market make for a great afternoon or day trip from Tucson. Go south from Tucson on I-19 for about an hour. (Note: I-19 is marked in kilometers, not miles; quirky.) Take Exit 29, turn left, then turn north on the old highway, and you’ll see the big chile-pepper sign on the left, just before you get to Tumacácori mission National Historical Park. The store is closed on Sundays.
