    The Beaumont’s 1926 exterior isn’t altogether conventional. The curious, cubelike sculpture on the left-hand corner of the facade is the creation of one of Britain’s foremost artists. Antony Gormley is best known for creating works such as the “Angel of the North” in the English town of Gateshead, but on this occasion he agreed to create ROOM—an “inhabitable sculpture” with a luxury suite hidden inside—at the behest of his old friend Jeremy King.

    King, for those not familiar with London’s restaurant scene, is one half of Corbin & King. The pair have been working together for 30 years and have accrued a following at spots including the Wolseley, the Delaunay, Brasserie Zédel, and Colbert.

    It’s perhaps fitting, then, that the first thing guests encounter upon entering the Beaumont is a pair of double doors pointing the way to the Colony Grill Room and the American Bar. Both spaces are fitted with decadent walnut finishes, Art Deco artwork, and dim, atmospheric lighting. The look and feel recapture the glamour of America during the 1920s and 30s, and that theme pervades the hotel.

    The brainchild of miner James Thorpe, who bought the property in 1918 and also gave the property its name, Bishop’s Lodge lays claim to being New Mexico’s very first resort. And its history dates back even further, to the 1850s, when Jean Baptiste Lamy, a French missionary priest, became the bishop of the desert diocese—and made his home on a hill with views of the Jemez Mountains.

    The property has changed significantly since Lamy built his tiny Villa Pintoresca and adjoining chapel: It now spans 450 acres, has a spa and stables, tennis courts and an outdoor pool. And its newest owners, HRV Hotel Partners, who purchased the resort in August 2014, have plans for further expansion.

    Still, despite upgrades, this is definitely a Western-style ranch where you can hike, ride, and shoot—and cowboy boots are de rigueur.

The Four Seasons invested over $1.1 million in landscaping improvements, the Monte Vista Terrace, and other additional offerings like the Adventure Center and Chef’s Table. Originally a privately owned ranch, the property dates back to the early 1900s. Previous owners include Guestward Ho! authors Barbara and Bill Hooton (then, the estate was known as Rancho del Monte) and, between 1968 and 1992, Betty Egan, who gave the property its current name (a reflection of Santa Fe’s tagline: The Land of Enchantment). John Wayne and Jimmy Stewart are just two of its legendary guests.

    To get a feel for the real Dubai, there’s no better way than to book a tour with Frying Pan Adventures. Frying Pan was the first culinary tour outfit in Dubai, and their success is well deserved. Good Emirati food is difficult to find outside of homes, so the tour is worth doing for that chance alone. You’ll get to sample delectable treats: from succulent Persian kebabs and wonderful Egyptian pastries to baklava dripping with honey and piping hot flat bread straight from the oven. Arva’s walking tours (or air-conditioned vans, in the hotter months), will take you from food trucks to tiny Egyptian kitchens, from Iranian saffron rice to Emirati date-scented desserts. Make sure to book well in advance, especially in the winter months.

    For Michelin-starred chef Eric Frechon, opening a 110-seat restaurant in the heart of Paris‘s busiest train station (Gare St.-Lazare) was effectively a way to reconnect with his democratic, bistro past. The Bristol Hotel chef is an avowed proponent of no-fuss, simple food executed to perfection. He jumped at the chance to dedicate a space to his special brand of cooking when he was approached by the SNCF transport company to create a restaurant worthy of the station’s newly renovated image—a destination for transients and locals alike, open morning, noon, and night. Frechon stepped in to offer a wildly accessible, haute casual menu of French comfort classics in a gorgeous, lofty space that is equal parts café-bar and swish restaurant. In addition to the full menu, expect daily specials, a robust wine selection, and a standout dessert that will have you returning time and again: the Paris-Deauville, a sweet homage to Normandy, his birthplace, in the form of a caramelized, cold soufflé. The classic brasserie has experienced considerable decline in recent years, but with Lazare, Frechon revives the iconic lieu de vie with deft style.

    This three-mile beach, located near Frederiksted at the southwest end of St. Croix, is the longest in the U.S. Virgin Islands. Part of the 380-acre Sandy Point Wildlife Preserve, the beach is an important nesting area for the endangered leatherback turtle. Beach access is via a dirt road, open Saturdays and Sundays. The beach may be closed during turtle-nesting season, from March to August, so check with your hotel before you make the trek.

Off the rocky beach, you’ll find calm waters and two notable wrecks—a sunken tugboat and an 18th-century British troop ship—to explore. A popular anchorage, the beach also features a chic bar, making it a favorite of the yacht set.

    Consisting of 25 domes, EcoCamp was inspired by the round houses of ancient tribes that formerly inhabited the area now known as Torres del Paine National Park. There are three categories of domes, all made from green plastic with sheer windows. Standard domes feature twin or double beds and a shared, campsite-style bathroom. Standard domes don’t have central heating and can be nippy in the Patagonian climate. Superior domes have gas heaters and en suite bathrooms. The suite domes are similar to the superior rooms, but have wood-burning stoves (and the suite dome loft has two floors). Domes are connected by raised wooden walkways for minimal environmental impact. Communal meals and pre-excursion briefings take place in the central community dome.

    We hopped in a pick-up truck with a bench in the back (aka a Caribbean taxi) & headed toward Honeymoon Beach, St. John. I never would have discovered this hidden beach if it weren’t for the wonders of social media, but thank goodness I did, as it’s possibly the most pristine stretch of sand I’ve ever seen. After a short walk down a dirt road, we arrived at the beach - nearly empty, despite the fact that it was spring break season. Virgin Islands Ecotours has a small stand there where a $49 day pass gets you snorkeling equipment, kayaks, stand up paddle boards, floats & beach chairs. We grabbed a tandem sit-on-top kayak & headed out into the pristine blue water. We paddled up & down the shore, exploring the waters near Caneel Bay Resort, admiring beautiful 50′ sailboats, checking out the National Park Service Head Ranger’s house & beaching our boat on Saloman Beach, where a friendly hiker helped pull us in. Before long, I could feel my legs beginning to get sun burned (& oh did they burn!) under the strong Caribbean sun & we decided it was time for a swim. Decked out in our snorkel, masks, fins & lifejackets, we snorkeled over to some rocks, where we explored the coral reef hand-in-hand. We saw a lot of black & white fish & a few sting rays. We swam back to the beach & lounged for a while before heading back out to snorkel where we saw sea turtles!
