    An Aboriginal territory turned shipping port between the Rocks district and King Street Wharf has been transformed into a harborfront reserve, modeled after what the headland may have looked like before Europeans arrived. It’s a great area for a walk or a picnic as well as for special events. And the surrounding area is home to dozens of new bars and restaurants. The seafood-centric Cirrus is run by the award-winning Bentley Restaurant team, and 12-Micron celebrates Australian produce through a menu organized around the elements. Early birds flock to cult favorites Micro by Coffee Alchemy and Bourke Street Bakery, while the after-work crowd unwinds at Sydney’s first vermouth bar, Banksii; the tropical rooftop Untied; and Smoke bar, on the top level of Barangaroo House.

    One of Maui’s best hikes, this trail climbs 800 feet through the lush Kipahulu area of Haleakala National Park. Half a mile from the visitor center, an overlook provides sweeping views of the gorge and the almost-200-foot-long “horsetail” of Makahiku Falls. Continue on past a sprawling banyan, stopping to marvel at the sunlight trickling through the dense bamboo forest. Here, you’ll also find the even more dramatic cascade of Waimoku Falls, which plunges 400 feet down a sheer-walled lava amphitheater. If you’re wary of tackling the four-mile round-trip hike by yourself, know that park rangers offer guided tours every Sunday at 10 a.m. Reservations are available at 9 a.m. a week ahead of time.

    A reservation is an absolute necessity at this very traditional and very popular Florentine trattoria. The white-tiled walls are hung with photographs and prints; hard wooden benches and tables run along the perimeter, and more tables are squeezed into the center. The menu is decidedly Tuscan with highlights like finocchiona (a fennel-flecked salami), slow-cooked beans, tortino di carciofi (artichoke in swirl of whipped eggs), and butter chicken, which is served sizzling in the pan. Save room for the house dessert: heaped layers of cream and meringue surrounded by tiny wild strawberries.

    Among the city’s coolest art spaces, Fonderie Darling is a giant – and I mean GIANT – industrial space-turned-contemporary art gallery. It’s a shining example of the type of architecture that existed in the area before the rapid gentrification. Divided into two halves, the space generally hosts one monumental work or series of works in the cavernous main area, and a smaller, more human-scaled exhibition in the second half. Fonderie Darling is also home to a dozen or so artist studios for artists-in-residence from around the world, which one can occasionally visit. Make an evening of it and reserve a table at the Fonderie’s restaurant, Le serpent, one of the hottest addresses in town.

    When it isn’t occupied by the Grands Ballets Canadiens or Opéra de Montréal, this largest concert hall in Montreal’s Place des Arts cultural complex has been known to host big musical names, including Maria Callas, Bob Dylan, Radiohead, Luciano Pavarotti and Ella Fitzgerald. The sound system is the utmost in refinement, and, combined with the cushy seats and hushed atmosphere, it makes for a sophisticated listening experience indeed. Half the fun is the opportunity to wander through the impressive 1960s building, punctuated by salons and bars for that ubiquitous intermission gin & tonic. Go ahead of time and reserve a table at one of the famous glassed-in restaurants on the Quartier des Spectacles, Brasserie T! or F Bar.

    On Jean-Talon near Parc Avenue in the rapidly gentrifying neighborhood between Mile End and Park Ex known as Mile Ex, Bar Le Ritz PDB is a large open space with a few tables by the big front windows (always open in summer afternoons so that the fun spills out into the street) and a warm, relaxed atmosphere. It’s better known as a show-bar than a hangout bar, though that is slowly changing with expanded opening hours and a wider range of drink options. Like most Montreal music clubs, anyone can reserve a spot to play here; but the average night tends to lean towards indie rock, post-punk, alternative pop sounds.

    Some say that Keller’s second restaurant in Yountville is even better than his flagship, the French Laundry. The rest of us may never know. But Bouchon is open until midnight seven days a week, and you can grab a seat at the bar without a reservation and spare yourself the theatrics of the more formal dining. Champagne, oysters, and French fries are a fine first course, and the bar also makes a mean martini.

    Bouchon is a Thomas Keller star (at a third the price of French Laundry). which serves unpretentious, French fare with a Keller twist. From Croque Madame to steak and roasted chicken, the kitchen puts out classical French bistro fare. Try sitting at the marble-topped bar with a Pastis in one hand and a spoon for mussels in the other. Not only is it quite affordable, but if you are lucky enough to snag an outdoor seat, you may also sit, Paris-style, all afternoon chatting with friends (and I dare you to resist walking into the Bouchon bakery two steps away to complete your meal- or grab a foie treat for your dog!).

    Located across the way from Half Moon Resort, Sugar Mill Restaurant is set on the grounds of an old plantation. Couples and small groups dine at candlelit tables either on a covered terrace or out on the lawn, and the splashing of the mill’s waterwheel and the chirping of crickets are an accompanying sound track to the top-notch service and Caribbean fusion menu. Order a bottle from the well-stocked wine cellar, visible as you enter the restaurant. For special occasions, a private table beside the waterwheel can be reserved.     Tacos. Traditionally Mexican. These days, however, tacos are taking on some new personalities. Though some of the most memorable flavors I’ve ever had on a corn tortilla are still traditional, (pickled onions, please) there are a few new taco flavors that thrill me. Blanco Tacos and Tequila in Scottsdale, Arizona, has created a taco with bbq pork, rich cream, and roasted corn. A nod to the taco’s Mexican heritage, with a hint of the American South.
  • The ire of Mount Kilauea reforges the world before visitors’ eyes. Nicknamed “the World’s Only Drive-In Volcano,” it’s produced serious lava every day since 1983 with no signs of stopping. Pele—the fire goddess who lives here, according to Hawaiian lore—is on a roll. Occasionally the lava flows spill into the sea, releasing stunning plumes of steam. Don’t miss the petroglyphs, lava tube, lush rain forest, and more than 150 miles of trail, including the four-mile Kilauea Iki loop. The drive here from Kona or Kohala can take two and a half hours, a bit of a long day, so consider reserving accommodations in the town of Volcano. You’ll have plenty of time to explore this otherworldly landscape, and even see the lava glowing in the dark!

    Named for Singapore’s highest point, the 163-meter-high (534-foot-high) Bukit Timah, the nature reserve of the same name encompasses 1.64 square kilometers (405 acres) of green in the middle of the city-state. Some 40 percent of the nation’s flora and fauna is represented here, including the greater racket-tailed drongo bird and the crab-eating macaque. An “ecological bridge” allows animal life to pass over an expressway to an adjacent reserve.

    If Torre Latinoamericana, whose construction was completed in 1956, looks familiar, it shouldn’t be hard to place the resemblance: this skyscraper, once Mexico City‘s tallest at just under 600 feet, looks quite a bit like New York City‘s Empire State Building. What makes the torre significant, other than that fun historical fact, is this: It has survived many earthquakes, including the devastating 1985 earthquake. As such, it is widely considered to be the first major skyscraper in the world to be built on active seismic land. From its mirador, or observatory, you can see for miles and miles, getting a true appreciation of the city’s vast expanse. You can also take some excellent photos of the Palacio de Bellas Artes, which is just across the street.
  • This dramatic two-tier waterfall, whose name translates as “Golden Falls,” a reference to the shimmering mist that sometimes appears around the falls, is one of Iceland’s most famous—which is saying something in a country abundant with waterfalls. Saved from oblivion during the 1920s (foreign investors wanted to dam the falls to create hydropower), the waterfall lies in a canyon on the Hvítá river and is backed by scenic snowcapped peaks. It’s possible to follow the falls as they flow downstream through the canyon, either via a walking trail or on a rafting trip, though it’s worth noting that the paths are wet and can be slippery. The visitor center has a canteen that serves up surprisingly tasty local dishes like lamb soup; there are also a gift shop and a local exhibition centered around traditional life in the area.

    Dutchman Dirk de Graaff left a demanding consulting position in Hong Kong to become a hotelier in Siem Reap, falling for Cambodia’s natural beauty, smiling residents, and laid-back way of life. He ran the first gay-friendly guesthouse in town before opening two hotels, a boutique hotel and the more upscale Rambutan Resort, a 16-room property, where he’s successfully re-created the traits that led him to the country in the first place. The simple but stylish rooms employ local, natural materials, with custom-made, chocolate-brown and white-flecked sugar-palm beds (of eco-friendly wood), brightly hued silk lamps, and private outdoor terrazzo soaking tubs. Modern Asian art—including comical pieces by Chinese artist Yue Minjun—adorns the walls. A lovely slate-and-stone tiled, tree-shaded pool anchors the property, its cascading water feature lending a meditative quality.

    And though Rambutan’s flair is more than enough reason to stay, it’s the exceedingly personable staff that makes it a true standout. Guests are welcomed like old friends (many are on return visits); the affable check-in crew and servers artfully walk the line between doing their jobs and making time for a chat. De Graaff invests in his team—providing scholarships to further their careers in hospitality, for instance—and their mutual affection for the place shows.
