Over the past seven years, 1 Hotels has proven that eco-conscious luxury can be successful in North American cities ranging from New York to West Hollywood. The 1 Hotel Toronto, in the center of town, is no exception. Architecture and design firm Rockwell Group partnered with the developer Athens Group for 1 Hotel’s first Canadian property, bringing in Toronto-based craftspeople to build custom dining and side tables out of local wood in the 112 biophilic guest rooms and public spaces, where native plants fill shelves. The hotel works with recycling partner Green Planet to convert leftover kitchen oil and grease into biofuel.

Behold Gandria! When my Airbnb host first suggested I visit Gandria I was a little unsure, mostly because of it’s name. But boy was she right, this little village navigable exclusively by foot was so picturesque and quiet. Roseau’s only oceanside dining option, the elegant Palisades pairs sweeping water views with one of Dominica’s best culinary experiences. Here, creative dishes showcase the island’s natural bounty, including produce sourced from local farms and fish straight from the Caribbean Sea. Start with dishes like BBQ jerk octopus and sesame-crusted tuna with a soy-chili dip. Then, move on to the lion fish, served with green-banana croquettes and mushroom sauce. Fancy something lighter? Try a lentil-black-bean cake or callaloo soup, made with baby taro leaves, coconut milk, yam, and green bananas.

The suburb of Rosebank has the best of both worlds: it’s home to major commercial hot spots, but it also boasts peaceful pockets of lush lanes. The understated Clico Boutique Hotel sits in one of the latter areas, but guests will be surprised to discover that it’s just a few minutes’ walk from some of the city’s liveliest eateries and shops.

Since opening in 2008, this boutique hotel has earned a reputation for its discretion (only a small sign signals the entrance), offering the type of service and privacy that attracts celebrity guests. Keep an eye out for abstract expressionist paintings by Robert DeNiro’s father, Robert DeNiro Sr., throughout the hotel.

When looking for an open-air, relaxing alternative to the crowded, bustling nightclubs, Aqua Lounge is the perfect solution, especially on a warm midsummer night. Sip on cocktails and gorge on Mediterranean/BBQ dishes on the elevated stools at the bar or in the cool white tents by the poolside. There is no entrance fee, but it’s best to make reservations because it fills up really quickly. You’ll find a really diverse crowd filled with locals, travelers, and expats. In a nutshell, Aqua is the sunbather’s heaven by daylight, and a classy diva’s playground by moonlight.
