It’s easy to see why Jade Mountain is consistently ranked St. Lucia’s most romantic hotel. The Gold Coast is a legendary surfing destination, and veteran surfers make pilgrimages from all over the world to catch these waves. Playa Grande is the granddaddy of all Costa Rican surfing beaches, and it doubles as a nesting ground for leatherback sea turtles. Other popular surf spots in the area are Playas Avellanas & Negra (where the 1994 surf classic The Endless Summer II was filmed), and Tamarindo. If you’re a beginner or novice and need lessons, Point Break Surf is a great option.

A local favorite, Handlebar J Restaurant and Saloon has been owned and operated by the Herndon family since 1975. There’s live music every night of the week—including The Herndon Brothers Band every Wednesday through Saturday—and free country-dancing lessons Wednesdays at 6:30 p.m. Still, one of the coolest things about the Handlebar is the collection of hats that hang from the rafters, placed there by all the cowboys who have moseyed through since the 1960s.

Salamander Resort & Spa has one of the best equestrian facilities in the U.S. Horse lovers can book a stay in one of the hotel’s 168 rooms, but the facilities are also open to the public. The 340-acre resort has a 22-stall stable and nine paddocks. Professional riders and former Olympic horsemen are amongst some of the instructors who give lessons and hold clinics. The Museo del Novecento (Museum of the 20th century) is a visual lesson in one century of Italian art history. Housed is the 1930s Palazzo dell’Arengario by Rationalist architects Piero Portaluppi and Giovanni Muzio. The Novecento also houses an amazing collection, Who’s Who of the 1900s, including Italians Balla, Modigliani, Boccioni, Martini, Morandi, and De Chirico and international artists like Picasso, Matisse, and Klee. In fact, the museum is considered one of the world’s most important collections of Italian and international 20th-century art in Italy—Futurism, Spatialism, and Arte Povera. Keep your eye out for Piero Manzoni’s clever Arte Povera pieces, Arturo Marini’s large stone figures, and Pellizza Da Volpedo’s monumental painting Il Quarto Stato (The Fourth Estate). Martini also did the palazzo’s exterior bas relief. Bonus: The upper level bar/restaurant overlooks Piazza del Duomo.

Voted “Best Waterpark in the Area for the Entire Family” by Chicago Parent in 2011, this water wonderland is fun for all ages. Parents can lounge around the pool, catching some rays in the sun, and the kids can romp around the Caribbean-themed park as they wish. The waterpark also offers swim lessons, birthday party packages, or the ability to rent the entire place for your own private event. And lest you or the little ones need a snack, the onsite concession stand will be more then happy to get you a little something to nibble on as you while away the hours of a summer afternoon.

Beneath the path of planes taking off from LAX is an oceanfront runway for beginner hang gliders to get some air of their own. Sign up for a full (seven flights for $140) or half lesson (four flights for $85) with Windsports, which has been operating with A-class instructors since 1974. The experienced Greg DeWolf, whose longest flight clocked in at 6.5 hours, is a recommended guide. His passion, thoroughness, and humor are just what a novice needs to feel comfortable and confident piloting this new flying contraption. Relaxing is key, and once you do, the flights are a calming enjoyable ride. Just make sure to look up so you remember the experience!

One of the world’s best beaches according to UNESCO, this beautiful palm-lined stretch of golden sand 40 minutes north of Punta Cana is known for its top-rated surf school and its oceanfront restaurants that serve delicious, Dominican-style fish plates. Catch some waves at one end of the beach, then swim in the calm water at the other, where fishing boats loaded with red snapper and lobster pull ashore. Mid-beach, you’ll find food and drink stands alongside activity concessions, from buggy rides in the dunes to stand-up paddleboarding, horseback riding, and surf lessons.

The most rugged, sketchy roads always seem to lead to the best surf breaks. This photo captures the early morning drive over the hill to Cerritos beach in Baja Mexico. Down below I discovered perfect, glassy rights and only a few early risers in the water. In the distance at the point is Hacienda Cerritos, a boutique hotel from which you can stumble out of bed and down to the surf. This lovely, nostalgic shop has been selling traditional Hawai‘ian designs—bright and botanically themed—alongside contemporary creations by owner Michael John Gillan for decades. The classic buy is a kapaeke (an heirloom quilted handbag), but you can pick up everything from USB-stick holders to kits that teach the craft. The oldest retail quilt company in Hawai‘i, it has catered to local royalty, as well as Hollywood stars, and pioneered the islands’ fabric-art tradition in Japan. Its instructors offer lessons and demonstrations at Waikiki’s Beach Walk every Tuesday from 10 a.m. to noon, as well as at the Big Island’s Queens’ Marketplace every Sunday from 1–3 p.m.

Lesser-known ski fields are often run by clubs and have the benefit of thinner crowds and the opportunity for skiers and boarders to glide and carve where others haven’t. Rainbow Ski Area near Nelson on the South Island is great for boarders and offers lessons from novice to expert. Further south, Porters Ski Area outside Christchurch features such runs as the appropriately named Big Mama and other trails that cater to intermediate and advanced riders. In the North Island, try the Manganui Ski Area on Mount Taranaki for cheap no-frills skiing (meaning no gear rentals on-site). And on the eastern side of Mount Ruapehu, there’s the friendly club-run Tukino ski field, which is often open when the rest of the mountain is shrouded in clouds.

Take advantage of southwest Florida’s beautiful weather and landscape by playing a round of golf at Coral Oakes Golf course. This 18-hole, Arthur Hills–designed, championship course includes large TifEagle greens, contoured fairways, eight lakes, and 37 bunkers. The course includes one of the largest practice facilities in the area, featuring a driving range with both grass and artificial turf, a chipping area and putting green. After the game, head to Knickers Pub for sandwiches, snacks, entrees and beer. Be sure to stop into the retail store and pro shop onsite with all the latest golf gear. For beginners, Coral Oaks has PGA professionals on staff to teach golf schools, clinics, and private lessons.

Take a riverboat up the Wailua—which translates as the “river of the great sacred spirit"—fed by the Mount Waialeale shield volcano, one of the wettest spots on the planet. Seven temples once stood along Hawaii’s longest and only navigable freshwater passage. Today, the remains of four are still visible, alongside petroglyphs and rocks where the island’s alii (royalty) would give birth. Stretch your legs at the stunning Fern Grotto: Verdant plants blanket the roof of the volcanic-rock cave there.
