Traditionalists will be happy to find “normal” flavors, too, but it’s Godby’s “march to your own drum” ethos that brings out his best work and keeps people lining up for creative scoops. Pan bagnat translates to “wet bread,” a less-than-appetizing name for a creation that people will wait in long lines to devour. One of the best versions is sold at a simple kiosk on the famous sandy Plage de Salis in Antibes. The sandwiches are so good here, they would tempt a swimsuit model on a strict diet to leave the Hôtel du Cap Eden Rock for a bite.

In terms of main dishes, the best way to sample what’s being offered is by getting the vegetable or meat thali—a daily selection of dishes and sides perfect for sharing. Other standouts include desi fries (French fries dusted with Indian spices), naan with roasted garlic, and fresh-baked cookies.

While guests may find it hard to take their eyes off the dazzling Caribbean, the 46-room boutique hotel’s interior design offers its own portal to the sublime with an aesthetic that can best be described as tropical eclectic. Guest rooms are painted sorbet yellow or robin’s-egg blue and feature white lacquer four-poster beds, mural panels by Haitian artist Jasmin Joseph, Venetian glass lamps, and sea-green marble bathroom vanities. All of this somehow swirls together for a look that’s both regal and untamed. A number of well-respected small rhum factories in Guadeloupe—including Boulogne, Damoiseau, and Bellevue—offer distillery tours year-round, and these are particularly interesting during the sugar cane harvest season between February and June. Domaine de Bellevue, in Marie-Galante, is a solid pick for a full educational experience. You’ll see the ancient sugar mill, learn about the eco-friendly distillery process, and taste various rhums (including one flavored with Ethiopian beans) as well as a traditional ti’ punch, Guadeloupe’s official cocktail. There’s on-site shopping as well in case you’d like to stock up for home.

For decades, they’ve been serving up the best classic sandwiches in Boulder at their three locations—a kiosk on Pearl St. in front of the courthouse, a shop at 26th and Pearl St. and one up on University Hill. They use all Boar’s Head meat, fresh baked bread, and wonderfully spicy chilis. In the morning, they do big sloppy egg sandwiches.

    Michael and I take the lead up a scree-choked stream draining from the Gangjam glacier. Two hours of climbing through talus brings us to ice-blue seracs rising like frozen waveforms from the mottled glacier. An hour further, in the cirque beneath the black wall of Kailash, we begin to sink up to our knees in sun-softened snow. Michael’s altimeter reads 17,500 feet, and above us, the mountain’s north face rises in a 4,000-foot vertical thrust of glazed rock, capped by a treacherous overhanging white cornice. Jaws gone slack, we lift our eyes in awe toward the Throne of Shiva. “How about it, bro? Break out the crampons?” “Jesus! I am not seeing a good route on that wall,” Michael replies, and we both laugh. Kailash remains one of the few legendary mountains on this planet left unclimbed—out of reverence. “And look at that freakin’ cornice!” Michael adds “Nevé ice for sure. Like frost on a windowpane. Won’t hold your points for shit.” There were rumors, nearly a decade ago, that the legendary Austrian mountaineer, Reinhold Messner had surreptitiously planned to bag Kailash, a task which he certainly had the skill and resources to accomplish. But when Messner saw the Precious Snow Mountain for himself, he realized what a desecration it would be to set crampons on its face or boots on its summit. He’s since become a vocal proponent of keeping Kailash off-limits to climbers in perpetuity.

    Monk’s Cafe bills itself as “the soul of Belgium in the heart of Philadelphia.” My description of this neighborhood bar would be a crazy, packed joint that happens to offer the best beer selection around. In fact, the back bar has one of the best selections of Belgian beers on draught in the U.S. Those who feel a bit overwhelmed by all the options can use the famous “Beer Bible” to choose just the right brew. The food is also very good, and Monk’s has received dozens of “Best of Philly” awards, including the best fries in the city. I can attest that they truly are the best: They’re served with bourbon mayonnaise, the perfect accompaniment. In true Belgian fashion, the mussels are a popular item. The menu also has a few vegetarian options, including an excellent veggie burger.
