    Secluded and service-oriented are the adjectives that best describe Rosewood Mayakoba, a resort in Playa del Carmen that opened in 2008. At 1,600 acres, the resort is expansive, offering plenty of room for guests to feel that they have their own space. Rooms, too, are spacious and have either tile or wooden floors, comfortable beds and chairs, and a layout and design that draws guests to outside spaces such as patios and balconies. The sense of privacy is reinforced by special en suite features, including private plunge pools, garden showers, and sundecks. Service, which includes butler, concierge, and valet support, is first-class. Staff can facilitate or organize a wide range of experiences, both on the hotel property and in the surrounding area.     The past two decades have seen the dozens of islands scattered across Boston Harbor transformed from barely noticed dots on the horizon to one of the city’s most popular attractions. The Boston Harbor Island National Recreation Area, established in 1996, has propelled them into prominence, with ferries carrying day-trippers and overnight campers from downtown Boston, Hingham, and Hull to eight of the islands (19 more are accessible by private boat or charter excursions). Most visitors head to Georges Island, home of the Civil War–era Fort Warren, or the beaches and hiking trails of Spectacle Island, the one closest to downtown Boston.     To succeed, a restaurant that opens in Honolulu usually has to cater to locals or derive its patrons from the ever-widening pool of visitors in Waikiki. Morimoto Asia Waikiki does both with great style. On a recent visit just before sunset, we left our car with the valet at the new Alohilani Resort across from Waikiki Beach and walked up the entry stairs to the second floor restaurant. The interior was unmistakably Chef Masaharu Morimoto. Spare yet elegant, open and inviting Morimoto Asia Waikiki welcomes the early set who may be dressed casually, to the dinner date or bar set who might want to dressy-it-up. Our table was what they call “outside”. Settling in on the covered lanai with beach and ocean views, we lingered over the drink menu. Would it be a Morimoto Sparkling Sake from the well-curated sake menu? A glass of chardonnay? An Asian Whiskey? A Morimoto Black Obi brew? We opted for cocktails with the help of our server‘s descriptions. I love Mai Tais and Morimoto Asia Waikiki calls their version a P.O.G. Tai in a nod to the Passion Fruit Orange Guava juice mixture so famous in Hawaii. They make theirs with fresh juices and with white and dark rums and a splash of Cointreau. It had just the right balance. My dinner companion tried a North Shore Mule made with premium vodka, passion fruit juice, kabosu (a citrus) juice and ginger beer. It was so incredibly refreshing and a perfect libation to toast the surfers riding the waves as the sun turned the sky orange and slipped below the ocean. Looking around the room, the clientèle were a mix of visitors, business people entertaining guests and a few locals, but it was early. We took a look another look at the menu as our server walked up again to deftly explain the nuances of each dish. The menu is built to share which is great because there are so many things you’ll want to taste. Chef Morimoto’s concept for this restaurant is a combination of Pan-Asian foods. You’ll find Chinese, Japanese, Thai and Korean style dishes and flavors along some Western twists to ingredients. Like the steamed “pancake” served with the Morimoto Peking Duck is more of a tortilla. And yes, in addition to the eclectic menu you can have a N.Y. Strip steak if you’d like. We ordered a Beef Carpaccio starter flavored with yuzu soy and ginger. It was one of the most tender and delicious I have ever tasted because it is made with Japanese Washugyu beef. Arriving at the exact time we were ready for it, the creamy Buri Bop was mixed at our table by our waiter. After enjoying that simple rice dish, the Morimoto Asia Waikiki signature dish, the Morimoto Peking Duck arrived. Succulent and tender, it’s served with apricot sweet chili sauce and hoisin miso by our waiter who assembles our first bites enveloped in a steamed pancake, table-side. There so many options to suit your own style and preferences. Two local ladies next to us made a meal out of Tonkatsu Ramen and Chicken Pho accompanied by their bottle of wine. Too stuffed for dessert we would have had the Almond Pudding with kuromitsu (black sugar syrup), tropical fruit and oshiruko (sweet bean) or the little filled doughnuts with whipped cream,or the choice of strawberry yuzu, coconut, or passion orange guava sorbets. But alas, we just couldn’t do it. Making our way out of Morimoto Asia Waikiki we noticed the restaurant was full and the bar was packed. The pleasant hum of people enjoying their experience filled the bar. Looks like the locals love this place too. Dinner reservations a must, open for dinner only. Note on Chef Morimoto. He began at age 24 in his native Japan hometown of Hiroshima, with his own restaurant. After learning the art of his sushi he moved to America which presented him with possibilities to expand his repertoire. In 1999 he became Food Network’s Iron Chef, his name and skills familiar to millions of Americans. After a stint at Nobu as Executive Chef he opened in Philly. Following he opened Wasabi in Mumbai and New Delhi. Morimoto New York followed. There are a string of Morimoto restaurants from Bangkok to Tokyo including his Morimoto Ramen and Sake. Dubai has opened a Morimoto Dubai and the new concept Momosan by Morimoto restaurant is also opening at Alohilani Resort for casual dining to include ramen, gyoza, yakitori and the Oahu North Shore island classic garlic shrimp.

    In an alley off Le Thanh Ton not far from Ben Thanh Market, this no-fuss, homestyle-cooking joint is a huge hit with locals as well as expats living in Saigon. The evocative decor on the two floors includes murals of Vietnamese street scenes and even a full tuk-tuk-style food truck used as a counter, while the upstairs feels more like a home. The restaurant, which promotes itself as “Mama’s kitchen with a twist” and uses clay pots, bamboo baskets, and coconut shells to serve some dishes, offers items such as peppercorn pork and sour-fish soup on its wide-ranging menu.

    The system of canals and chinampas (cultivated artificial islands fashioned from the area’s swampy soils) that has survived in the far-south neighborhood known as Xochilmilco once stretched all the way to the Centro. To this day, the community is known for its plant nurseries and vegetable gardens. These ancient landscapes now contribute to what has become one of the most singular pleasure gardens in the world, where visitors hire “gondoliers” to propel boats known as trajineras as they sail these channels in the company of floating mariachis and food vendors, partying teens, and extended families out for a picnic lunch. Since a tour is usually a four-hour-plus investment (it flies by), ask your oarsman to take you to Xochimilco’s more-rural precincts, where you’ll enjoy marvelous quiet, far from the madding crowd, in the company of cranes, curs, and picturesque cornfields.

A coral reef protects the beach and the resulting calm water offers shallow swimming for the little ones. The beach has everything you need, including a fruit and spice market, casual beachfront restaurants, and a nearby arts and crafts shopping mall. After sunset, it is illuminated until midnight and active families come for a cool night swim, beach volleyball, and street snacks. Food trucks come out for the night, serving up bokits (a kind of fried sandwich) and conch kebabs.

    You want locally sourced? The sourdough starter at this East Austin restaurant was made using wild grapes foraged from a nearby alley and a recipe from the Chez Panisse cookbook. That should tell you almost all you need to know about Dai Due. A butcher shop and restaurant (may as well throw bakery in there as well), Dai Due was started by Jesse Griffiths, a chef who had previously run a supper club and a stand at a farmers’ market. The restaurant offers quintessential Texas food. All the ingredients are local, or only from about as far away as the Gulf of Mexico, and Griffiths has the sense to do just enough to let the ingredients shine while staying out of their way. Beet-cured onions add zing and earthiness to a killer pastrami sandwich, honey shines up a pork chop, and pickled cabbage enlivens the huge beef rib.

    Famous for bringing the world the likes of Arrogant Bastard Ale, Stone Brewing is nothing if not cheeky. This is, after all, the first American craft brewer bold enough to open an outpost in Germany, a country steeped in beer-making tradition. But Stone’s audacity is hardly unfounded, as you’ll discover when you visit the company’s headquarters in Escondido—ideally, for a private tour and tasting. If you’re not already a fan of San Diego’s particularly hoppy style of IPAs, there will be at least one beer on tap that makes you a convert. But first, you’ll walk through the brew house—past mash kettles and whirlpools and fermenters—to learn all kinds of fun facts, whether it’s the surprise source of the chocolaty notes in Stone’s porters and stouts (mega-roasted malted barley) or what the upcycling options are for spent grains (cow feed and dog bones). Pro tip: After your tour, bypass the lovely indoor restaurant for the even lovelier outdoor gardens—all bamboo and koi ponds and hummingbirds. Sit back in an Adirondack chair with a beer (try one of the extra-innovative brews on offer only here) and warm pretzels with Stone Ripper Pale Ale beer cheese sauce.

    It’s an unforgettable experience: Getting up at the crack of dawn in mid-winter, walking through the large municipal park on the Pest side of town, checking in to the Széchenyi Thermal Bath (mostly with Hungarian pensioners because tourists usually arrive later), and slowly easing into one of its three large outdoor hot spring pools, surrounded by the golden yellow neo-Baroque palace—built in 1913 for the baths—while old men playing chess in the water. Then watch as the sun rises slowly, and your breath dissipates into the cold, crisp air. The spa has 15 indoor baths, too, as well as 10 saunas at various temperatures. This spa isn’t about being posh, it’s about easing into the kind of everyday self-care that Hungarians have known and avidly practiced for centuries. Just join them.

There’s a glorious mishmash of late-19th- and early-20th-century styles here, from Gothic revival to art deco. Walk by the Fairmont Peace Hotel—first opened in 1929 as the Cathay Hotel—to behold its copper pyramid roof turned aqua with age. (Talk about aging gracefully.) Then hit the marble-floored HSBC Building (No. 12) to admire the domed ceiling’s eight mosaic murals, with frescoes depicting the 12 zodiac signs.

    Opened in 2011, this luxury hotel from the Malta-based Corinthia brand occupies a Victorian building (once home to the Ministry of Defense) in the heart of the city, not far from Trafalgar Square, The National Gallery, the London Eye, and the theater district. The overall vibe is one of a 21st-century grand hotel, with a series of elegant public spaces—some vast and high-ceilinged, others warm and cozy—unfolding along the ground floor. Find modern, British-accented fare and a decadent breakfast spread at The Northall restaurant; all-day dining and a recently reimagined afternoon tea service (complete with Champagne trolley) at The Crystal Moon Lounge; and, in good weather, al fresco drinks, bites, and cigars at the leafy Garden Lounge. In summer 2018, the Bassoon Bar re-launched as a 1920s-era, New Orleans-inspired hangout, complete with a creative cocktail and bubbly menu developed by award-winning bartender Marcis Dzelzainis and wine expert Michael Sager. Shortly after, the hotel also opened Kerridge’s Bar and Grill, the first London restaurant from Michelin-starred chef Tom Kerridge.

    When it opened in December 1999, the Burj al Arab—a sail-shaped, all-suite skyscraper hotel built on an artificial island—put Dubai on the map as an over-the-top travel destination and became a landmark. Even today, the Burj al Arab sets the standard for outsized luxury with Rolls-Royce airport pickups, a helipad, gold-plated iPads, and butler-serviced duplex suites equipped with beds with mirrored ceilings, double Jacuzzi bathtubs, and full-size Hermès toiletries. The cool architectural exterior conceals a vivid interior with acres of gold leaf, dancing fountains, and room decor so distractingly jazzy that it may make guests feel as though they’ve drunk the world’s largest cup of Arabic coffee. (This is not the place for admirers of subtlety or minimalism.) The Terrace, an ambitious project even by Dubai standards, added nearly 2.5 acres of cabana, beach, pool, and restaurant space to the resort in 2016. Come sunset, though, the place to be is the 27th-floor Skyview bar.

    Why would a local visit a tourist attraction? Because Kualoa is a beautiful escape and a place to appreciate Hawaiian culture. Building sprees that began in the early 1900s spread across Hawaii with no concern for desecrating places of cultural significance or taro farmland, making it more remarkable that this land system running from the mountains to the sea, known as an ahupua’a, still exists. The Morgan family, descendants of Dr. Gerrit P. Judd, land-owner after King Kamehameha III, have diligently kept the integrity of the area intact while providing a financial base to preserve Kualoa’s 4000 acres on Oahu. Drive out to the ranch on your own or arrange a Waikiki pick-up, then take in a full or half-day of tours, a beach day, and dinner show. Kualoa Ranch has been a scene-stealer in many movies and a tour will drive you through some of the locations. If horseback riding is your thing, experienced wranglers can set you up on well-kept horses. While your gentle mount does all of the work, magnificent vistas will leave you breathless. For those preferring their horsepower with four tires, there are ATV rides or, a jungle expedition in a Pinzgauer up mountain trails stopping for a stunning view of Kane’ohe Bay, an 800-year-old fishpond and a tiny island called Mokoli’i. There are easy options like the garden tour and fishpond boat ride. Everyone will enjoy the authentic Hawaiian show featuring ancient dances about Kualoa while dining under the stars.
