Hilo-born Sheldon Simeon realized the appeal of his soulful, heritage-based cooking as a finalist on season 10 of Top Chef. Once back in Hawaii, he opened the upscale Lineage in Wailea, where he’s earned a loyal fan base for dishes like kimchi dip, fried turkey tail adobo, and squid luau with creamed taro leaf. Cocktails here are equally creative, ranging from a mai tai made with banana milk punch, Earl Grey tea, raisins, and coconut to a cucumber vodka number garnished with huli huli chicken skin. Whatever you order, be sure to pair it with the chili pepper water, a condiment and digestive aid that’s served in a take-home flask.

Larvotto is a small stretch of pebbles along the shore, and the country’s only beach. Gathered at Monaco’s extreme eastern border, it is the ideal spot to appreciate the Mediterranean. Paddle boards and kayaks are available for rent, while SkiVol offers inner tubing, water skiing or parasailing. It is a great place to snorkel, but insiders continue walking the Sentier Littoral into Roquebrune-Cap-Martin, France, following the pedestrian tunnel under the exclusive 1930’s Monte Carlo Beach Hotel to the tiny public beach and cement jetty, where there are no amenities, but plenty of peace and quiet. Port Royal, once known as the wickedest city on earth and the Sodom of the New World, revels in its pirate past. The once-great city, now a fishing port, was at its height in the 1600s, when numerous brothels and drinking establishments thrived on pirates’ plundered gold. In 1692, the effects of an earthquake submerged part of the port, a tragedy that has actually preserved the town from being torn down or built over. Entire buildings and streets are clearly visible just beneath the water. The town that remains on dry land offers visitors fascinating archaeological sites to explore, including fortified walls, cannons, and crumbling buildings.

Sunny days should be cherished, and Puerto Rico offers plenty of them. Beaches are wonderful when you’re seeking to escape the heat, but Old San Juan will have you embracing the rays and feeling just as wild and free. The whole family will have a blast running around the fields of El Morro, tirelessly trying to keep a cat- or airplane-shaped kite soaring through the air. At the Plaza del Quinto Centenario, where water shoots up from the ground in foamy jets, join the locals as they gather around to frolic and cool off.

Gialova Lagoon is a birder’s paradise, home to over 270 species on account of its shallow waters and abundance of fish and plants. It’s Greece‘s southernmost major wetland and the only place in Europe where you can see the African chameleon. The lagoon is part of the Natura 2000 network, a group of ecological important protected areas in the European Union. Between September and May is the best time to visit Gialova Lagoon, as fall and spring are migration periods and winter is great for spotting eagles, herons, and bitterns. For a guided experience on foot or by bike, Navarino Outdoors offers a variety of Gialova Lagoon tours.

Baden Powell Drive is the road running between Muizenberg and Gordon’s Bay along the False Bay shoreline. This route can be a nice alternative to the N2 highway when traveling East. To one side, you’ll marvel at the beautiful blue waters of False Bay. To the other, a view which will make your heart skip a beat as you catch a glimpse of the full extent of the vast population living in townships surrounding Cape Town. This route is safe during daylight hours and often has less traffic than the highway, but it’s not well lit and should not be taken at night.

You’ll be hard pressed to find it in any of the tourism literature, but just off Oostende’s bustling beach promenade is a tiny oasis of tranquillity. In the middle of the Konings Park is a beautiful Japanese Garden. The garden was created in the ‘Kaiyusschiki’ style and includes water features, bamboo, statues and a rock garden. Wander the winding paths or simply relax and enjoy the peace and quiet with your own personal moment of zen. The garden is free to the public but is only open on weekends. It’s well worth tearing yourself away from the beach to enjoy.

Even if you’re in Miami for a short amount of time, it’s important to get out on the water. Take a 90-minute sightseeing cruise departing from downtown Miami and you’ll cruise past Brickell Key, Fisher Island, and the stretch known as Millionaire’s Row on Miami Beach, as well as get a great view of the Miami skyline and the big cruise ships steaming out of the Port of Miami. The tour passes the homes of Shaquille O’Neal, Gloria Estefan, Julio Iglesias, and Al Capone, the house where Scarface was filmed, and more.

I realize that this is a highlight that may not even need words, since the image is so very convincing. If you find yourself exploring the Costa Brava (‘Rugged Coast’) of Spain, be sure not to miss the beach town of Calella and have lunch at the Hotel St. Roc to sample the local specialties and witness this view. Once you descend on foot from the Hotel St. Roc, you’ll start to see footpaths and stairs headed down to a few, beautifully quiet beaches. The water is clear, the swimming great, and siesta seems to never really end in that glorious sunshine.

Each wooden suite—spread out over the waters of a coral-lined lagoon—has a smartly designed sea-level sun deck, a deepwater pool, and a glass spy hole carved into the floor so you can watch the stingrays and reef sharks glide below. The property underwent massive renovations during 2019 after a fire ravaged the hotel, but it took the opportunity to expand and improve. The resort reopened with 45 luxury villas with furniture made from locally sourced materials.

Part of the Auberge Resorts Collection, Solage is one of Calistoga’s top lodging options; the trio of overnight accommodations, spa, and Michelin-starred restaurant practically force guests to unwind and relax. The experience starts in the 89 studios and suites, which are built like stand-alone cabins and are furnished comfortably. Most have private patios; larger rooms and suites have private backyards (some even have sunken hot tubs); all have in-room showers lined with rocks that feel great on bare feet. With three geothermal pools, the on-site spa is second to none in the Napa Valley. The property’s signature treatment, dubbed the Mudslide, revolves around mineral-enriched mud that guests are encouraged to slather all over themselves and later incorporates a session in a soaking tub and time in a sound chair. Elsewhere on the property, at the Solbar restaurant, chef Massimo Falsini gives farm-fresh cooking a Mediterranean twist. The Monterey black cod in coconut-turmeric brodo is a crowd pleaser. Another must-order: the Macallan 18 butterscotch pudding, made with aged scotch.

The Rex Hotel remains the most historic hotel in District 1. It’s undergone massive renovations since its heyday as a hangout for journalists during the war, including the addition of a luxury ground floor filled with pricey shopping. Skip that and head to the hotel’s rooftop bar. Some of my favorite memories have been talking to visitors who were here in the 1970s back to the setting of so many of their evenings. Everyone has told the same story- Saigon has changed but the roof remains frozen in time. The same kitschy elephant statues, stiff drinks, small steaks and the rotating golden crown illuminating the local Vietnamese band playing some pop love ballads. Located around the block from the neighborhood’s main hub, Sunset Junction, Silver Lake Pool & Inn is a quiet oasis in the walkable (yes, walkable . . . in L.A.), creative enclave of Silver Lake. There is never a dull moment at Covent Garden, a labyrinthine open space peppered with restaurants, vintage markets, craft stalls, and independent boutiques. There is festivity in the air. This is compounded by singers, magicians, and miscellaneous street artists performing at every corner. Explore the rich history of the area by visiting the London Transport Museum or the Royal Opera House. Pick up a unique gift at The Apple Market, which boasts of a variety of quirky craft stalls. For lunch, head to one of Leicester Square’s numerous al-fresco restaurants.

No matter what kind of getaway you have in mind, you can find a guestroom to fit at Castle Hill Inn. Rooms in the main house vary in size and décor, but each is kitted out for romance with a fireplace, a king-sized bed, oversized tubs, and windows looking over the water and expanses of lawn. The Turret Suite, a bi-level space, has a bedroom on the first level; on the top floor, a soaking tub on a raised floor takes advantage of the 320° wrap-around windows. Below the main house, the Harbor House’s modern guestrooms feature front-porch views of Newport Bridge and the hotel’s Grace Kelly Beach. At the far end of the 40-acre property, the Beach Cottages and Beach Houses are set along the private beach, offering views that take in both the mansions along Ocean Drive and the wild Atlantic itself. The cottages, slightly smaller and closer to the beach, have peaked ceilings with rafters. The airy Beach Houses, compactly outfitted with galley kitchens, sunny decks, ceiling fans, fireplaces, and curated shelves of books, cast a kind of never-leave spell.
