Any visit to Copenhagen will keep you busy and full—the Danish capital boasts 22 Michelin stars in 17 restaurants. Supplement feasting on Nordic cuisine with exploring the city’s modern architecture, like the Black Diamond, which has stunning views of the river. It’s an extension of the Royal Library and named for the black granite cladding and irregular angles. The elevator that descends dramatically down the cliff to Bulgari’s serene beach club is a privilege only for guests, as are lunches at the seafood-celebrating, cliffside-hugging La Spiaggia. The Bulgari Bar is the place to be for sunset hour, when Italian canapés are served alongside the sapphire Indian Ocean. Newly opened in December 2023, Villa-des-Pres is a five-star, French-owned hotel in the Parisian neighborhood of Saint Germain-des-Pres. This luxury property has taken over what was originally constructed as an apartment building in 1911, and used as such up until recently. Although it retains its lived-in Parisian feel, the building underwent massive renovations to transform it from apartment to hotel.

Originally opened in 1927, Vancouver‘s Hotel Georgia was the celebrity haunt of everyone from Elvis and the Rat Pack to Errol Flynn and Katharine Hepburn. The hotel closed in 2006 for a multimillion-dollar restoration project and reopened as the Rosewood Hotel Georgia in 2011. Elvis may have left the building, but the old-school glamour remains—with a modern twist. The spacious rooms glow with a soft palette of warm gold, vanilla, and cocoa. Rain showers, heated marble floors in the bathrooms, and fine linens add to the hotel’s luxury appeal. The wood-paneled lobby buzzes with guests and locals en route to the acclaimed Hawksworth restaurant. The hotel has a large private art collection and there are pieces on display from founders of Canada’s modern art movement and famous international artists; the reverse-perspective Patrick Hughes piece opposite the reception desk is fantastic—walk back and forth to see the painting “move.” At the gleaming bar, guests can try the Hotel Georgia cocktail—a modern take on the original Prohibition-era recipe.

At check-in, pause to appreciate the nine-story atrium and skylight, then head to one of the 287 fully appointed rooms, which include 35 suites and two penthouses with private rooftop terraces. Should guests want to eat outside of their room, the hotel is also home to Daniel Boulud’s Le Gratin, a bistro inspired by the French chef’s hometown of Lyon, and Colicchio’s Temple Court, where classic dishes like Maine lobster and Berkshire pork chop fill the menu.
