    The only hotel in Malta to be a member of the Leading Hotels of the World, The Phoenicia combines historic elegance with modern sophistication. Built in 1939, the five-star stay sits on 7.5 acres just outside the entrance to Valletta’s old town, within easy walking distance of the city’s top sites. An infinity pool and adjacent bar afford epic views of the harbor and ancient bastion walls, while The Phoenix Restaurant serves traditional Maltese cuisine amid high ceilings, chandeliers, and velvet banquettes. Also on site is Café Phoenicia for casual dining, The Club Bar for craft cocktails, and The Palm Court Lounge for afternoon tea.

    Rooms, dreamed up by London-based Peter Young Design, feel fresh and modern, with a white, blue, and pink color palette and original Maltese tiles that recall the Mediterranean.     Covering nearly ten miles over the sandstone slickrock just outside of Moab, this 4x4 route is considered one of the best in the region, if not the country. The best part? A half-mile spur from the one-way loop brings visitors to a cliff-edge overlooking the Colorado River. Along the trail, check out Mickey’s Hot Tub, a deep depression in the sandstone where 4x4s drive through, and sometimes get stuck. If you get out of the Jeep, you may also see fossils preserved in the lower Jurassic Sandstone (about 190 million years ago). The route can be done on your own but requires a high-clearance 4x4 vehicle. A number of commercial guide outfits based in Moab provide tours with a driver or allow visitors to rent ATV’s and attempt the trip themselves.

When my husband and I rented the apartment, Casa Maršić (casamarsic.com), adjacent to the farmhouse, we found it the perfect base for exploring the nearby medieval hill towns. We visited Motovun-Montona and Oprtalj-Portole, where we ate fuži, traditional Istrian pasta, with fresh mushrooms and grilled lamb chops at the fantastic Tončić agritourism (agroturizam-toncic.com). We happened to be at the farm during the October harvest and helped Vlado’s friendly crew rake the olives from the trees, taking frequent breaks for gemišt—white wine and sparkling water.     Located 2 km from Zitacuaro, Michoacan, Rancho San Cayetano is an oasis of calm and an excellent base for seeing the monarch butterflies at Cerro Pelón. Lisette and Pablo Span are your kind and efficient hosts who, in butterfly season (October and November), will set you up with information and trips to see the butterflies. The place is worth a visit any time of the year, however: Lisette runs the kitchen and serves superb, multi-course dinners and heavenly breakfasts. There are comfortable ranch-style cabins, a lovely swimming pool, a patio for reading or day dreaming and all of it is surrounded by a forest of pines and fruit trees.

Their small shop on Barrier Reef Drive just steps from the beach in San Pedro seems like an expat’s dream. They certainly exhibit the kind of easy happiness that comes from providing a product everyone wants. The Belize Chocolate Company is a café and a store, so visitors can stop in and stay a while. When you do, make sure you seek out Jo or Chris. They are wonderful people, and their chocolate isn’t half bad either!
  • Translating into cake of three milks, pastel de tres leches is a sponge cake doused in, yes, three kinds of milk. Evaporated milk, condensed milk and run-of-the-mill milk (or even cream, depending on the baker) are combined and poured over the cake base, which has been punctured with tons of tiny holes, allowing the milks to be evenly soaked up. Topped with a layer of whipped cream and squirts of caramel, the cake is surprisingly light for something so saturated in milk, and manages to steer clear of the too-sweet territory. While I got to try it in El Sal--at the amazing Juayua Food Fest--it’s a popular dessert across Latin America, busted out at many a celebratory occasion.
