    From its location in Denver’s Union Station, Mercantile Dining & Provision makes delicious and nutritious meals accessible to commuters and travelers passing through. This is the second eatery by Alex Seidel, a committed restaurateur who purchased a farm east of Denver to better understand the journey food takes from field to plate. The on-site market offers artisan-made provisions from spices and pickled beets to jams and jellies to coffee and potato chips. In the dining room, chef and partner Matt Vawter serves dinners so good you may miss your train—the spicy mussels (served in a tomato-butter broth perfect for mopping up with bread to console yourself after the shellfish and fennel sausage are gone), the housemade pastas, or the rotating selection of fire-roasted meat and fish entrees, can make the most fastidious traveler lose track of time.

    While it’s located mere minutes from Tel Aviv’s trademark beaches, the Brown TLV Urban Hotel is decidedly city-centric. Not coincidentally, it’s also in the center of town, surrounded by an array of distinctive neighborhoods like the UNESCO World Heritage-designated “White City,” the old Yemenite area of Kerem HaTeimanim, and the seemingly endless street market that is Nachalat Binyamin. Beyond being a strategically positioned home base, however, the hotel makes for a great escape. Once you’ve explored the city on a free loaner bike, you can retreat to the rooftop hot tub, the indoor-outdoor Garden Bar, the den-like living room, or—if you’ve booked one of the Zen-inducing Relax Rooms—your private balcony, ideally after an en suite spa treatment.

    Not so long ago, Reykjavík’s restaurants focused almost exclusively on meat and fish dishes. Nowadays there are a growing number of vegetarian and even vegan spots, plus several places with a focus on healthy eating—such as the pioneering Gló, which opened back in 2007 and now has several other branches throughout the city. Gló’s menu changes daily to reflect the season and the market and features four main dishes, one of which is usually raw. Besides the entrées on the main menu, the compelling list of desserts provides further proof that it’s possible for healthy food to taste great too.

    If you’re looking for the prefect French vacation destination, the picturesque city of Pau, in Southwest France, may just have it all. Its location is perfect, almost equidistant from the stunning Pyrenees Mountains, for hiking and skiing, and the seaside, for enjoying the sun and surf. It is surrounded by rolling hills covered in vineyards, producing sweet white jurancon, and rich fruity red wines. The bustling city market is one of the nicest I’ve visited in France and the restaurant offerings are varied and of excellent caliber. Throw in a photogenic chateau, friendly locals and proximity to international airports and you have the perfect holiday spot. The only problem is, (like me) you may not want to leave.

    This local institution and late opener is a popular haunt of Siem Reap‘s expats and locals, from archaeologists to artists, poets to tour guides. Laundry Bar’s friendly staff, decent pool tables, and cheap drinks are all big appeals, but it’s the excellent music that continues to draw most local residents to this dimly-lit, bohemian haunt a block from Pub Street. Whether it’s a live band, such as the superb Cambodian Space Project, above, who channel the sounds of Khmer rock ‘n’ roll from the Sixties and Seventies, a visiting Euro-DJ, or the eclectic soundtrack that shifts from jazz and blues to eighties French pop, the music is always interesting and engaging and gets punters tapping their feet or at the very least talking. While the staff will be booting drinkers out in the wee hours of the morning during high season, the bar can often close early (before midnight) during low season, so if you don’t want to miss getting a taste of Laundry, get here by 10pm. A warning: the drinks are cheap but they’re pretty awful. If you want good cocktails, go to Miss Wong. Laundry is all about the cool sounds and casual vibe. Check the bar’s Facebook page to see what bands or DJs are on while you’re in town and plan around it.

    The nine-mile dirt road through Pike’s Peak National Forest is a properly isolated, remote, and grand driveway to Lost Valley Ranch, one of the few guest ranches in Colorado that is so close to Denver. (It is only about two hours by car from Denver International Airport, and a short drive from any other front range city.) The drive leads you through the still-recovering burn area of the 2002 Hayman Fire, then dips down into a green oasis, in a cozy corner of the Goose Creek drainage. Lost Valley is a traditional, medium-size ranch with plenty of history and a robust kids and teens program in the summer. It’s all about horseback riding in the morning and afternoon, a lazy schedule punctuated by the dining room bell and yelps of happy children and ranch dogs playing in front of the main lodge. Lost Valley Ranch books week-long, all-inclusive packages throughout the summer season; shorter stays are available in spring and fall. Rates begin at $3,020 per adult, and cheaper for children (how much cheaper depends on age), and include meals, lodging, horseback riding, evening entertainment, and children’s programming (Trap shooting, town purchases and massage therapy are extra).

    Tucked in the Rainforest of Costa Rica is this incredible Ecolodge. We whitewater rafted all morning to arrive at the lodge, our river guides acted as chefs and general grounds keepers upon arrival, and we were treated to the absolute best food we had the entire trip in Costa Rica. The bungalows do not have any electricity, but the staff lights candles in all the rooms and pathways each evening, and dinner is eaten by candle light. Talk about romance!! While staying they have horseback riding through the jungle, hikes, rappelling, zip lining and of course more rafting. Definitely will not be our last trip to this lodge!! The attention to sustainability efforts was also fantastic and commendable.

Get some challah French toast in the morning...or a chicken-green-chile omelette...and no shortage of croissants and scones... Mid-day, if you want one of the best sandwiches around, try the “Everything Reuben,” which won 2nd place in the World Food Championships in Las Vegas last year-- corned beef, vinegar slaw, Swiss cheese and house made Russian dressing on a fresh pretzel roll... Summer brings gazpacho, zesty and cold... ...and every Friday, there’s BABKA! Cinnamon or chocolate--(I pick the chocolate every time)--in a big ‘loaf’ or as a shareable ‘baby babka'--it’s an unexpected big-city-bakery taste here in the Southwest desert. Note the cycling gear on the wall--yes, they sponsor the spandex-clad, those helmeted pelotons who definitely earn their carbs...(Tucson is one of the nation’s biking meccas.) Ahh, “Tucson Born and bread,” read the jerseys and socks... The patio has mountain views and misters to counter the ‘dry heat.’ Years ago, when I first visited Tucson before deciding to move here, this was one of our stops--one of those places that makes you think ‘yeah, I could live here...’

    Though it has a silly name, the Potato Head Beach Club on Seminyak beach is a cool spot to spend the day. A collage of antique 18th-century veranda shades surrounds an amphitheater-like space that contains a beach bar, a grassy lawn, and an infinity pool. Three additional restaurants (one homey, one Southeast Asian, one high-end) and a stellar concert lineup make Potato Head a destination, morning ‘til night.     The Bardini Garden is one of Florence‘s best kept secrets. It was built in the 12th century as part of a large estate owned by the Mozzi family. During the 20th century it was closed for many years and only reopened in 2005 after significant restoration. The garden is small and easy to walk through in about an hour and its hillsides offer spectacular views of Florence. Wandering among the terraces and flowers is an excellent way to escape from the touristy historic center and instead feel part of what this old city once was. During the off-season and in the morning or late afternoon, you may be the only visitor! The Bardini Garden can be accessed in two ways. One is by going into Boboli Gardens and exiting on the left side—this can be hard to find, but is marked on the Boboli Gardens map you receive on admission. The second way is via street da Costa San Giorgio 2. The garden opening hours vary according to season. It is closed the first and last Monday of each month. Admission is included in the Boboli Gardens ticket, or can be purchased separately for around 10 euros (and includes admission to the villa). There is also a restaurant with beautiful terrace views.

    In its seeming pursuit for consideration as the Platonic ideal of a dive bar, the Rec Room ticks off many boxes: the bar sits in the grimy shadow of a highway overpass, prides itself on selling more cans of PBR than any other bar in the U.S., and is truly dark inside. So dark. The majority of the illumination seems to come from television screens, pinball machines, the fluorescent fixture that hangs low over the pool table, and the light from the street when the front door opens to let in someone who’s been outside smoking. In short, the bar is deliciously down-market without being skeevy. You will find Charleston locals from every walk of life, especially on game days when the televisions—including one playing to the smokers the front patio—are all tuned to football. Come early or late, order a Pabst Blue Ribbon, watch a game, play some foosball or pool, order tater tot nachos, and experience the appeal of a dive bar in a town where propriety and manners rule.

    Don’t be confused by the name: This isn’t street food so much as dockside warehouse food. Walk over Inderhavnsbroen, one of the city’s newer bridges (opened in 2016), and you’ll cross from the heart of Copenhagen to a former industrial area that is now a foodie paradise. It is to the city what Borough Market is to London—a hugely popular attraction where people flock to eat great food off paper plates. Chinese, Korean, Italian, Moroccan . . . It’s all here and so inviting that it’s hard to know where to start. The only note of caution: Copenhagen Street Food is so popular that the weekend crowds can be intimidating.
