    Total immersion is the draw of the Ritz-Carlton, Laguna Niguel, which sits on a bluff 150 feet above the Pacific’s craggy coastline. The hotel delivers Ritz-Carlton’s trademark luxury—two pools with bucolic garden views, beach butlers on the sand—but also an authentic sense of place. Naturalists lead whale-watching and snorkeling excursions, as well as an ocean-inspired art program that was developed by marine-life artist Wyland. Spa treatments include seaweed wraps, marine collagen facials, and a foot massage inspired by the rhythm of the ocean. Even the resort’s marble-bedecked interiors integrate the environment, including a sculpture in the lobby by artist James Aarons made of 225 ceramic and gold pieces inspired by American cliff swallows, which migrate through the area. Shuttles take guests to and from the swimmable, surfable Salt Creek public beach below. Meals at the six restaurants are indulgent but never fussy, whether it’s pasture-raised beef and artisanal cheese at enoSTEAK, or pan-seared scallops with morita-glazed pork belly at the pan-Latin restaurant Raya. Pro tip: Before the sun dips below the horizon, grab a spot by a fire pit at the lounge 180blu, order a tamarind-togarashi margarita, and enjoy the views of the Pacific.

    Singapore Zoo has been recognized as a leader in creating naturalistic habitats since its opening in 1973, using concealed moats to separate animals from visitors and incorporating a local reservoir into the landscaping. There are dozens of themed exhibits here! Some highlights include the Fragile Forest, where guests enter a massive biodome that re-creates the diversity of the rain forest, and the Reptile Garden, home to Komodo dragons and giant tortoises. At the adjacent Night Safari experience, guests walk or travel in trams from tropical to mountain habitation zones, where rhinos, elephants, tigers, and some 130 other species can be observed.

    Like the torta ahogada, birria is a culinary specialty in Guadalajara, served everywhere from street-food stalls to sit-down restaurants. To leave the Pearl of the West without sampling it would be a loss, as it offers a quintessential taste of the city. Though there are plenty of places in Guadalajara where you can order birria, Birriería las 9 Esquinas is a favorite for its spicy, slow-cooked meat stew, typically made with lamb or goat. Local lore has it that this restaurant was the first ever to serve the dish.

    To visit Mwanza is to head off the traditional tourist trail of Tanzania. Here, on the coast of Lake Victoria, commercial ships fish for Nile perch and sardines that will be sold across Africa; every year Tanzanians flock to Mwanza for work opportunities. Explore this thriving and interesting city with a stop at the Mwaloni fish market (where you’ll also find produce brought in from villages around the lake) and take in the pretty views of Lake Victoria. Bismarck Rock, a tall boulder balancing atop a jumble of rocks out in the lake, can be visited en route to the ferry terminal. Ferries carry passengers across the lake to Bukoba and points along the shore. From Mwanza, it’s also possible to hop a train across the country to Dar es Salaam, but be warned—it’s regularly delayed for as many as 12 hours.

    Inside Spinasse’s charmingly rustic dining room, you’ll feel like you’ve left Seattle for an Italian trattoria. The roasted beet salad with cherries, radishes and marinated La Tur cheese is tangy and refreshing, while the hand-cut egg pastas are buttery and rich. No matter where you sit, you’ll have an excellent view of the open kitchen; step around to the side to see the pastaio making fresh pasta. For the full foodie experience, try the degustation menu, a family-style tasting of every antipasto, primo, and secondo on the menu.

    Former interior designer and gallery owner Elisabetta Capei now presides over this shop near St. Peter’s Church. It specializes in artisan handmade Swiss and Italian chocolates. Among her highlights are chocolates by Reichmuth von Reding, a little-known producer whose super-smooth, velvety-tasting bars are made with single-origin cacao beans and are conched for up to 72 hours. In the back of the shop, there’s a small counter with just eight stools for drinking Elisabetta’s hot chocolate, which she whisks herself, making just four to five liters a day.

    Donald Link’s “swine shop” (part wine bar, part butcher, part sandwich spot) is a meaty addendum to the Cajun chef’s pork-centric Cochon (around the corner). You can’t go wrong with the always-on-the-menu muffaletta or the pork belly on white bread with cucumber-mint salad and chili-lime aioli, but, on my most recent visit, I opted for the Gambino. Link’s take on the classic Italian sub is a serious undertaking with three types of house-cured meats—coppa, cotta, and soppressata—plus arugula and a herby vinaigrette on perfectly crunchy ciabatta.

    Among the sleek high-rise buildings of El Golf, right off the Plaza Peru, is Tiramisú (aka Santiago‘s best pizza). If you are yearning for an authentic, Italian pizza with thin crust, buffalo mozzarella, and primo ingredients pull up a chair. Always buzzing with a long wait for tables at lunch and dinner, this family-run establishment starting 12 years ago with only a dozen or so tables--and is now over 132.     Madrid’s multi-level Mercado San Anton is a sight to be seen. Rows of gorgeous produce, local specialties, Italian deli favorites, briny seafood and locally-farmed meats line the perimeter of each floor, each stall more enticing than the one before it. Even better, its high tables and counters make it well-suited for a quick bite and glass of wine. For a relaxed sit-down meal, head up to the restaurant on the rooftop terrace and finish off the evening with a drink in the lounge.

    While traveling through Italy, my art history professor booked us students into religious colleges and convents. Wether it was to save money or because she thought osmosis would occur and our knowledge of Venetian Religious Art would be enhanced, I am not sure. However, as a non-religious person I really didn’t mind staying in a space dedicated to Christianity. The rooms were clean and the breakfast conversation was as interesting as the breakfast itself. But there is Wi-Fi, serene areas to write, relax and take in the sounds of the connecting church and the location is ideal for any traveler looking to explore a part of Venice that many tourists don’t see. The view from your room won’t disappoint either, and unlike hostels, for some reason I just felt like my stuff was safer with the prying eyes of Mother Mary, the crucifix adorned in every room and paintings of Don Orione looking over you.

    Hotels often say they’re “steps from the sand,” but here, it’s actually true. Location is everything at Malibu Beach Inn; it’s right on the water, with all of the 47 guest rooms and suites overlooking the crashing surf from private balconies, and a few hundred meters from the historic pier. There are about eight steps from the hotel’s restaurant terrace to its private stretch of beach underneath, where guests can order a chicken club sandwich or a glass of wine from the extensive list to enjoy on loungers.

    The hotel changed hands in 2015 and has since been re-imagined by L.A.-based interior designer Waldo Fernandez; rooms and communal spaces alike feature purpose built, hand-made white oak furniture and furnishings that make clever use of space. Our suite had custom built liquor shelves tucked into a tiny corner alcove. Across the hotel, artworks include prints by Donald Sultan and Jasper Johns.

    The rooms are designed to evoke a private beach house. And as you drift off among Italian linens, gazing at the stars and lulled by the white noise of never-ending waves, it’s easy to dream.

While Hôtel Restaurant Alain Llorca in Colle sur Loup has stunning views and exceptional cuisine, its more modest, modern-chic cousin in Vallauris offers exceptional value for a delicious meal that is kinder to the wallet. Mixing Provençal cuisine with recipes from his native Catalonia, the chef woos guests with dishes like cold melon soup, sea bass with artichokes and mashed potatoes, and a tempting variety of pastries from the display case for dessert.
