Like the torta ahogada, birria is a culinary specialty in Guadalajara, served everywhere from street food stalls to sit-down restaurants. To leave the Pearl of the West without sampling either of these dishes would be a loss: these are the city's essential tastes.

Though there are plenty of places in Guadalajara where you can order birria, Birriería las Nueve Esquinas is a favorite spot for the spicy, slow-cooked meat stew typically made with lamb or (more commonly in Guadalajara), goat. Local lore has it that the first place to sell birria was Nueve Esquinas.
