There are a few great options for dining on Place St. Catherine, in Brussels. However, when people ask me where to go for great seafood in Brussels, Jaloa, and their more casual Jaloa Brasserie, are first on the list. Jaloa itself is elegant fine dining and a wonderful experience if you are looking to splurge. (Don’t miss the fresh oyster bar.) The restaurant only seats 25 people and features tasting menus of four, six or nine courses. The Jaloa Brasserie is more cosy and affordable but with the same high level of quality. The menu is a la carte with the exception of a monthly tasting menu. Both the restaurant and brasserie feature seasonal, local ingredients and have hidden terraces you can enjoy, during the warmer months.

The food truck revolution is coming to Brussels and a great introduction is Keep On Toasting. Keep On Toasting travels around Brussels, serving up gourmet toasties, toasted sandwiches inspired by the traditional croque monsieur. These are far from your Mom’s grilled cheese sandwiches though. Owner and chef, Jean Baptiste Nyssen, creates four new sandwiches a week. He hand picks the best local and organic ingredients he can find. Pictured here is his Croq-British - A perfect breakfast sandwich, containing chopped up boiled egg, lardons (bacon), green beans and Stilton cheese. His veggie goat-cheese and lentil sandwich blew my mind and with inspirations from the Alps to India, there is sure to be a sandwich for you.

As soon as you drive up to the valet (which offers electric charging stations), you’ll be enveloped by a biophilic world of plants, reclaimed wood, and rough-hewn granite. The reception desk is made from a massive tree that fell in Mendocino, while the cozy lobby is filled with wood and linen-covered furniture made locally by J. Alexander. Also on the ground floor is a farm stand with fresh produce for the taking; 1 Kitchen, which serves sustainably sourced California cuisine among tables that resemble sliced trees; and Goodthings, a retail shop selling Earth + Element pottery, organic cotton clothing, and a selection of all-natural face serums and tonics.

The 285 rooms feature earth tones, floor-to-ceiling windows, multiple plants in volcanic rock planters, and unfinished wooden wardrobes filled with hangers made from recycled paper. Guests can also look forward to extras like yoga mats, comfy cotton robes, and minibars stocked with kombucha and local snacks like Fat Uncle Farms Cajun-Flavored California Almonds, plus all-natural dog bones and candles with the hotel’s signature scent. Welcome to Laad Bazaar, tucked away on one of the four streets that lead from the Charminar. Also called Choodi Bazaar, the vibrant market features countless shops and stalls selling bridal wear, pearls, jewelry, and the famous Hyderabadi glass- and stone-studded bangles. These recognizable bangles are made from laad (“lacquer”), the material which gives the market its name. No cars or auto-rickshaws are allowed on the narrow street, and the crowds are limited to pedestrians, scooters, and bicycles.

The 165-acre Springs Resort & Spa sits 1,000 feet above the Arenal Valley, higher than any other resort in the area and affording each one of its 47 polished-wood guest rooms commanding views of the Arenal Volcano and surrounding countryside. Founded in 1868, this Tucson guest ranch sits below the Rincon Mountains, overlooking the rolling foothills of Saguaro National Park. It’s often ranked among America’s top resorts and wedding destinations—and for good reason. Not only does it deliver Southwestern charm in the form of pink adobe architecture, but it runs one of the nation’s top horseback-riding programs, with everything from team penning and mountain adventure rides to the signature “Harmony with Horses,” which teaches interspecies communication. The ranch also offers a host of other activities, including yoga, hikes, mountain biking, photography courses, and naturalist-led walks to explore the desert’s edible and medicinal plants. There’s even a kids’ day camp for ages four to 12 with tennis, arts and crafts, swimming, and more.

Rooms here feature exposed beams and brick, punctuated with dark wood furniture and pops of Southwestern fabrics. Performing double duty as both a seafood market and restaurant, Fisketorget features the kind of fish that’s impossible to enjoy in most parts of the world. Located just seconds away from Stavanger’s harbor (the distance from the water to your plate is about 10 feet), Fisketorget offers aromatic fish soup; a popular three-course menu; and the Symphony of Caviar, four different caviar varieties served with traditional sour cream and red onion. Overall, the menu is a bargain for Norwegian seafood. If time is tight, grab a take-out tray of fresh shrimp and crab cakes with a slice of lemon and enjoy right there on the harbor steps.

Take a riverboat up the Wailua—which translates as the “river of the great sacred spirit"—fed by the Mount Waialeale shield volcano, one of the wettest spots on the planet. Seven temples once stood along Hawaii’s longest and only navigable freshwater passage.
