Set in the UNESCO World Heritage-listed Banff National Park, the year-round Fairmont Banff Springs was the brainchild of Sir William Cornelius Van Horne, president of the Canadian Pacific Railway. On arrival at Banff, the tourism visionary made the canny observation, “Since we can’t export the scenery, we’ll have to import the tourists;” thus, he set about building a string of great railway hotels across Canada. The original wooden hotel that opened here in 1888 burned down in 1926, but was replaced two years later with the grander castle-meets-baronial-Scottish-hall structure that exists today. With its signature stone walls, turrets, and winding staircases, Van Horne’s gambit paid off: The Fairmont Banff Springs feels for all the world like an elegant and ancient castle, albeit one with all the modern conveniences.

Get up, up, and away with Lake Tahoe Balloons. The company launches its colorful hot air balloons not from land but from the surface of the lake via the Tahoe Flyer, the world’s only certified balloon launch-and-recovery boat. Trips begin with a 5:30 a.m. boat ride to the mid-lake launch site. Once the balloon is in the air, passengers and pilot float up to 3,000 feet above the water’s surface for bird’s-eye views of the entire Tahoe basin. The oldest winery in South Africa, Groot Constantia has a long history of producing some of the best wines in the world. Groot Constantia is also a rarity in its proximity to Cape Town itself. In the 19th century the European heads of state included wines from Groot Constantia in their cellars. Today the wine makers at this famous winery are still making their excellent wines and guests can visit for a full tasting. It’s also a great spot for a picnic, as long as you watch out for baboons. This is South Africa after all.

On arrival at Terranea, it’s natural to release a big, tension-melting sigh.
