    The imposing De L’Europe—one of Amsterdam’s original luxury hotels, a holdover from the late 19th century’s age of Grand Tours and neoclassical architecture—has been thoughtfully restored in keeping with its opulent history and The Netherlands’ artistic tradition. The hotel, a red-and-white brick landmark crowning the intersection of the Amstel River and several canals, bridges old and new visions of luxury. Its extensive art collection, consisting of both originals and copies of Dutch Masters, is curated in conjunction with the Rijksmuseum; many pieces were in the collection of Dutch brewing magnate Alfred “Freddy” Heineken, whose family owns the hotel. The museum-caliber artwork can be found not only throughout the see-and-be-seen common areas but also in many of the rooms, especially those in the gallery-like addition, known as the Dutch Masters Wing.

    The 48 rooms and 63 suites have decadent touches, including Carrara marble bathrooms with heated floors, personal iPads, and Coco-Mat beds. But De L’Europe’s crowning attraction may actually be outside: A wraparound terrace offers waterfront dining overlooking the historic city, and many of the best rooms have private balconies with views of the rooftops. When hunger strikes, guests can head to the Michelin-starred Restaurant Bord’Eau or Bib Gourmand winner Marie, then grab a nightcap in the luxurious lobby lounge. For rest and relaxation, the hotel also features a spa with bespoke treatments, an infrared sauna, and a Turkish steam bath.

    The second property in the Bulgari Hotels collection is an Italianate stunner perched on the cliffs of Uluwatu, a region at the southern tip of the Bukit peninsula.     Come October, the weather cools and fisherman start overflowing local fish markets with freshly caught hamsi (European anchovies) from the Black Sea. Istanbulites (locals) who have been patiently waiting for months to taste this tiny meaty fish venture out in the cold to satisfy their seafood addiction and buy the fish by the kilo. Hamsi is either pan-fried, grilled, or added to other dishes such as rice, and it’s so good it often brings friends together for hamsi dinner parties (or at least that’s what my friends and I do!) If you don’t like anchovies, then you’ve probably never tried European anchovies in Turkey before. Try hamsi in the wintertime at one of the fish restaurants on or near the Galata Bridge. My only suggestion is, when dining at any fish restaurant, make sure you know the price of your meal before confirming your order, and always check the bill after. Fish restaurants are unfortunately notorious for overcharging tourists.

    The thing about Madrid’s Hotel Ritz is that, despite the name, it’s not technically a Ritz. In 1910, King Alfonso XIII toured Europe and decided that the Spanish capital lacked the kind of grand hotel worthy of visiting royalty that Paris and London had in their Ritz Hotels. And so he hired legendary hotelier César Ritz to create one for him in Madrid, with the same luxury ideals and a Spanish twist.

    What he got was a grand belle epoque landmark on the Paseo del Prado, Madrid’s central promenade, next to the stock exchange and the Museo del Prado, just a couple blocks from the Parque del Retiro. Opulent suites have hosted dignitaries and celebrities for over a century, while the elegant lobby bar—with its live piano or Spanish guitar music, and antique furnishings—has been a fixture of Madrid society since its opening. The current Goya Restaurant is still considered one of the city’s best, despite its somewhat more Old World style than contemporary Spain is used to, and its leafy garden terrace hosts a parade of international glitterati. Recently acquired by Mandarin Oriental, the hotel is undergoing some updates, guaranteed to maintain its standards of decadence, just as Alfonso himself would have imagined.

It was also one of the first hospitals anywhere to disinfect its equipment and only stopped taking in patients in the 1980s. (The writer Italo Calvino died here in 1961.) The early history of the hospital is illustrated in the 15th-century frescoes decorating the walls of the Pilgrim’s Hall, and there is a fascinating archaeological museum housed in the labyrinthine basement rooms.
