    One of my highest recommendations for drinks is the Grand Hyatt Shanghai. The Grand Hyatt occupies the top 36 floors of the 88-story Jin Mao Tower in the Jetsons-looking Pudong district, so at sunset (or anytime) you have a stunning view (with no cover charge!) of all of Shanghai. There are lots of choices for eating and drinking in the Grand Hyatt. When I was there at sunset, nobody else was in the Cloud 9 sky lounge (which is like a night club with a 360-degree view from the 87th floor), so I went down to the 53rd-floor Lobby Lounge, which still seemed plenty high, and enjoyed the view and the cocktails there.

The game-changing chef is also the West Coast pioneer of Dock to Dish Los Angeles, a restaurant-supported fishery program promoting sustainably caught seafood. Naturally, the menu at this destination, decorated with driftwood chandeliers and ceramic barnacles, changes nightly and always includes three tasting menu options. Those in the know book the four-seat private chef’s table overlooking the kitchen for a special occasion, or go for Friday lunch, when they can enjoy chef Cimarusti’s skills in the light of day. Must-order: One of head bartender Kim Stodel’s “zero-waste” cocktails, like the Tom Kha curry–flavored Muay Thai creation, with a rum infusion made from lemongrass, ginger, and kaffir leaf leftover from the kitchen, and served with a biodegradable straw.

    A UNESCO World Heritage site, this hotel was the home of Hispaniola’s first governor, Nicolás de Ovando, and one of the first colonial structures built at the top of cobbled Calle Las Damas (the first paved street in the Americas). Built in 1502 and connected in 1974 during a reconstruction ordered by then President Joaquín Balaguer, the three stone buildings retain their original coffered ceilings, massive arches, tile floors, and brick and stone walls. In addition to 92 rooms and suites, including a dozen Imperial Club rooms overlooking the Ozama River and Don Diego Harbor (Room 4015 has a particularly stunning view and gorgeous bathroom), you’ll find a lovely reading nook, gourmet restaurant, lobby mojito bar, and tranquil garden, which features herbs and fruit trees used by the hotel kitchen.

Head to the upper-level dining room, which is more spacious than the ground floor, with artwork by local artists. The moles are delicious, but to start, order the squash blossom soup. A beautifully arranged bowl with squash blossoms and seeds with some queso fresco and cream is placed in front of you, then the waiter pours the soup over it. It tastes as good as it looks. Open 8 am to 10 pm Monday through Saturday. Closed Sundays. La Olla offers a set meal between 1:30 and 4 pm - check the website for the daily menu.
