    The Review:
    Once the preferred haunt of the American aristocracy, Castle Hot Springs, located just an hour’s drive northwest of Phoenix, attracted families like the Pews, Wrigleys, Vanderbilts, and Rockefellers. In 1945, John F. Kennedy even convalesced here, hiking the high-desert trails and soaking in the hot springs that have served as a place of healing for the native Yavapai tribe for millennia. A 1976 fire set the resort on the path to decline, but as of 2019, it’s back and wowing guests with old glamour and new green elements.

    The resort, now freshly renovated, comprises a main lodge, 12 contemporary bungalows, and 19 cabins (complete with telescopes for stargazing), all designed by the team behind Sanctuary Camelback Mountain Resort and Hotel Valley Ho. Following the property’s “digital detox” ethos, rooms don’t have TV or Wi-Fi, but more than make up for it with luxurious bedding and deep-soaking tubs. When not relaxing in privacy, guests can dine on fresh, local fare at on-site restaurant Harvest (which works with more than 150 varieties of fruits and vegetables grown on the hotel’s organic farm) or take a dip in the 125,000-gallon swimming pool fed by the surrounding hot springs. Also on property are two natural soaking pools, a rock grotto, and a serene spa right next to the spring. For those who wish to venture off-site, the staff can arrange hikes or horseback rides through the Bradshaw Mountains.

    Chef Gabrielle Hamilton opened Prune in 1999. It took a little more than a decade, but when her career took off, it rocketed into the stratosphere. In 2011, she was named Best Chef in New York City by the James Beard Foundation, and in the years since, she has published a memoir about her life and the restaurant, as well as hosted her own television show on PBS. All of these have contributed to Prune’s popularity, and the warmly-lit restaurant is now an East Village fixture. Adventurous eaters who aren’t afraid of organ meats or game such as braised rabbit will especially be rewarded, as these are a strength of Hamilton and co-chef Ashley Merriman.

  • Dot painting is a style of indigenous art often associated with the Aboriginal people of Central Australia. The Uluru-Kata Tjuta Cultural Centre hosts daily dot painting workshops which go beyond the arts and crafts and delve into the cultural import of this tradition; workshops are hosted by Aboriginal artists who begin each program with stories of life spent in the Northern Territory and how that life influences their art. These programs are an incredible opportunity to glimpse at living tradition, and help bring the desert to life.

    Cancún’s best-known mall offers travelers an easy-to-reach location in the heart of the Hotel Zone. Known to locals simply as Plaza La Isla, this outdoor shopping center is a lovely spot to beat the heat thanks to its Venetian frippery (think winding canals), playful fountains, and ice cream parlors. The Marina area, with a restaurant row overlooking Nichupté Lagoon, is a top photo op. Reached via the designer shops in the Fashion Harbor section, it faces west and is ideal for catching the sun setting over the water.

    You might not be expecting to find a gem and mineral store among the kitschy souvenir shops of Leavenworth, but Mainz Haus of Rock has staked out its own little corner off the main drag. There, you’ll find crystals, semi-precious stone jewelry, mineral specimens and collections, gemology guidebooks, and stone bookends. For budding rock hounds, Mainz has some nice kid-appropriate coloring books and rock guides, break-apart geodes, and boxed rock collections, some with a particular focus on local Washington minerals.

    Like a nautical version of the yellow brick road, illuminated anchors embedded in the floors of Ironside Fish & Oyster lead you to the Emerald City of raw bars, where the bounteous platters come in Big, Bigger, Biggest, and Holy Sh*t. This last assortment might include, say, 24 oysters, 14 shrimp, 14 mussels, two pounds of lobster, two ounces of sustainable royal white sturgeon caviar, a portion of rockfish ceviche, and some kanpachi crudo for good measure (the mix changes daily according to what’s fresh). Not that lovers of cooked seafood will go hungry at chef Jason McLeod’s Little Italy hot spot, where the catch of the day is a perennial favorite. There’s even a small yet mighty vegetarian lineup (think charred broccolini with dried chilis, garlic, and parmesan; and Japanese sweet potato with scallion chimichurri and puffed quinoa). It’s all rounded out by an impressive bar, where 11 categories of whiskey are represented. While the menu occasionally diverges from the strictly seafaring, the decor never does. The interior design features prow figureheads turned lighting fixtures and artful stacks of steamer trunks.

    Mole Creek Karst National Park, along with the surrounding Tasmanian Wilderness World Heritage Area, offers subterranean streams and pools, plus at least 300 caves. At Marakoopa Cave, you’ll feel as though you’re in mother nature’s planetarium—the walls are lit up by Australia’s largest colony of glowworms. Caves like Honeycomb and Westmorland are best explored during a half- or full-day trip with Deb from Wild Cave Tours. Unlike most guides, she holds a PhD in speleology. But if one day is not enough, make it a wild caving weekend to progress from walking and wading to scrambling and squeezing through tight crevices. Local beer and wine await you at Mole Creek Guesthouse.

    A North Bondi Beach institution since 1993, Sean’s Panaroma is known for unpretentious yet delicious fare, served in a homey dining room alongside fresh-cut flowers and views of Australia’s most famous beach. The simple chalkboard menu of entrées, mains, and desserts changes weekly—sometimes daily—based on what’s growing locally and at owner Sean Moran’s farm in the Blue Mountains (which also hosts stays). The waitstaff is tried and true, with a deep knowledge of Sean’s organic ingredients and wines. On your next visit, you might be treated to burrata-stuffed squash blossoms, a comforting arrangement of steaming mussels and perfectly seared tuna, Sean’s signature free-range herb “chook” (chicken), and a biodynamic red wine from New Zealand.

    After 30 years at the forefront of Sydney‘s fine-dining scene, Quay Restaurant underwent a multi-million-dollar renovation and reopened in 2018. The restaurant swapped white linens for Tasmanian spotted-gum wood tabletops and exchanged the previous purple-and-gold palette for blues, grays, and browns that better reflect Quay’s harborfront location facing the Sydney Opera House. Executive chef Peter Gilmore loosened up his menu, too, offering either six or 10 inventive courses such as the Oyster Intervention—a crumble of oyster cream, crushed fried dehydrated oysters, chicken skin, tapioca, and caviar served in a ceramic oyster shell—creating a dish that’s all bivalve flavor without the slippery texture. Fans of the old Snow Egg dessert will be won over by White Coral: a multitextured masterpiece of aerated ganache, coconut cream, and ice cream.

    After hopping off a boat off the coast of San Cristobal Island, you enter the freezing water of the Kicker Rock channel (or Leon Dormido). Above you Blue-Footed Boobies perch on the rock, while Frigate birds fly in the clear blue sky. Underneath you an aquatic world awaits, filled with playful Sea Lions, Razor Surgeon Fish, Parrotfish, Sea Turtles, and if you’re lucky you might even spot some (or 40) White-Tipped Sharks...Don’t worry, the locals swear the sharks are vegetarians!

    Sedona is home to four major vortexes - centers of heightened spiritual and metaphysical energy. One of its foremost is Cathedral Rock, a magnificent red rock formation with soaring spires that resemble a cathedral. On a whim, we booked a guided tour with Sedona Trail Zen, which ended up being the highlight of our trip. Over the course of four hours, our guide, Wyatt, shared insights about local vegetation and wildlife, covered the history of the land, and even took us on some secluded trails. This ten-mile hike, up to Cathedral Rock and down through the surrounding land, gave us a renewed sense of energy and clarity.

    One of Australia‘s most famous beaches, Cottesloe is a popular place for locals to go jogging, play beach cricket and bask beside the Indian Ocean. The landmark Cottesloe Beach Hotel across the street features the Beach Club, Cott & Co. Fish Bar and the Verandah Bar, all designed for alfresco drinks, bites and good times overlooking the sea.

    It doesn’t get more quintessentially Australian than this: waking up to a symphony of kookaburras and the heady scent of eucalyptus, the sight of kangaroos roaming freely about the 7,000-acre nature reserve. You might be tricked into thinking you’d slept under the stars—if it weren’t for the four-poster bed, flicker of a warm fire, and sunrise reflected from the glittering private pool. A three hours’ drive west of Sydney, this luxury ecolodge feels worlds away, surrounded by sandstone bluffs and sweeping plains filled with leafy gumtrees and Wollemi pines. It has 40 homestead-style villas that are as eco-friendly as they are indulgent: materials sourced within a 60-mile radius, solar panels for hot water and lighting. Highlights include the Aussie cuisine, mostly grown and sourced within 100 miles of the resort (and included in the all-inclusive rate, along with a premium minibar). A fruit orchard and edible garden supplies organic herbs, vegetables, fruits, and nuts.


    The most intriguing aspect of the property is an original farmhouse, built around 1832, that hosted Charles Darwin in 1836. Today, the homestead functions as a museum that highlights the Indigenous, settler, and agricultural history of the valley. The comprehensive program of activities gets guests off the homestead: There are peaks to climb, glowworms to ogle, and horses to ride. Following a landslide in 2022, Emirates One&Only Wolgan Valley has faced access issues. It is temporarily closed.
  • A former military base for the Yugoslav National Army, the island of Vis was closed to foreigners for decades. Today, however, it’s one of Croatia’s best-kept secrets, mainly for its beaches, food, and history. Book a tour with Vis Special and explore the island’s old military sites, abandoned when the army left suddenly in 1992. The tours take in everything from rocket shelters and bunkers to weapon-storage halls and “parking lots” (read: tunnels) for submarines. They also stop at the former communications headquarters for the Yugoslavian secret service (which are dug into a mountain) and Tito’s Cave (where the erstwhile Yugoslav president hid during World War II). Lest this all sound grim, know that these sites occupy some of the most gorgeous spots on the island.
