Catch some waves at one end of the beach, then swim in the calm water at the other, where fishing boats loaded with red snapper and lobster pull ashore. Rolson’s Hotel and Restaurant is high on a hill, overlooking the town of San Ignacio, not too far from the ruins of Cahal Pech. The restaurant’s tables are mostly outdoors, and the view provides a wonderful backdrop to meals that showcase the best of Belizean and Mexican cuisine. My favorite was a chicken burrito drowning in cheese and salsa. I also thoroughly enjoyed the horchata, fresh-squeezed lemonade and michelada. At happy hour, Monday through Friday between 5 and 7 p.m., the michelada is a welcome refresher. Wireless Internet is available, making Rolson’s a great place to get some work done while enjoying wonderful food served with a smile. The longer you linger, the merrier the atmosphere becomes, as locals seem to favor enjoying a late dinner on Rolson’s breezy patio. Dinner is served from 6 to 10 p.m.

Nestled on the beach in the small town of Savaneta, Aruba Ocean Villas is home to the island’s only over-water bungalows, the most camera-ready of which is the Isla Alistaire. A favorite of Instagram influencers, it offers gorgeous sunset views and a hammock strung over a cut-out in the broad wooden deck so guests can sway over the water. The toy vendors, working around the zócalo (main square) in Puebla, Mexico have taken the task of selling balloons to new heights. Somewhere, under this enormous mass of rubber and plastic encased helium is a small little pushcart and I mean, small pushcart. Whenever there was breeze, everything would sway but surprisingly, the cart never tipped over. For a split second, I thought of asking the guy if I could have the balloon at the very, very top just because I was curious to see how he would get it down.

The Review:
Located on Grenada’s main beach of Grand Anse, Spice Island Beach Resort is right in the middle of it all. This can mean a little less privacy, but also allows for suites with direct beach access and close proximity to the best of the island. Owned by the Hopkins family and staffed by an attentive team, the property is known for taking good care of its guests. All meals, drinks, non-motorized watersports, tennis reservations, bicycle rentals, and golf fees are included in your stay, as is the kids’ club, which offers supervised play in a brightly colored activity center. For adults, there’s also Janissa’s Spa, where the treatment menu includes such options as a Grenadian chocolate wrap, reiki sessions, and reflexology.

When it comes to accommodations, there are several options, from rooms with private plunge pools to spacious beachfront suites with four-poster beds looking out at the ocean. Whichever you choose, you can look forward to ample outdoor space as well as classic Caribbean design, complete with dark wood, neutral tones, and pops of bright teal, coral, and green.

The breeze gently rocked the hammock back and forth. As I lay there with my eyes closed swaying, I could hear the familiar sound of drum music wafting through the little village of Manzanillo. I imagine a giant speaker somewhere in the town center providing the beat of the village 24/7. Khosamui boutique hotel was simple and outfitted in bright colors with white backgrounds. There were only 4 rooms which kept the whole atmosphere cozy and chill; it was designed with relaxing in mind. A big open-air lobby was filled with colorful flowers and throw pillows and just steps from the beach cabanas. However upstairs is where the real lounging happens. The patio overlooked the beach and came with a fabulous and constant sea breeze. Hammocks and cloth swinging chairs hung from the rafters providing the perfect place for a lazy nap while lunch was prepared. This was the place you want to come, hang out and write a novel. For one of the best views and best meals in Santorini, try Red Bicycle. Located at the tip of Oia on the northern part of the island, the restaurant is housed in a 19th-century Santorini mansion with a 180-degree view of the famed sunset and the volcano caldera. It was heavenly. Soft island breezes on the open-air terrace. The best food I had in Greece (fresh, local Mediterranean dishes with Greek/Santorini influences). A warm hostess who was incredibly kind to our two children. We ate here twice during our weeklong stay - I definitely hope to go back.

A pioneer of the Hawaii Regional Cuisine movement, chef Mark Ellman showcases his thoughtful approach to cooking at Mala Ocean Tavern, a harbor-front eatery with dramatic sunset views. Come here for well-executed fusion fare like ahi bruschetta, whole wok-fried Hawaiian fish, and a vegan mushroom Bolognese pasta with local shiitakes, as well as signature cocktails like the Spa Day (cucumber, vodka, fresh watermelon juice) and the LBC (gin, passion fruit, basil simple syrup, fresh lime, and soda). Party animals will be happy to learn that the restaurant also offers a late happy hour each evening from 10 p.m. to midnight, plus live music and DJs spinning vinyl on Friday nights.

Roseau’s only oceanside dining option, the elegant Palisades pairs sweeping water views with one of Dominica’s best culinary experiences. Here, creative dishes showcase the island’s natural bounty, including produce sourced from local farms and fish straight from the Caribbean Sea. Start with dishes like BBQ jerk octopus and sesame-crusted tuna with a soy-chili dip. Then, move on to the lion fish, served with green-banana croquettes and mushroom sauce. Fancy something lighter? Try a lentil-black-bean cake or callaloo soup, made with baby taro leaves, coconut milk, yam, and green bananas.

Opened in 2003, Carlisle Bay is set on a lush, isolated section of Antigua’s south coast and has a 21st-century design that feels more contemporary than Caribbean. With muted shades of grays, whites, and greens, the hotel projects an uncluttered, understated luxury. Its most remarked-on feature, though, is the way it appeals to both couples and families by keeping the two separate. Each group has its own cluster of rooms at its own end of the beach, and never the twain have to meet, except perhaps for lunch at Ottimo, the poolside Italian restaurant. The crescent of beach is tucked into a sheltered bay, so the waves seldom do more than whisper up onto the white sand, against a backdrop of forested hills. It’s all very restful, but the long list of free non-motorized watersports and the extensive kids’ club ensures everyone has plenty to do.

Everyone seems to be traveling to the Jersey Shore to help it get back on its feet. I have a suggestion that you will enjoy and savor - Day’s Ice Cream in Ocean Grove, Ocean Grove is a unique Victorian jewel of a town located just south of Asbury Park in Monmouth County. There is the huge wooden Auditorium surrounded by the tiny tents. Many programs and events are offered for your entertainment. There are beautiful beaches. Ocean Grove offers a large choice of hotels and B&B’s. The serene Main Street has its little boutiques making it fun to shop there. There are a great many cafes and eateries. One of my favorite eateries is Day’s Ice Cream - an old fashioned Victorian ice cream parlor that has been in business since 1876. Day’s is open from May until October and I love to sit on the big, old fashioned porch and enjoy a dish of their ice cream. I’m not alone in finding this famous ice cream parlor to be #1. The ice cream is delicious and the atmosphere is wonderful. Day’s has just opened at a second location. They are now on the boardwalk in near-by Asbury Park. Want excellent ice cream? Bypass the roadside watering holes and take a boat ride to Floyd’s Pelican Bar, instead. This thatched hut stands on stilts out in the water, making it a dreamy spot for an afternoon of swimming and shooting the breeze, solo or with friends. It’s 30 minutes from Treasure Beach (arrange a boat ride through your guesthouse or resort), and you can arrive for lunch and stay until after sundown for the just-caught fish, rum, and chilled Red Stripe on the menu. Inside the tiny shack, the flags of various countries hang and previous customers have left messages scrawled on planks and benches. Sit outside and watch the pelicans flying in formation across the horizon.
