A local favorite since the 1990s, Bar Przystań is a straightforward fish-and-chips joint located right on the beach in Sopot. Every evening on the North Shore of Kauai, diners pack Bar Acuda for Mediterranean-inspired tapas that highlight local products. “The key is taking the finest ingredients and not doing much with them,” says chef Jim Moffat. He frequently changes his seasonal menu and sources such produce as citrus, avocados, fennel, and herbs from his home garden and the Hanalei Elementary School Garden, a program for local students that he helps run. Moffat often shops at farmers’ markets, but locals know they can also sell their fruits and vegetables at Bar Acuda’s back door. One firefighter even drives his 30-foot ladder truck to drop off cases of tangelos. “If you have a vacation rental and there’s something ripe, bring it to me,” says Moffat, who promises a gift certificate in exchange. An Aboriginal territory turned shipping port between the Rocks district and King Street Wharf has been transformed into a harborfront reserve, modeled after what the headland may have looked like before Europeans arrived. It’s a great area for a walk or a picnic as well as for special events. And the surrounding area is home to dozens of new bars and restaurants. The seafood-centric Cirrus is run by the award-winning Bentley Restaurant team, and 12-Micron celebrates Australian produce through a menu organized around the elements. Early birds flock to cult favorites Micro by Coffee Alchemy and Bourke Street Bakery, while the after-work crowd unwinds at Sydney’s first vermouth bar, Banksii; the tropical rooftop Untied; and Smoke bar, on the top level of Barangaroo House.

Husband-and-wife team Genevieve Gergis and Ori Menashe are behind Bestia, an Italian haven that consistently ranks high on local “best of” lists. The decor follows the name—which translates to “beast” in Italian—with its wall of weapons and meat-hook chandeliers. There’s no wrong choice on this menu, but the roasted marrow bone and alla ‘nduja pizza are favorites for first-timers. Without a reservation, expect to wait at least an hour, even on a weeknight. If you’re looking to dine in a big group or want a primo time slot (7 p.m. on a Saturday night, say), then you’ll need to plan ahead and make a reservation at least a month in advance.

America’s second-largest desert is an unlikely place to find some of the world’s freshest seafood. But anything is possible in Las Vegas, and when chef Paul Bartolotta opened Bartolotta Ristorante di Mare in the Wynn hotel in 2005, he was committed to offering only the best. Bartolotta serves sea bass, snapper, and lobsters 48 to 60 hours after they’re pulled from the waters that surround Italy. On any given night, the menu features nearly 50 species of rare seafood. “I’ve never heard of another restaurant having live slipper lobster or blue lobster in their tanks,” says Bartolotta. The chef speaks daily with his fishermen and tracks shipments using thermal microchips. La Piazzetta is known as the place to see and be seen while on glamorous Capri. The small square, officially the Piazza Umberto I, is the center of everyday Caprese life and is dominated by a unique freestanding clocktower that chimes every 15 minutes. For the best seat in town, head to Bar Tiberio, which sits just beside Santo Stefano cathedral. You will have a view of striking Monte Solaro, as well as all of the comings and goings from the funicular and along the shopping streets.

The swanky spot, consistently at the forefront of Seoul’s mixology scene, boasts several awards for being one of the top bars in the city—and Asia at large. Hidden in an unmarked space down a Hongdae alley, it’s well worth the effort to find it. Inside, skilled bartenders make drinks with seasonal ingredients and will customize libations to patrons’ requests. The bar also stocks an extensive selection of whiskeys from around the world and is known for its mean martini.
