    Slightly sweet, with pleasantly salty mineral umami--that’s what the yellow-orange goo from sea-urchins tastes like. The fresher the better for this roe--and if you visit the coast of Jeju island, the legendary “haenyo” women divers will have just plucked these spiny balls from the sea floor minutes before your arrival. Wildly popular with visitors from nearby Japan, where the delicacy is called “uni,” Jeju islanders call it “gusal;" mainland Koreans refer to it as “seong-geh.” I had just had some in a bowl of seaweed soup for lunch when my wife and I accompanied my mother down to the rocky cove beneath Seongsan Ilchlulbong crater to watch the haenyo emerge from the sea. My mother, who is Korean, had just retired, and was visiting a corner of her own country that she had never seen. Volcanic Jeju-do is a subtropical island with a culture distinct from the rest of Korea--"the island of wind, women, and rocks.” The haenyo are dwindling as younger women seek urban jobs; many of the divers are in their 50’s and 60’s and still dive without oxygen tanks, harvesting shellfish cooperatively... My mother struck up a conversation with one of the women as my wife and I soaked up the salt air. The haenyo, still dripping in their wetsuits, were spooning out the roe--and suddenly, a couple of spoons were being waved in our faces--a free sample! Fresh from the sea-floor, served by living legends--not a taste that fades quickly...

    After a brief stint as The Jeremy, this Sunset Strip property opened as L.A.’s first 1 Hotel in May 2019 with a strong focus on sustainability. As soon as you drive up to the valet (which offers electric charging stations), you’ll be enveloped by a biophilic world of plants, reclaimed wood, and rough-hewn granite. The reception desk is made from a massive tree that fell in Mendocino, while the cozy lobby is filled with wood and linen-covered furniture made locally by J. Alexander. Also on the ground floor is a farm stand with fresh produce for the taking; 1 Kitchen, which serves sustainably sourced California cuisine among tables that resemble sliced trees; and Goodthings, a retail shop selling Earth + Element pottery, organic cotton clothing, and a selection of all-natural face serums and tonics.

    The 285 rooms feature earth tones, floor-to-ceiling windows, multiple plants in volcanic rock planters, and unfinished wooden wardrobes filled with hangers made from recycled paper. Guests can also look forward to extras like yoga mats, comfy cotton robes, and minibars stocked with kombucha and local snacks like Fat Uncle Farms Cajun-Flavored California Almonds, plus all-natural dog bones and candles with the hotel’s signature scent. Bathrooms have deep marble tubs and full-size bath products—no single-use plastics here.     As ubiquitous as “mandu” (dumplings) may be in Korea, when in Seoul, seek out their Mongolian lamb-filled ‘ancestors.’ One theory says that meat-filled dumplings were introduced to the Korean peninsula during the Mongol invasions of the 14th century. If that’s the case, then “buuz” (Mongolian dumplings) have made a comeback in the 21st century. In recent decades, tens of thousands of Mongolians have immigrated to South Korea, and the neighborhood just to the west of the new Zaha-Hadid-designed Dongdaemun Design Plaza has become home to a Central Asian village. Seek out the Cyrillic lettering and look for “Ulaan Baatar” restaurant, on the second floor of an otherwise nondescript building in an alleyway. A plateful of “buuz” would make a hearty meal, but it’s best shared. Hand-cut noodles, al dente, stir-fried with carrots and mutton are another option. If you want a break from the seemingly non-stop chile-garlic-soy palette of Korean food, but still want a ‘local’ flavor, this is your fatty chance. My wife and I were the only non-Mongolians when we had lunch here. We followed the example of the other diners and ordered salty milk tea to go with our food. I couldn’t bring myself to dunk my dumplings in it, though, as everyone else was doing. (Beer and Fanta are also available.) By subway: at “Dongdaemun History and Culture Park” station, take exit 12, walk west and turn left at the next corner; look for the 10-story building with cyrillic lettering on your right.

    One of Bill White’s collection of restaurants, Sushi Blue serves an eclectic mix of items, from a full sushi bar to “Rad Thai” and Korean street tacos, and a great burger. It’s a great place to go if you have a mix of sushi lovers and “not so much” in your dining party. The Green Papaya Salad with cherry tomatoes, cilantro, crushed peanuts and citrus dressing is refreshing. For signature sushi rolls, try the Holy Shishito, with albacore, grilled shishito pepper and cucumber topped with red snapper, avocado, and spicy roasted onion ponzu. The easy access to this restaurant in the Redstone shopping area makes it a popular choice.

Lunch and dinner choices are varied and delicious with choices like trout ceviche and osso buco, as well as a wide selection of Peruvian favorites like lomo saltado (a Peruvian beef stir-fry). The atmosphere is casual; service top-notch. Arrive early or late to snag a coveted river-view table.

    Following a much-needed $60 million makeover in July 2022, the Park Hyatt Chicago is once again a contender for one of the best hotels in town. Located in the bustling Magnificent Mile neighborhood at 800 N. Michigan Avenue, the storied property has been a landmark destination since it opened in 1980 as the first property to bear the Park designation. The renewed sanctuary now delivers a true sense of place, with a refreshed lobby design that’s more of an urban living room, an updated Library, and a vibrant new art program spotlighting some of Chicago’s most talented creatives. Critically, the hotel’s signature restaurant NoMI (named for the location on North Michigan Avenue) now has three different concepts: NoMI Kitchen, which emphasizes American cuisine with French techniques, NoMI Garden, a terrace space that’s ideal for lunch, and NoMI Lounge, which includes a six-seat sushi bar.

    The Park Hyatt Chicago, facing ever stiffer competition from newer luxury hotel entries in the Magnificent Mile orbit, nevertheless remains a great choice for families because of the central location optimizing sightseeing and kid-heaven treats. Budding geologists will love the geodes, minerals, and marine fossils in the lobby alcove. Chefs at the seventh-floor NoMI restaurant, known for fine wines, city views, and standout American contemporary cuisine, take young foodies to the open kitchen’s soft-serve ice cream dispenser. The 7,000 square foot fitness center includes a 25 yard lap pool with skyline views, or borrow a complimentary Jamis commuter bike to ride the scenic Lakefront Trail four blocks east on the beach side of Lake Shore Drive. Guestrooms have notable design flourishes such as padded window seats, Eames chairs, and Mies van der Rohe–designed Brno desks from which to view the city’s famous architecture. Pets are welcome, and the hotel donates 100% of its standard pet fee to one of the city’s largest animal shelters.

    Seoul’s City Hall is a swooping mass of glass and steel tucked snugly into the heart of the city at Seoul Plaza. This modern architectural marvel stands out starkly behind the small stone building of the Seoul Metropolitan Library—the building that previously served as city hall since Korea’s liberation from Japan in 1945. The man responsible for the design, Kerl Yoo, has commented that the building is supposed to represent Korean traditions as well as embrace the future. Not sure how exactly the newfangled monstrosity is traditional in any way, but it’s worth taking a stroll around the two structures to see the glaring contrast between old and new. Get there via the City Hall subway station.

    Under the eave, a monkey supports the weight of a temple roof on Ganghwa Island, in the Han river estuary, northwest of Seoul, a stone’s throw from North Korea... On one of my teen-age visits to Korea, an uncle took us to spend the day here, an island dotted with prehistoric dolmens, Buddhist temples, and 19th-century fortresses that kept out the French and the Americans in the last days before the ‘Hermit Kingdom’ finally opened up to the West. Jeondeung-sa temple, where I took this photo, has been a Buddhist sanctuary since the late 7th century. And here, I first tasted ‘dol-sot-bi-bim-bap,’ the quintessential Korean hot-pot rice dish, served sizzling in a stone bowl.

    You probably didn’t think of traveling to Peru for world-class French cuisine, yet here it is. The minute you walk in, you leave the Andes behind in favor of a European vibe, reflected in music, decor, and, of course, what’s on the table. The five- or seven-course tasting menus are the perfect way to sample as many flavors as possible, but if ordering à la carte, save room for sumptuous desserts and a delicious coffee, picking your personal ideal from a wide range of blends.

    Surfing legend Duke Kahanamoku grew up here, and you can dine amid his memorabilia at this kitschy Waikiki classic. Pair one of the restaurant’s signature mai tais with a pupu (appetizer) like ahi poke or panko-fried calamari. Move on to dishes such as Korean-style steak tacos or a fish sandwich on Hawaiian sweet bread. Leave room for the Hula Pie: macadamia nut ice cream heaped atop a chocolate-cookie crust! Duke’s Waikiki remains one of the best venues in Oahu for traditional music, especially on Sundays. The eatery also is typically involved in springtime’s Waikiki Spam Jam—a celebration of the state’s favorite canned meat—and, in the summer, Duke’s OceanFest, which honors the sports dear to its namesake waterman.

    Peru hotly contested a UNESCO recognition of Mexican food as cultural heritage, arguing its cuisine was equally worthy. While diners wait for that second designation to be made, they can drop in at San Miguel’s La Parada—literally “The Stop”—and enjoy a local taste of the Andean nation. Owner Juanito is best known for his ceviche—seafood cured in citrus juices—but also offers Los Fresquitos, coastal dishes served tapas-style; romantics should order the arroz afrodisiaco, accompanied by an artisanal Peruvian cocktail, such as the most authentic pisco sour in town. Visitors dining in large groups often go for the whole tapas menu.
