    Why I was so surprised to find a food truck in the village of Volcano outside of Volcano National Park, I’m not sure. All I know is that it was one of the many culinary surprises on the Big Island. This truck was packed with all kinds of wonderful things, and almost all of it was healthy too. If you can find it, and I have no way of telling you where they will be parked, ask for the special drink they mix up daily, I think it has ginger it in, but they’ll know what you mean. The company is called Higher Taste Vegetarian Cafe, and this truck was parked outside of the Rainforest Gallery at Niaulani near Volcano Village. That’s the best I can do, but then again, finding the truck is half the fun!

    Reykjavík’s Dill restaurant, run by chef Gunnar Karl Gíslason and sommelier Ólafur Örn Ólafsson, is the first venue in Iceland to win a coveted Michelin star. It specializes in New Nordic Cuisine, which means that the kitchen updates traditional dishes such as arctic char, pork belly, and lamb shanks in highly creative and ultradelicious ways—often pairing them with healthy ingredients like barley, berries, and kale. The restaurant is open four evenings a week, and the seven-course menu changes regularly based on availability of local ingredients. Food can be paired with a fabulous selection of champagnes and wines. It’s not the cheapest choice in town, but it is one of the best.

    L’Express, on rue St-Denis in the Plateau Mont-Royal neighborhood, opened in 1980 and has about it the air of a beloved institution. Indeed, with its timeless style, it feels even older than it is. This popular spot serves classic renditions of bistro fare—steak tartare, bone marrow, onion soup—into the early morning hours (2 a.m. except for Sundays, when it closes at 1 a.m.). When the kitchen ventures into new territory, the results are impressive. The spaghetti with mushrooms is unconventional in its presentation (topped with a healthy serving of arugula)—one of those dishes you try on the road and then want to re-create at home. Reservations recommended.

    Recalling Saigon’s past, Cuc Gach Quan offers fine Vietnamese fare in a cozy setting that re-creates the home of the owner’s grandmother—a French-colonial house with worn, wood-plank floors; retro furnishings; warm lighting; and a floating staircase to connect the two levels. It’s grown in popularity ever since Brad and Angelina ate here in 2011, but the menu continues to focus on Vietnamese dishes while following the approach summarized in its motto: “Eat green, live healthy.” Expect menu items such as fresh spring rolls with shrimp, crispy sea bass, and fantastic homemade tofu fried with chili and lemongrass.

The only problem with Granola is that, because it’s so charming and inviting, it’s always packed. Try to avoid the weekend crush by coming midweek instead.

The little bay on the south end of the resort is home to a healthy group of huge sea turtles, easy to paddle up to in a kayak or board. Walking everywhere is easy and entertaining. Whaler’s Village is just a mile up the beach on a paved path the takes you through some of the other resorts in the neighborhood. Rooms are crisp, spacious and have some ocean views. The resort is medium-sized so you don’t feel overwhelmed by the physical plant. Speaking of plants, there are hundreds of native flora dotting the grounds. Also wondering about are flocks of flamingos and penguins. The Hyatt is a first-class operation leaving you free to relax to your heart’s content.

No complaints on that account at Cicatriz, whose open, industrial-styled storefront is a forum for several daily moods. No-compromise coffee and a variety of alternative baked goods form the morning agenda; lunch means a major emphasis on locally sourced greens in great salads and roasted iterations; the meatball and fried-chicken sandwich are both major crowd-pleasers as well. After five, it’s time to get your drink on; the bartenders deliver superior, crafted quaffs, but free from all the fuss you’ll see at other haute mixology spots. The earnest, healthful menu is enhanced by an overall vibe of do-it-yourself chic.

    A five-star property in an old transformer station, Hotel Herman K brings industrial-chic style to the heart of Copenhagen. Much of the building’s raw, unpolished architecture has been preserved, lending the hotel an edgy vibe. A façade of dark bronze slats and large glass doors leads to the lobby, where a custom-designed artwork by Pio Diaz hangs from 40-foot ceilings.
